LYDIA'S CRANBERRY SALAD
This has always been a holiday favorite; it's even good for breakfast the next day. It's got a little of everything - cranberries, grapes, nuts, and miniature marshmallows - all held together with whipped topping. This keeps several days. In the beginning I was always told I HAD to use fresh whipped cream, but in later years my mother-in -law admitted to using nondairy whipped topping herself. A memory of my beloved mother-in-law, and something that makes Christmas...CHRISTMAS!

Steps:
- In a food processor, grind cranberries. Transfer to a medium bowl, and mix with sugar. Chill overnight in the refrigerator.
- In a large bowl, mix together cranberry mixture, marshmallows, pecans, and grapes. Fold in nondairy whipped topping 1 hour before serving.

In 'Lidia Cooks From the Heart of Italy'. From the Trentino-Alto Adige region. If you cannot get real Italian Asiago, Ms. Lidia recommends using fresh Grana Padano or good mild American cheddar.

Steps:
- Fill a pot or saucepan with 3 quarts water, and heat it to boiling.
- Tear off any tough leaves at the base of the cauliflower and cut out the core; break or cut the large branches in to small florets, drop them into the boiling water, and cook until tender, about 5 minutes.
- Lift from water, and drain well in a colander; when cool, put the florets in a large bowl.
- As soon as the cauliflower is out of the pot, return the water to a boil and drop in the potatoes; cook them at a gentle boil just until a knife blade pierces the center easily--don't let them get mushy.
- Drain and briefly cool the potatoes; peel them while still warm, cut into 1/4-inch dice, and put them in the serving bowl with the cauliflower.
- Peel and core the apples; cut into 1/4-inch dice, and add to the salad bowl.
- Trim the radishes, quarter them in wedges, and drop into the bowl along with the diced onion, cubes of Asiago, and toasted walnuts.
- Sprinkle the salt over the salad pieces and toss; drizzle the olive oil and vinegar over the salad and toss; sprinkle on the parsley and toss once more, and serve.

APPLE CRISP A LA LYDIA
Gourmet published their version of an apple crisp and when I was looking for a crisp recipe like my grandma's I tweeked this one.

Steps:
- Preheat oven to 375°F Lightly butter a shallow 3 1/2 to 4 quart baking dish.
- Topping: Combine flour, oats, sugars, cinnamon, and salt. Mix until well combined. Add butter. I use a mixer but you can use a food processor. Mix until it forms large clumps. With fingers work in the pecans.
- Filling: Whisk together sugar and cinnamon in a large bowl. Peel, quarter, and core apples and then cut into chunks about 1/2 inch thick. Add apples, cranberries, and lemon juice to sugar mixture. Toss until well combined.
- Assembly: Spread the apples in the buttered baking dish. Crumble topping evenly over them. Bake until topping is golden brown which takes about an hour and makes the house smell wonderful. Cool to warm and serve.

- Pour the balsamic vinegar into a heavy bottomed saucepan and place over moderate heat. Stir in the honey, drop in the bay leaves and bring to a low boil. Adjust the heat to maintain a steady simmer and allow the vinegar to reduce slowly. After a half hour or so, when it has lost more than half of its original volume, the vinegar will start to appear syrupy, and you should watch it closely.
- Cook the sauce to 1/3 of its original volume (when it will measure 2/3 cup). It should be the consistency of molasses, thick but still spreadable. Pour the syrup through a small strainer into a heatproof bowl or measuring cup. Discard the bay leaves and seasonings. Brush on the glaze while warm.

- In two separate pans of boiling water, cook the beans until tender, about 4 and 8 minutes for the favas and cranberry beans, respectively. Drain and refresh the beans under cold running water, and remove the outer skins from the favas.
- In a medium saucepan, boil the onion, bay leaves, carrot, and celery in 6 cups of water for 20 minutes. Add the shrimp and cook just until opaque throughout, about 1 minute. Remove and drain the shrimp and allow them to cool.
- In a serving bowl, whisk together the olive oil, vinegar, and salt and pepper. Add the beans and shrimp, and toss to coat the solids thoroughly. Serve warm as an appetizer.
