This rub is a combination of many different recipe. Not only you can use as a rub for meat but also it tastes wonderful on summer squash.-Taste of Home Test Kitchen, Greendale, Wisconsin

Yield about 1/3 cup.

Number Of Ingredients 8

2 tablespoons minced fresh parsley
2 tablespoons minced fresh oregano
1-1/2 teaspoons minced fresh rosemary
1-1/2 teaspoon minced fresh thyme
2 garlic cloves, minced
1 teaspoon salt
1/4 to 1/2 teaspoon pepper
Cayenne pepper to taste, optional

Steps:

  • In a small bowl, combine all ingredients. Rub over chicken, salmon steaks (about 1 tablespoon for each serving) or sprinkle over lightly oiled vegetables (such as summer squash, onions and sweet red peppers). Cover and refrigerate for 30 minutes. Grill or broil as desired.

Recipe video above. This is a real great all-rounder rub for pork chops. It gives the pork great flavour, a lovely warm red colour, and if you throw a knob of butter in at the end, you get a tasty flavoured sauce too!There's enough spices in the rub so that if you're missing one or two, the rub will still be tasty, see Note 1.Makes 4 tablespoons / 45g of rub which will season 4 thick-cut chops. Keeps for the shelf life of the spices you used.

1 tbsp smoked paprika
2 1/4 tsp salt ((cooking/kosher salt, Note 2))
3/4 tsp black pepper
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 tsp dried oregano
3/4 tsp mustard powder
1/2 tsp cumin powder
1/2 tsp sage powder
4 pork chops, any type ((pictured: pork cutlets, 220g/7oz each, 2cm / 0.8" thick) (Note 3))
1 1/2 tbsp olive oil ((per batch you cook))
50g / 4 tbsp unsalted butter ((for flavoured butter sauce, 15 g / 1 tbsp per chop))

Steps:

  • Rub: Mix spices in a small bowl. Keeps for weeks - even months! (Whatever the shelf life of the spices is you used).
  • Using pork rub: Pat pork chops dry. Sprinkle then use your fingers to lightly rub the seasoning on both sides, as well as the sides. Shake off excess. Cook per below.

1/2 cup olive oil
2 cloves garlic, minced
1 tablespoon rosemary
1 1/2 teaspoons oregano
1 teaspoon pepper, cracked
1 tablespoon chives, minced
1 teaspoon salt
1 teaspoon dry mustard
1 (2 1/2 lb) fryer chickens, cut up

Steps:

  • Mix everything together except the chicken.
  • Rinse chicken and dry.
  • Rub all surfaces of the chicken herb mixture.
  • To Grill: Place chicken on grill over medium coals.
  • Grill uncovered for 35 to 45 minutes or until no longer pink.
  • Turn after the first 15 minutes.
  • To Bake: Bake at 375 degrees for 45 to 55 minutes or until no longer pink.
  • Do not turn.

This was inspired by and adapted from KITTENCAL's Recipe #77782 (Savory Beef Roast Rub) when I needed something to do for grilled country ribs but was out of a lot of things. In addition to changing some of the herbs to use what I actually had available, I added the wine and oil because I think you get more flavor that way -- there are flavor components that dissolve in alcohol and oil that don't dissolve in water. It made a tasty change from the usual BBQ sauce/teriyaki/marinaded in lemon flavor you expect on pork. It makes enough for about 6lbs of country ribs.
