HEARTY SIMPLE RECIPE FOR STEEL CUT OATS



Hearty Simple Recipe for Steel Cut Oats image

This easy recipe has a great texture just on its own. Add a few toppings for the most delicious, hearty breakfast or lunch. Enjoy!

1 1/2 cups cold water
1/2 cup milk of choice, I used almond milk
1/2 tbsp butter or vegan margarine
1/2 cup steel cut oats
1/4-1/2 tsp sea or kosher salt

Steps:

  • 1.In a medium saucepan, combine water and milk. Bring to a simmer. Let simmer on low heat.2.In a medium nonstick fry pan, add butter on medium heat, toss in oats to toast. Stir until a bit golden brown. This will add a rich depth of flavor to your oats. Cook about 1 to 2 minutes.3.Add the oats into the liquid mixture. Add salt and cook on low for about 15 to 2o minutes or until the oats are nice and thick. Stir occasionally. All liquid should be absorbed. Make sure you don't scorch or burn the bottom of the saucepan. Keep heat low and stir as needed.4.Take off heat and let sit for about 5 minutes. Toss in your favorite add-ins for that day. Pour into bowls. I like to top mine with cinnamon and then some dried fruit and nuts. Also, a little more almond milk.

I never had steel cut oats until about a year ago. I was watching one of the food shows and they were talking about how different they were from the old fashioned rolled oats. Being a "rebel" that will try almost anything, I bought a can of McCann's Irish Steel Cut Oats and haven't used a packet of instant or a box of rolled oats...

1 c steel cut oats (not instant, mccann's is my choice)
1 1/2 Tbsp butter
2 1/2 c water, or silk brand vanilla flavored almond or coconut milk, or any % regular milk
1/2 c whole milk (optional) if using, cut other liquids to 2 c.
1/8 tsp salt
1 tsp pure vanilla extract
sweetener to taste (honey, agave nectar, stevia, maple syrup, molasses, sugar, brown sugar, splenda, etc)
heavy cream, half and half, or milk (your choice and amount preference)

Steps:

  • 1. In a heavy medium saucepan, melt the butter over medium high heat and add the oats, stirring constantly to toast the oats before cooking. This will take a few minutes of stirring and when you notice a toasty, nutty aroma and a slightly browned color, they are ready to add the liquids.
  • 2. Pour in the liquid(s), add salt and stir until the oats get smooth and thickened slightly. Turn the heat down to very low (just barely blurping)and cover. Cook on very low, stirring about every 5 minutes for 20 to 30 minutes. (To test for doneness, taste a few grains. They should be tender, but still have some "tooth" and texture.)
  • 3. When the oats are done to your liking, stir in the vanilla extract and serve. Use your favorite sweetener and a splash of your choice of dairy product. Stir and enjoy.

A friend of mine has been purchasing steel cut oats in bulk from the Amish in our area and sharing! Since I didn't know how to prepare them, I found a similar recipe online and adapted it to my taste. *Note-you can use 4 cups of water and omit the milk. The milk makes it creamier.

Number Of Ingredients 6

1 cup steel cut oats
3 1/2 cups water
1 pinch salt
1/2 cup skim milk
1 teaspoon vanilla or 1 teaspoon almond extract
1 pinch cinnamon

Steps:

  • Bring the water to a boil in a large pot. Add the steel cut oats and and salt. Stir.
  • Reduce the heat to medium low and cook for 30 minutes. Make sure you stir the oats occasionally so they don't stick to the pan.
  • When the oats start to thicken, at about 30 minutes, add in the milk and extract. I think the milk makes the oats creamier. Stir the oats, milk, and extract together and cook for ten more minutes.
  • Add in cinnamon and raisins or whatever toppings you wish.
  • (If you want to make bruleed oats-put the oats in a bowl, sprinkle with brown sugar and turbinado sugar. With a creme brulee torch, fire the top of the oats until the sugar is crystalized).
  • Serve the oats hot. This batch makes 4-6 servings. If you want you can let the oats cool and then portion them out into smaller containers. To reheat, add a splash of milk and reheat in the microwave for 1-2 minutes.
