2 (6-ounce) creamy goat cheese disks, such as Coach Farm
Kosher salt and freshly ground black pepper
Minced fresh dill
Julienned fresh basil leaves
Crushed red pepper flakes
Good olive oil
Bread or crackers, for serving

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

320g pack puff pastry
a little plain flour , for dusting
150g tub soft goat's cheese
1 tsp herbes de Provence, or chopped herb from the garden
2 small courgettes , cut into thin rounds
5 tomatoes (not too big), thinly sliced
handful pitted black olives
leaves from a few thyme sprigs
drizzle of extra virgin olive oil
medium beaten egg , to glaze
1 tbsp mild olive oil
2 tsp red wine vinegar
1 tsp Dijon mustard
1 tsp clear honey
100g bag watercress

Steps:

  • Heat oven to 220C/200C fan/gas 7. Unroll the pastry and cut it into 4 rectangles. Score a border about 2cm in from the edge of each piece, then lift onto a lightly floured baking sheet. Mash the goat's cheese with the herbs, plus some seasoning. Spread over the middles of the tarts.
  • Overlap the courgette and tomato slices on top of the cheese, then scatter with the olives and thyme leaves. Drizzle with a little olive oil. Brush the edges of the pastry with egg. Bake for 15-20 mins until the pastry is dark golden and the vegetables are starting to sizzle.
  • Whisk together the oil, vinegar, mustard and honey to make a dressing, then season to taste. Toss with the watercress just before serving.

3 tablespoons olive oil, plus more
olive oil, for brushing
4 cups thinly sliced yellow onions (2 large onions)
3 large garlic cloves, cut into thin slivers
kosher salt
fresh ground black pepper
3 tablespoons white wine
2 teaspoons minced fresh thyme, plus sprigs (to garnish)
1 (17 1/3 ounce) package puff pastry sheets, thawed overnight in the refrigerator, use cold
4 tablespoons grated parmesan cheese
4 ounces montrachet garlic and herb goat cheese
1 large tomatoes, cut into 4 (1/4-inch-thick)
4 -6 large button mushrooms, sliced thin
3 tablespoons julienned basil leaves
2 ounces parmesan cheese, shaved with a vegetable peeler

Steps:

  • Preheat the oven to 425°F degrees.
  • Line a sheet pan with parchment paper.
  • Heat 3 tablespoons of olive oil in a large skillet over medium-low heat and add the onions and garlic; sauté for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet.
  • Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine and thyme and continue to cook for another 10 minutes, until the onions are lightly golden.
  • Unfold each sheet of puff pastry on a lightly floured surface and roll it lightly to an 11-by-11-inch square.
  • Using a six-inch-wide saucer or other circular object as a guide, cut 2 (six-inch) circles from each sheet of puff pastry, discarding the scraps.
  • Repeat with the second sheet of pastry.
  • Using the tip of a sharp paring knife, score a circle 1/2 inch inside the edge of each pastry. Prick the pastries all over with the tines of a fork and place them on the sheet pan.
  • Sprinkle a tablespoon of the grated Parmesan on each round, staying inside the scored border.
  • Place 1/4 of the onion mixture on each circle, again staying within the scored edges.
  • Crumble 1 ounce of goat cheese on top of the onions.
  • Place a slice of tomato in the center of each tart.
  • Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper.
  • Finally, scatter 4 or 5 shards of Parmesan on each tart.
  • If the pastry is warm, chill for 15 minutes.
  • Bake for 20 to 25 minutes, until the pastry is golden brown.
  • Garnish each with a sprig of thyme and a drizzle of olive oil.
  • Serve warm.

1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
1 tablespoon olive oil
2 small leeks (white and pale green parts only), halved, thinly sliced crosswise
1 cup whipping cream
1 5.2-ounce package soft herb cheese (such as Boursin), room temperature
1 3.5-ounce package soft fresh goat cheese, room temperature
4 ounces cream cheese, room temperature
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh thyme
2 large eggs
4 ounces thinly sliced smoked salmon
2 tablespoons plain dried breadcrumbs

Steps:

  • Preheat oven to 350°F. Roll out puff pastry on lightly floured surface to 12-inch square. Line 9-inch-diameter tart pan with removable bottom with pastry, cutting off excess at edge. Using fork, pierce dough all over. Freeze pastry 5 minutes. Cover pastry with aluminum foil. Fill with dried beans or pie weights. Bake pastry 15 minutes. Remove weights and foil. Bake crust until golden, about 5 minutes longer. Cool completely on rack. (Can be prepared 1 day ahead. Cover with plastic wrap. Let stand at room temperature.)
  • Preheat oven to 425°F. Heat olive oil in heavy large skillet over medium heat. Add sliced leeks and sauté until soft, about 5 minutes. Add whipping cream and simmer until leek mixture is reduced to 1 1/4 cups, about 5 minutes. Let mixture cool.
  • Using wooden spoon, beat herb cheese, goat cheese, and cream cheese in large bowl until well blended. Stir in leek mixture, then lemon juice and thyme. Season mixture to taste with salt and pepper. Stir in eggs 1 at a time, blending well after each addition.
  • Spread half of filling over bottom of crust. Top with smoked salmon. Top salmon with remaining filling. Sprinkle with breadcrumbs.
  • Bake tart until filling is set, about 30 minutes. Transfer to platter. Let tart cool to room temperature. Cut tart into wedges and serve.

1 1/2 cups all-purpose flour, plus more for dusting the board
Kosher salt
13 tablespoons cold unsalted butter, divided
3 to 4 tablespoons ice water
3/4 cup chopped shallots (3 to 4 shallots)
10 1/2 ounces garlic-and-herb soft goat cheese (recommended: Montrachet}
1 cup heavy cream
3 extra-large eggs
1/4 cup chopped basil leaves
1/8 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, put the flour and 1/4 teaspoon salt in the bowl of a food processor fitted with the steel blade. Cut 12 tablespoons (1 1/2 sticks) of the butter into large dice, add to the bowl, and pulse until the butter is the size of peas. With the machine running, add the ice water all at once and process until the dough becomes crumbly. Don't overprocess. Dump the dough out on a floured board, gather it loosely into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
  • Roll the dough on a well-floured board and fit it into a 9-inch tart pan with a removable sides, rolling the pin over the top to cut off the excess dough. Butter 1 side of a square of aluminum foil and fit it, butter side down, into the tart pan. Fill the foil with rice or beans. Bake for 20 minutes. Remove the beans and foil from the tart shell, prick the bottom all over with a fork, and bake for another 10 minutes.
  • Meanwhile, heat the remaining tablespoon of butter in a small pan and saute the shallots over low heat for 5 minutes, or until tender. Place the goat cheese in the bowl of the food processor and process until crumbly. Add the cream, eggs, basil, 1/4 teaspoon salt, and the pepper and process until blended.
  • Scatter the cooked shallots over the bottom of the tart shell. Pour the goat cheese mixture over the shallots to fill the shell (if the shell has shrunk, there may be leftover filling). Bake for 30 to 40 minutes, until the tart is firm when shaken and the top is lightly browned. Allow to cool for 10 minutes and serve hot or at room temperature.

  • Bring your herbed cream cheese to room temperature so that it can be spread easily (10-15 minutes).
  • Thaw puff pastry as per package instructions and unroll. If using a puff pastry brick, roll out to a rectangle that is 12 inches wide and 15 inches long.
  • Using the tip of a knife, score a ½-inch wide border around the puff pastry sheet. You are essentially drawing a rectangle within a rectangle. Using the tines of a fork, poke the pastry inside the score lines. Make sure to poke evenly and all the way through. We don't want the inner part of the pastry to rise up too much, however we want the border to rise and create a nice crust.
