Steps:
- Roll kale leaves into tight tubes and cut crosswise into 1/4-inch strips.
- Heat oil in a large, heavy saucepan over medium heat. Cook and stir kielbasa in hot oil until browned, about 5 minutes. Stir green onion with sausage; cook until onions soften, about 3 minutes. Add kale; cook and stir until kale wilts, about 3 minutes.
- Pour chicken broth over kielbasa mixture; add beans and stir. Bring the mixture to a boil, reduce heat to low, and cook at a simmer until kale is completely tender, about 15 minutes. Season mixture with salt and pepper and top with Parmesan cheese.

Classic bean soup recipe. Can be made Italian by adding 3 tablespoons pesto and 1 cup cooked pasta to the finished soup. Can be made Mexican by using black beans, adding 1/2 teaspoon red pepper flakes and 2 teaspoons cumin when tomato paste is added. Can be made chunky by adding diced carrot, potato and shredded cabbage to the veggie list.

- Pour water over navy beans in a large container to cover by several inches; soak 8 hours to overnight.
- Combine soaked beans, chicken broth, water, onion, celery, garlic, and bay leaf in a large pot; bring to a boil. Reduce heat to low and simmer, partially covered, until beans are almost tender, about 1 hour.
- Stir tomato paste and sea salt into bean mixture; simmer soup another 45 minutes. Remove and discard bay leaf.
- Ladle about half the soup into a large bowl; pour soup into a blender, working in batches, filling blender no more than half full. Hold lid down; pulse a few times before leaving on to blend until smooth. Pour pureed soup into pot with unblended soup; stir in parsley and adjust salt and pepper to taste.

- 1. In a large stock pot heat oil and saute onion, celery and kielbasa. Add beans, broth,water,spinach and pasta. Simmer for an hour. Best when made the day before.
KIELBASA AND BUTTER BEAN SOUP
A hearty soup for those cold days. Use either Polish Kielbasa or Smoked Sausage. Kielbasa gives a sweet taste to the soup while Smoked sausage gives a great background for the beans. It's delish either way.

- Course chop onion and celery and saute in cook ing pot for 3 to 5 minutes in the butter. Add salt and pepper to taste and add paprika.
- Slice kielbasa into 3/4 inch pieces and add to pot.
- Add 3 cans of butter beans with canning liquid to pot. Open last can and puree in blender. Add puréed beans to pot. Add water.
- Bring pot to low boil, cover and reduce heat to simmer. Simmer for minimum 30 minutes to several hours (the longer the better).

- In a large skillet, cook bacon until crisp; remove to paper towel to drain. Discard all but 1 tablespoon drippings; cook kielbasa in drippings until lightly browned. Drain. Add onion, red pepper, beans, broth and pepper. Cover and simmer for 1 hour, stirring occasionally. Crumble bacon on top.

- Add dried beans to a large bowl and cover with 8 cups of water. Allow beans to sit overnight, or at least 8 hours.
- Drain and rinse soaked beans.
- In an 8-quart pot, heat 2 tablespoons vegetable over medium-high heat, until the oil begins to shimmer. Add the half Kielbasa and brown then remove to a plate. Continue with remaining Kielbasa.
- Add the onion, carrots, celery, and garlic to the pot and continue to cook, over medium heat, until the onions are translucent.
- Sprinkle chili powder, smoked paprika, Italian seasoning, black pepper, over the cooked vegetables and continue to saute until the spices become fragrant about 1-2 minutes.
- Add the add the drained beans and browned sausage back to the pot. Add water to the bean/sausage mixture with enough to cover the top of the mixture by 2 inches. Add liquid smoke.
- Bring the soup to a boil, then reduce heat and simmer, covered 2-2 1/2 hours or until the beans are tender.
- Add the lemon zest, lemon juice, the tomatoes with their juices and 2 teaspoons of salt and continue to simmer another 15-20 minutes. Taste for seasoning and adjust as needed. Serve.

- Add sliced and halved or quartered kielbasa sausage to a non-stick skillet. Cook over medium-high heat, until browned in spots. Remove to a bowl and set aside.
