No one will ever suspect that this rosemary-seasoned side dish starts with canned potatoes. "Fast ideas are a big part of my recipe file, and these buttery potatoes are a favorite," writes Jane Symens of Anchor Point, Alaska.

3 tablespoons butter, melted
2 teaspoons minced fresh parsley

Steps:

  • In a large ungreased 2-qt. baking dish, combine all of the ingredients. Bake, uncovered, at 350° for 15-20 minutes or until heated through, stirring occasionally.

3 medium red potatoes, thinly sliced
1 medium onion, thinly sliced
1/2 teaspoon Italian seasoning
1/8 teaspoon pepper
2 tablespoons reduced-fat margarine, melted

Steps:

  • In an ungreased 2-qt. microwave-safe baking dish, layer half the potato and onion slices. Combine Italian seasoning and pepper; sprinkle half over the onion and potato layer. Drizzle with 1 tablespoon margarine. Repeat layers. Cover with vented plastic wrap. Microwave on high for 7-8 minutes or until potatoes are tender turning dish after 4 minutes.

1 tablespoon butter
1 tablespoon olive oil
1-1/2 teaspoons dried parsley flakes

1/2 teaspoon rubbed sage
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon garlic powder

4 pounds boiling potatoes
3 cups finely chopped onion
1/2 cup olive oil
1 teaspoon dried rosemary, crumbled
1/4 cup minced fresh parsley leaves

Steps:

  • In a kettle combine the potatoes with enough cold water to cover them by 1 inch and simmer them for 15 to 20 minutes, or until they are just tender. Drain the potatoes and let them cool. The potatoes may be prepared up to this point 1 day in advance and kept covered and chilled. Cut the potatoes into 1-inch pieces and in a large bowl toss them with the onion, 2 tablespoons of the oil, the rosemary, and salt and pepper to taste. In a large non-stick skillet heat 3 tablespoons of the remaining oil over moderately high heat until it is hot but not smoking and in it sauté half the potato mixture, stirring, for 10 to 15 minutes, or until the potatoes are golden. Transfer the potatoes to a serving dish and keep them warm, covered. Cook the remaining potato mixture in the remaining 3 tablespoons oil in the same manner, transfer it to the serving dish, and toss the potatoes with the parsley and salt and pepper to taste.

5 pounds small Yukon gold potatoes, quartered
Kosher salt
1 tablespoon flaked sea salt
2 teaspoons freshly cracked black pepper
2 teaspoons smoked paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
Vegetable oil, for frying
2 sprigs fresh rosemary
1/4 cup sliced garlic

Steps:

  • Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
  • In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
  • Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.

2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

This is easy but the potatoes will need a few hours or overnight soaked in cold water, the garlic powder and seasoned salt may be adjusted to taste, I have left the cayenne as optional I like to add it in for a little heat, if you are not a garlic-lover then omit the garlic powder --- throw in some chopped green onions the last few minutes of cooking if desired :)

3 -4 tablespoons butter
1 pinch cayenne pepper (optional)

Steps:

  • Cube the potatoes in about 3/4-inch squares.
  • Place into a large bowl then cover with cold water, rinse then cover once again with water.
  • Refrigerate for at least 3 hours or up to 48 hours (the longer soaking time the better!).
  • Drain very well in a colander (I like to pat the potatoes dry using paper towels).
  • Melt the butter in a large skillet over medium heat, then add in garlic powder, seasoned salt and cayenne pepper (if using).
  • Place the potatoes in the skillet and stir to coat with the butter.
  • Cover with a lid and cook for 8-10 minutes.
  • Remove the lid and cook for another 10 minutes, turning frequently with a spatula for even browning and crisping.
  • Season with more seasoned salt to taste and black pepper.
  • Delicious!
