This is a yummy and moist meatloaf with a bit of a kick. Use more or less spices to suit your taste, I like it as is!

1 pound ground venison
1 tablespoon brown sugar
8 saltine crackers, crumbled
1 egg, beaten
½ teaspoon spicy brown mustard
¼ teaspoon dried cilantro
½ teaspoon garlic powder
½ teaspoon dried minced onion flakes
¼ teaspoon ground thyme
1 dash cinnamon
1 dash paprika
3 tablespoons ketchup
1 tablespoon brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together venison, 1 tablespoon brown sugar, crackers, and egg in a bowl. Season with mustard, cilantro, garlic powder, onion flakes, thyme, cinnamon, and paprika; mix well. Pat mixture into a 9x9-inch pan, or a loaf pan.
  • Bake in preheated oven to an internal temperature of 160 degrees F (70 degrees C), about 40 minutes. Stir together the ketchup, with 1 tablespoon brown sugar. Spread on top of the meatloaf, and place back in the oven for 10 minutes more.

2 pounds ground venison
1 (6 ounce) package dry stuffing mix (such as Stove Top®)
1 cup water
1 onion, finely chopped
¼ cup barbeque sauce
2 large eggs, lightly beaten
salt and ground black pepper to taste
¼ cup barbeque sauce

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix venison, stuffing mix, water, onion, 1/4 cup barbeque sauce, eggs, salt, and black pepper together in a large bowl until fully incorporated. Shape venison mixture into a loaf and place in a 9x13-inch baking dish. Spread 1/4 cup barbeque sauce over the top of loaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1/3 cup barbecue sauce
1/3 cup Italian seasoned breadcrumbs
1 egg
1 egg white
1/8 cup parmesan cheese
2 ounces skim milk

Steps:

  • Add all ingrediente to a big bowl. Mix well together. Shape into a loaf(you can either use a loaf pan or I use a cookie sheet with a sheet of foil on it). Either way will be fine. Since you are using venison there is not much fat juice while cooking. Adding the bbq sauce will make it moist & delicious. Save leftovers for next days lunch, a meatloaf sandwich. Cook 350 degrees for appox. 1 hour. until fully cooked through.

1 (4 ounce) packet saltine crackers, finely crushed
¼ cup barbecue sauce
½ yellow onion, chopped
½ teaspoon dried sage
½ teaspoon steak seasoning
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
3 slices bacon
¾ cup barbecue sauce
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix the venison, egg, cracker crumbs, 1/4 cup barbecue sauce, onion, sage, steak seasoning, 2 tablespoons brown sugar, and 2 tablespoons Worcestershire sauce in a mixing bowl with your hands until evenly combined. Pack into a 3x7-inch loaf pan, and lay the bacon strips over top.
  • Bake in the preheated oven until no longer pink in the center and the bacon is crispy, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Meanwhile, stir 3/4 cup barbecue sauce, 2 tablespoons brown sugar, and 1 tablespoon Worcestershire sauce in a sauce pan over medium heat. Simmer 5 minutes, whisking constantly. Pour the sauce over the cooked meatloaf, and let rest 5 minutes before serving.

When I hear this, I start singing the praises of wild game meatloaf. Granted, the name of the dish sounds a little folksy and oafish, but you can do some innovative...

1½ lbs. ground meat (90% lean game meat, 10% pork fat)
3 tbsp. extra virgin olive oil or 2 tbsp. bacon grease
1 medium onion, finely chopped
Kosher salt
Freshly ground black pepper
5 cloves garlic, minced
10 oz. baby spinach
¼ tsp. red pepper flakes
¼ tsp. freshly grated nutmeg
½ cup fresh breadcrumbs
¼ cup oatmeal
¼ cup finely chopped flat-leaf parsley
3 tbsp. finely chopped chives
Leaves from 3 sprigs thyme
½ cup milk
2 eggs
Butter for greasing the pan
3 oz. provolone or fontina cheese cut into sticks about ⅓" x 1" x 3"
3 tbsp. pine nuts, toasted
¼ cup seedy mustard
1 tsp. honey

Steps:

  • Preheat oven to 350°F.
  • In a large sauté pan, heat the oil over medium-high heat. Add the onion and cook until browned, about 6 minutes. Season it with 1 teaspoon salt and ¼ teaspoon black pepper.
  • Add the garlic and cook for 1 minute more.
  • Remove half the onion-garlic mixture and set that aside to cool. Then add the spinach and red pepper flakes to the half remaining in the pan and toss with tongs until the spinach is wilted.
  • Stir in the nutmeg. Set aside to cool.
  • Place the breadcrumbs, oatmeal, parsley, chives, and thyme in a small bowl. Pour the milk over the top and let sit while you mix the meat.
  • In a large bowl, combine the ground meat, cooled onion-garlic mixture, and the eggs. Season well with salt and black pepper. Add the soaked bread crumb mixture and combine well. You could use a spoon for mixing, but it's easier to just use your hands.
  • Once the mixture is combined, lay a 1-inch layer of the meatloaf mixture on the bottom of a 1½-pound or 2-pound loaf pan. Pat it down so it reaches the corners, and allow it to come up the sides a bit. You will fill this cavity with the filling.
  • Next, lay the cooled spinach mixture over the meat layer, leaving a ½-inch border of meat around the spinach. Top the spinach with the cheese sticks, forming a stripe in the center that runs the length of the pan. Sprinkle the pine nuts over the cheese stripe then top with the remaining meat mixture and pat down. Be sure this top layer meets with the bottom meat mixture along the sides to form a seal.
  • Pat the top of the loaf so it's flat and even. Mix the mustard with the honey, then top of the loaf with this mixture.
  • Bake for 1 hour or until an instant-read thermometer reads 150°F when inserted in the center.

1 cup evaporated milk
1/2 cup breadcrumbs
1/3 cup ketchup
3 tablespoons Worcestershire sauce (I like Lea & Perrins)

  • Preheat oven to 375 degrees.
  • Combine all ingredients in a large bowl.
  • The mixture will seem kind of wet, but it will be just fine.
  • Spray a baking dish with nonstick cooking spray.

  • Bake for 1 hour.

12 thin rashers streaky bacon
1kg minced venison
1 small onion , finely chopped
2 good-quality pork sausages , meat squeezed from the skins
1 tbsp fresh thyme leaves, plus sprigs to decorate
50g fresh breadcrumb
1 tbsp wholegrain mustard
splash of Worcestershire sauce
1 egg

Steps:

  • Heat oven to 200C/180C fan/gas 6. Stretch out the bacon with the back of a knife, then trim off and finely chop any stray bits. Line a 900g loaf tin with the bacon, leaving an overhang, and set aside. Tip the rest of the ingredients into a bowl and scrunch well with your hands.
  • Pack the mix into the tin, pat down well and wrap over the bacon. Put the tin on a tray and bake in the middle of the oven for 1 hr 15 mins or until firm and cooked through. Leave to rest for at least 15 mins, then serve sliced - or leave to cool completely and serve sliced cold for a buffet with salad, or stuffed into a roll. Either way, Cumberland sauce is a must (see tip, below).

1 can (8 ounces) tomato sauce
1 medium onion, finely chopped
1 cup dry bread crumbs
1-1/2 teaspoons salt

2 tablespoons white vinegar

Steps:

  • In a large bowl, lightly beat eggs; add tomato sauce, onion, crumbs, salt and pepper. Add venison and mix well. Press into an ungreased 9x5-in. loaf pan. Combine brown sugar, mustard and vinegar; pour over meat loaf. Bake, uncovered, at 350° for 70 minutes or until a thermometer reads 160°.

Finally, a meatloaf recipe that my whole family enjoys. Mostly venison, but also with some pork sausage to add some fat to avoid a dry meatloaf (venison is such a lean meat). This is a combination of a couple of meatloaf recipes that I played around with.

1 onion, chopped
3 garlic cloves, chopped
1 1/2 lbs ground venison
1/2 lb spicy pork sausage
3/4 cup milk
3/4 cup breadcrumbs
1/3 cup ketchup
3 tablespoons Worcestershire sauce
1 egg
1 teaspoon salt
1 tablespoon seasoned pepper
1 (8 ounce) can tomato sauce
1 teaspoon dried basil
1/4 cup ketchup

Steps:

  • Preheat oven to 375°F.
  • Saute the onion in a little butter over medium-low heat. When onion just starts to look done, add the chopped garlic and saute just a few minutes longer (this brings out the flavor of the onion and the garlic instead of adding them raw).
  • Mix together all the ingredients except tomato sauce, basil, and 1/4 cup ketchup.
  • Put into loaf pan and cook at 375 for 50 minutes. Mix together tomato sauce and 1/4 cup ketchup and pour over top of meatloaf, then sprinkle basil over that.
  • Cook an additional 10 minutes. Let sit for 10 minutes after pulling out of oven.
  • Note: feel free to add some steak seasoning in place of or in addition to the seasoned pepper for stronger flavor.

1/4 cup crisco butter flavor shortening
1 large onion, diced (about 3/4-1 cup)
1/4 cup diced green bell pepper
1 lb ground venison
1 lb lean ground beef (like sirloin or ground round)
1 teaspoon dry mustard
1 teaspoon Lawry's Seasoned Salt
black pepper, desired amount
2 eggs, beaten
1/4 cup prepared horseradish
1 cup rolled quick oats
3/4 cup tomato juice
1 cup ketchup

Steps:

  • Preheat oven to 350 degrees.
  • Spray the inside of a 13x9-inch glass pyrex baking dish with a no-stick cooking spray.
  • In a small skillet, melt the shortening. Add the diced onion and green peppers. Saute for 5 minutes, then set aside.
  • DO NOT DRAIN OFF THE GREASE FROM THE SAUTEED VEGETABLES, THIS WILL HELP TO KEEP THE MEATLOAF MOIST.
  • In a bowl mix together, the venison, sirloin, mustard, seasoned salt, pepper, eggs, horseradish, quick oats, the sauteed onion and peppers, and the tomato juice.
  • Place loaf mixture into the pyrex baking dish. Shape into a rectangular loaf.
