Beef Heart is inexpensive and lean, but it's unusual to find in the grocery. My recipe is the only version I know of that is southwest style, in fact, this is fusion cuisine, because this is not an authentic southwest recipe. Mole adds a wonderful richness to this dish. You might want to make a pan of cornbread, it's great with this. Serve with red wine, and a salad of jicama, cabbage, and celery.

2 tablespoons olive oil
1 onion, chopped
1 clove garlic, minced
1 stalk celery, sliced
1 carrot, cubed
1 slice bacon, sliced into small strips
2 pounds beef heart, rinsed and cubed
2 teaspoons beef bouillon granules
1 teaspoon ground cumin
½ cup red wine
3 cups water, or as needed
¼ cup prepared mole sauce
1 parsnip, cubed
2 large potatoes, peeled and cut into large chunks
1 cup canned lima beans

Steps:

  • Heat the oil in a Dutch oven over low heat. Add onion, garlic, celery, carrots and bacon. Cover, and let the vegetables sweat for about 10 minutes.
  • Remove vegetables to a plate to make room, and place the beef heart in the pan, adding a bit more oil if necessary. Saute over medium heat until browned. Return the onion mixture to the pan, sprinkle in the cumin and beef bouillon. Pour in the red wine, mole sauce, and enough water to cover. Put the lid on the pan, and simmer over low heat for 2 hours.
  • Add the parsnip and potato to the stew, and stir in the beans. Continue to simmer for another 30 minutes, until vegetables are tender. I hope you enjoy making and eating my creation.

I finally figured out how to make a decent taco meat without any packets, because I can't stand resorting to packets! I think I got the idea from my sister, because she has a very firm belief that there should be chocolate in everything. Correction to cocoa amount: now that I have more experience in guesstimating what I put into my recipes, I am adjusting this :)

2 teaspoons red pepper flakes
3 garlic cloves, minced
1 lb ground beef (or chicken, cubed)
2 tablespoons beef stock
1/2 cup hot water
1 -2 tablespoon unsweetened cocoa powder
1 teaspoon oregano
2 teaspoons cumin
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon pepper

Steps:

  • Place red pepper flakes and garlic into a frying pan and add meat. I don't add any oil for beef, because it produces enough grease, but for chicken, I add one tablespoon cooking oil. Cook over medium high until meat is fully cooked.
  • Drain grease from meat.
  • Mix beef stock and hot water and mix until the stock is disolved. Add to meat. Add all other ingredients, stir well, and allow to simmer down until the sauce is thick enough to serve with tacos.

1 beef heart or 2 veal hearts
2 cups stock or 2 cups diluted tomato soup
4 slices bacon
1 1/2 cups bread dressing or 1 1/2 cups rice dressing
paprika

Steps:

  • Tie the heart with string.
  • Place it on a rack in an oven proof dish.
  • Place in bottom of the dish the stock or diluted tomato soup.
  • Place over the heart the bacon strips.
  • Cover the dish closely and bake the heart in a moderate oven 325°F until tender, sometimes if beef, a matter of 3-5 hours, if veal about 2 hours.
  • Remove heart to a plate and cool it slightly.
  • Heat, then fill the cavity with 1 1/2 cups bread dressing or rice dressing.
  • Sprinkle the heart with paprika.
  • Return it briefly to hot oven 400°F or place it under a broiler to reheat.
  • The drippings may be thickened with flour to make gravy.
