This recipe for white layer cake at high altitudes dates back to 1953. I've perfected at 11,000 feet.

2 ⅔ cups sifted cake flour
2 teaspoons baking powder
¾ cup butter, softened
1 ¼ cups white sugar
4 eggs
1 tablespoon vanilla extract
1 cup milk

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease and flour two 9 inch round cake pans. Sift the cake flour and baking powder into a bowl and set aside.
  • In a large bowl, beat the butter and sugar until light and fluffy, up to 10 minutes. Mix in eggs one at a time, fully blending each one in before adding the next. Stir in vanilla. Stir in the flour and baking powder, alternating with the milk until the batter is smooth. Divide the batter evenly between the prepared pans. Tap the bottoms of the pans on the counter a few times to remove air bubbles.
  • Bake in the preheated oven until a knife inserted into the center of the cakes comes out clean, 25 to 30 minutes. Cool cakes in the pans set over a wire rack.

This moist chocolate cake never collapses, something I can't say for other cakes I've baked at high altitude! This cake has been tested at 9,000 feet and always turns out fluffy and moist! Frost this delicious layer cake with cream cheese vanilla bean frosting. Bailey's® buttercream or mocha frosting are also great choices.

¾ cup unsweetened cocoa powder
1 ½ cups hot coffee
1 ¾ cups white sugar
½ cup Greek yogurt
½ cup whole milk
2 large eggs, at room temperature
2 teaspoons vanilla extract
¾ cup olive oil
2 cups unbleached flour
1 teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  • Place cocoa into a small bowl, pour coffee over top, and stir to combine. Set aside to cool.
  • Combine sugar, yogurt, milk, eggs, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add olive oil and mix to combine.
  • Combine flour, salt, baking soda, and baking powder in a large bowl; whisk until combined with no lumps remaining. Pour dry ingredients into the wet ingredients and beat until just mixed. Stir in the coffee mixture and pour batter into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean and the center looks slightly wet but springs back lightly when touched, 25 to 35 minutes. Cool on a wire rack for 15 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack and let cool, about 30 minutes.

1/4 c cornstarch
1 c sugar (-1 tblspn)
1 tsp baking powder (-1/8 tsp)
3/4 tsp baking soda
1 tsp salt
1 tsp ground cloves
1 1/2 tsp cinnamon
3/4 c shortening, butter flavor
1 c buttermilk
3 eggs
1/4 tsp allspice, ground

Steps:

  • 1. Preheat oven to 350 degrees F. Grease and flour 2 9 inch round cake pans.
  • 2. Sift together flour, cornstarch, sugar, baking powder, soda, salt, cloves, cinnamon and allspice into a large bowl. Add shortening,buttermilk and eggs, beat for 2 minutes on high. Pour batter into prepared pans.
  • 3. Bake for 30-35 minuts or until done. I frost with a cream cheese frosting. Enjoy to the fullest!

3 eggs, separated
2 cups sifted cake flour
3/4 tsp. baking soda
1/4 tsp. salt
3/4 cup butter or margarine, softened
1-1/3 cups sugar
3/4 tsp. vanilla
3/4 cup buttermilk
1 recipe Coconut-Pecan Filling and Frosting

Steps:

  • Heat oven to 350°F.
  • Spray 3 (9-inch) round pans with cooking spray; cover bottoms with waxed paper. Add boiling water to chocolate in small bowl; stir until chocolate is completely melted.
  • Beat egg whites in small bowl with mixer on high speed until stiff peaks form; set aside. Mix flour, baking soda and salt. Beat butter and sugar in large bowl with mixer until light and fluffy. Blend in egg yolks, 1 at a time. Add melted chocolate and vanilla; mix well. Beat in flour mixture alternately with buttermilk, mixing well after each addition. Gently stir in egg whites until well blended.
  • Pour into prepared pans.
  • Bake 35 min. or until toothpick inserted in centers comes out clean. Immediately run spatula around cakes. Cool in pans 15 min. Remove cakes from pans to wire racks; remove waxed paper. Cool cakes completely. Meanwhile, prepare Coconut-Pecan Filling and Frosting.
  • Stack cakes on plate, filling layers and spreading top of cake with frosting. (Note: Nutrition is for both cake and frosting.)

1/2 cup water
1 cup butter, softened
2 cups sugar
2 tablespoons sugar
4 eggs, separated (whites beaten until stiff)

1 cup buttermilk
2 1/2 cups sifted cake flour

1 teaspoon vanilla extract
for the coconut nut frosting
1 1/2 cups butter
1/2 cup evaporated milk
1/2 cup half-and-half
1 cup sugar
3 egg yolks, beaten
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup coconut, shredded
1 cup nuts, chopped

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare three 8-inch layer pans by lining them with wax paper and greasing them.
  • In a double boiler melt the chocolate with the water over simmering water. Let cool.
  • In a large bowl using a mixer cream the butter (or use margarine or shortening) with the sugar until light and fluffy. Beat in egg yolks one at a time and then blend in the melted chocolate.
  • In a measuring cup dissolve the baking soda in the buttermilk.
  • In a bowl sift flour and salt together.
  • Add dry ingredients alternately with the buttermilk mixture, mixing well after each addition. Add vanilla. Mix well.
  • With a rubber scraper or whisk fold in beaten egg whites.
  • Pour batter into prepared pans.
  • Bake for 35-40 minutes or until cake center springs back when pressed with fingertip. Cool.
  • Fill and frost with frosting (use your favorite or the following recipe).
  • To make the frosting: in a saucepan combine butter, evaporated milk, cream, sugar, beaten egg yolks, and salt. Cook over low heat, stirring constantly until mixture is thickened. Remove from heat. Stir in vanilla, coconut and nuts. Beat until consistency for spreading.

1/4 cup canola oil
3/4 cup sugar
2 eggs
1 tbs. vanilla extract
1/2 cup buttermilk + 2 tbs.
6 tbs. flour
1 cup milk
1/4 tsp. salt
1/2 tsp. ground cinnamon
1 cup butter
1 cup sugar
1 tsp. vanilla extract

Steps:

  • Preheat your oven to 350 degrees, and generously grease a 9-inch loaf pan. Set aside.
  • In a medium bowl, whisk together the flour, spices, baking powder, and salt. Set aside.
  • In a large bowl, beat together the butter, oil, and sugar until fluffy. Add in the eggs, one at a time, and the vanilla extract. Add in the dry ingredients alternating with the buttermilk until all ingredients have been added. The batter will be thick and smooth. Pour into your prepared pan, and bake for 35-40 minutes, or until a cake tester comes out clean.
  • Cool the cake completely before slicing and frosting.
  • In a small saucepan, whisk together the flour, milk, salt, and cinnamon until combined. Cook over medium-high heat, whisking frequently, for about 5-10 minutes, or until the mixture becomes very thick and paste-like. Remove from heat, and place in a bowl to cool. Cool the mixture completely before moving on- this is very important!
  • In the bowl of a stand mixer, beat together the butter and sugar until it becomes very light in color- almost white- and very fluffy. This will take about 10 minutes on medium speed, using the paddle attachment.
  • Once the flour mixture is cool, beat it into the butter mixture on high, and let the mixture beat for another 5 minutes or so. The frosting will become very light and fluffy and smooth. Add in the vanilla extract and beat to combine. Then, frost your cake as desired!

With the mixer on medium speed, slowly add the milk and vanilla or almond flavorings to the mixture. Mix on medium just until the mixture is smooth and no lumps appear (about 20-30 seconds).
