EASY BREAKFAST YOGURT AND FRUIT CUPS



Easy breakfast yogurt and fruit cups image

These easy make-ahead breakfast yogurt cups with home-made fruit compote are perfect for grab-and-go breakfasts on busy mornings.

1 cup pineapple (chopped)
1 cup mango (chopped )
2 tbsp sweetener of your choice
2 tsp lime juice
2 cups strawberries (quartered)
1 tbsp sweetener of your choice
1 tsp lemon juice
1 tsp vanilla extract
2 cups blueberries (I used frozen)
1 tbsp sweetener of your choice
1 tsp lemon juice
3 cups Greek yogurt

Steps:

  • To make the compote, simply place the fruit, sweetener and lemon/lime juice (and vanilla if you're making the strawberry compote) in a saucepan and bring to a simmer. Simmer for 10-15 minutes or until the fruit has broken down and the compote has thickened slightly. Keep in mind that it will continue to thicken as it cools.
  • Remove the compote from the heat and allow to cool.
  • Layer with the Greek yogurt in sealable jars/containers and place in the fridge for up to 5 days.

1 cup fresh or defrosted frozen strawberries in juice
1 pint fresh blackberries, raspberries or blueberries
1 cup good quality granola

Steps:

  • Layer 1/3 cup vanilla yogurt into the bottom each of 4 tall glasses. Combine defrosted strawberries and juice with fresh berries. Alternate layers of fruit and granola with yogurt until glasses are filled to the top. Serve parfaits immediately to keep granola crunchy.

3/4 cup blueberries (can use fresh or frozen can also substitute blueberries for any type of berry)
2 tablespoons walnuts (chopped)

Steps:

  • Pour vanilla yogurt into a bowl.
  • Add berries to yogurt. If you are using frozen berries, defrost them for 1/2 to 1 minute in the microwave and drain off excess liquid.
  • Stir in walnuts.
  • Enjoy!

  • Eggs. Eggs make a simple, nutritious breakfast choice. They’re an excellent source of protein, which helps support muscle synthesis. Since protein takes a while to digest, it also helps keep you feeling full (1, 2).
  • Greek yogurt. Greek yogurt is a great option if you’re looking for a quick breakfast. It’s made by straining whey and other liquid from milk curds, which produces a creamy product that’s more concentrated in protein than regular yogurt (8).
  • Coffee. Aside from water, coffee is the world’s most popular beverage. Approximately 85% of Americans drink coffee on a regular basis (12). It’s high in caffeine, a molecule that promotes alertness, improves mood, and increases physical and mental performance.
  • Oatmeal. Oatmeal is a classic breakfast option — and it’s nutritious to boot. It’s made from rolled or steel cut oats, which contain a unique fiber called beta glucan.
  • Chia seeds. Chia seeds are extremely nutritious and a great source of fiber. In fact, just 1 ounce (28 grams) provides an impressive 10 grams of fiber per serving (24).
  • Berries. Berries — including blueberries, raspberries, strawberries, and blackberries — are delicious and packed with antioxidants. Most are high in fiber, which promotes fullness.
  • Cottage cheese. Cottage cheese is a fantastic high protein breakfast item, packing an impressive 24 grams of protein per cup (220 grams) (41). A high protein breakfast is linked to greater fullness and reduced hunger.
