This savory bread is great with soups or pasta dishes! The recipe came from a cookbook called "Stand By Your Pan: Country Music Cookbook" by Diane Pfeifer. Her funny alternative country-music-inspired title for the recipe is "Bread River Valley" :)

3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup grated parmesan cheese
1 egg
1/4 cup oil
2 tablespoons honey
3 tablespoons minced fresh parsley
3 tablespoons minced fresh basil
1 (14 ounce) can crushed tomatoes
poppy seed (optional, for topping)

Steps:

  • Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan.
  • In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and Parmesan cheese. In a smaller bowl, combine the egg, oil, honey, parsley, basil and tomatoes.
  • Pour the tomato mixture into the flour mixture and stir until blended. Pour the batter into the prepared loaf pan. Sprinkle poppy seeds over the top (if using).
  • Bake at 350 degrees for 40-50 minutes, until a knife inserted into the center of the bread comes out clean.

3 cups all-purpose flour
1/2 cup grated Parmesan cheese
1/2 cup crumbled blue cheese
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon each dried basil, thyme and rosemary, crushed
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg
1-1/2 cup buttermilk
1/4 cup canola oil
3 tablespoons tomato paste

Steps:

  • In a large bowl, combine the flour, cheeses, baking powder, baking soda and seasonings. In another bowl, whisk the egg, buttermilk, oil and tomato paste. Stir into dry ingredients just until moistened. , Transfer to a greased 8x4-in. loaf pan. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

1 Tbs. chopped fresh parsley
1 tsp. chopped fresh oregano
2 Tbs. extra virgin olive oil
salt and pepper to taste
more fresh dill for garnish
store-bought flatbread crackers or pita chips

Steps:

  • Combine first five ingredients, salt and freshly ground black pepper together in a mixing bowl and stir well until evenly combined. Transfer mixture into a disposable piping bag fitted with a star tip.
  • Lay out crackers or chips and pipe a round rosette of goat cheese mixture onto each one. Top rosette with a small sprig of fresh dill. Serve immediately.

1/2 cup plus 2 tablespoons warm milk (70° to 80°)
1 can (6 ounces) tomato paste
1 egg
2 tablespoons olive oil
1/2 teaspoon salt
2 tablespoons minced fresh parsley
1 tablespoon sugar
2 teaspoons dried minced onion
1/2 teaspoon garlic powder
1/2 teaspoon dried tarragon
3 cups bread flour
2-1/4 teaspoons active dry yeast
GARLIC CHIVE SPREAD:
1/2 cup butter, softened
1 tablespoon minced chives
1 garlic clove, minced

Steps:

  • In bread machine pan, place the first 12 ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). In a bowl, combine spread ingredients. Serve with bread.

2 pounds (6 cups) very small cherry tomatoes, halved
1/4 cup olive oil
4 shallots, minced
2 teaspoons balsamic vinegar
1/4 teaspoon dried crushed red pepper
2 tablespoons chopped fresh marjoram
2 1-pound ciabatta breads, halved horizontally
Additional olive oil
Additional chopped marjoram

Steps:

  • Preheat oven to 375°F. Mix tomatoes, 1/4 cup oil, shallots, vinegar, and crushed red pepper in 13x9x2-inch glass baking dish. Roast uncovered until tomatoes are very tender and juicy, stirring occasionally, about 45 minutes. Stir in 2 tablespoons marjoram. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Brush cut surface of each bread half lightly with additional oil. Arrange bread, cut side up, on baking sheet. Distribute about 1 cup tomato mixture over each bread half. Bake until bread is crusty, about 10 minutes. Transfer to cutting board. Sprinkle with additional marjoram and freshly ground black pepper. Cut bread into squares and serve.

This bread is wonderful made with garden fresh tomatoes, it's perfect for a barbecue! I used the Philadelphia brand soft cream cheese in the small tub for this. Use only firm plum tomatoes for this.

1 (8 ounce) container soft cream cheese
1/3 cup grated parmesan cheese
1 tablespoon minced fresh garlic (can use more)
2 -3 tablespoons chopped fresh basil
salt and pepper
1 large unsliced French bread
4 large plum tomatoes, thinly sliced (can use less)

Steps:

  • Microwave the the cream cheese in a medium microwave-safe bowl on HIGH for 20 seconds; Add in the Parmesan cheese, garlic and basil; mix well to combine, then season with salt and pepper to taste.
  • Slice the bread in half lengthwise.
  • Evenly divide and spread the mixture over the cut sides of the bread.
  • Top with the sliced tomatoes, then sprinkle a small amount of salt over the tomato slices.
  • Broil about 5-inches away from heat with the oven door partially open for about 5 minutes.
  • Cut into desired size slices.
