7 cups 1/2-inch pieces firm white sandwich bread (about 12 slices)
1 1/4 pounds leeks (about 8 small), halved lengthwise and cut crosswise into 1/2-inch-thick pieces (about 5 1/4 cups)
3 medium red onions, cut into 1-inch pieces (about 5 1/2 cups)
12 large shallots (about 1/2 pound), cut lengthwise into sixths
3 large celery ribs, chopped (about 1 1/4 cups)
3 tablespoons minced garlic (about 10 small cloves)
2 tablespoons chopped fresh thyme leaves
1 tablespoon chopped fresh sage leaves
1 cup fresh flat-leafed parsley leaves, washed well, spun dry, and chopped
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup turkey giblet stock or chicken broth

Steps:

  • Preheat oven to 350°F.
  • In a shallow baking pan spread bread in one layer and bake in middle of oven, stirring occasionally, until golden, 10 to 15 minutes. Transfer bread to a large bowl.
  • In a bowl of water wash leeks and drain by lifting leeks from water into a colander.
  • In a large heavy skillet cook leeks, red onions, shallots, celery, garlic, and herbs with salt and pepper to taste in butter and oil over moderate heat, stirring, until onion mixture is softened, about 10 minutes. Add onion mixture to bread with salt and pepper to taste and toss to combine well. Cool stuffing and transfer to a buttered 4-quart baking dish. Stuffing may be made 1 day ahead and chilled, covered.
  • During last 1 1/2 hours of grilling turkey, drizzle stuffing with stock or broth and bake, covered, in middle of oven 1 hour. Bake stuffing, uncovered, 20 to 30 minutes more, or until golden brown.

1 small onion, diced
½ cup diced celery, with leaves
6 slices stale bread, cut into cubes
1 tablespoon ground black pepper
1 tablespoon chopped fresh parsley
1 teaspoon dried sage
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon celery salt
½ cup melted butter
1 (3 pound) whole chicken
¼ cup chopped fresh savory

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir together onion, celery, bread, pepper, parsley, sage, rosemary, thyme, and celery salt in a large bowl; pour melted butter over bread mixture and stir to combine.
  • Spoon stuffing into the cavities of chicken; place chicken into a roasting pan. Sprinkle chicken with savory; cover with a lid or foil.

6 large yellow onions (about 4 pounds)
4 slices bacon (about 3 ounces), diced
1 sprig fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage
1/8 teaspoon kosher salt, plus to taste
Pinch sugar
Freshly ground black pepper, to taste
1/4 cup white wine
1/4 cup heavy cream
3/4 cup grated Gruyere cheese (about 3 ounces)
2 teaspoons Dijon mustard
1 tablespoon unsalted butter, plus for buttering the dish
1/3 cup fresh breadcrumbs

Steps:

  • Peel the onions, but leave the root end intact. Pour about 2 inches of water into a large saucepan and set up a collapsible steamer inside. Steam the onions until easily pieced by a knife, about 30 minutes. (For more tender onions you may steam them a little longer; however, they might be somewhat harder to hollow out. Either way they're delicious!) Set aside to cool. Slice off about a third of the top portion of each onion. Using a paring knife, cut out the insides of each onion, leaving about 4 outside layers intact, to make a container for stuffing. Chop the onion insides and tops. Preheat the oven to 400 degrees F. Heat a large skillet over medium-high heat. Add the bacon and cook, stirring, until crispy and the fat has rendered, about 3 minutes. Add the chopped onion, herb sprigs, 1/8 teaspoon salt, and sugar. Season the inside of the onions with salt and pepper, and spoon the stuffing into each onion cavity, mounding it slightly on top. Set the onions in the dish. Heat the butter in the skillet. 4 tbsp sunflower oil
5 onions , finely chopped
300g white bread , in chunks
25g pack curly parsley
15g pack sage , leaves only
zest 3 lemons , juice of 1
8 cocktail sausages
4 smoked, dry-cured streaky bacon rashers, halved across the middle

Steps:

  • Heat oven to 190C/170C fan/gas 5. Heat the oil in a large frying pan, then soften the onions for 10 mins with the pan covered. Put the bread and herbs into a food processor and pulse until you have herby breadcrumbs. Stir into the onion pan along with the lemon zest and juice and plenty of seasoning. Set aside 250g to stuff the turkey, then press the remainder into a well buttered baking tin or dish, about 20 x 30cm, or use 2 smaller tins if that's all that you have.
  • Wrap half a bacon rasher around each sausage. Score the stuffing into 8 rectangles, then sit a sausage on top of each. Cover with foil and cook for 20 mins. Uncover, then roast for 20 mins more or until the sausages and bacon are golden and the stuffing golden and sizzling.
