DAY-AFTER THANKSGIVING TURKEY PANINI
DaVita renal dietitian Erica from Wisconsin offers her recipe for Day-after Thanksgiving Turkey Panini You don't have to wait until Thanksgiving to try the Turkey Panini - any leftover turkey will do. Delicious eating shouldn't be reserved for a holiday.

Steps:
- Preheat grill pan or Panini machine to medium heat.
- Spread each piece of bread with one teaspoon of butter.
- On the unbuttered side of one piece of bread, layer one slice of cheese, leftover sliced turkey, cranberry sauce and remaining slice of cheese. Place remaining slice of bread on top, buttered side up.
- Put sandwich in pan or onto Panini machine. Grill sandwich 5 minutes on Panini machine or until it is golden and toasted.
- If using a pan, press sandwich down with a pan lid. Flip sandwich after about 3 minutes or when bottom is fully toasted. Cook other side about 3 minutes or until toasted.

LEFTOVER THANKSGIVING PANINI

- Spread the mustard on both slices of bread, then lay a slice of cheese on each piece. On one slice, arrange the turkey and the cranberry sauce. On the other slice, lay on the dressing and spoon the gravy over the top.
- Carefully unite the two halves into one sandwich, then spread the top side of the bread with 1 tablespoon of the butter.
- Invert the sandwich, butter-side down, onto a hot panini maker (or a grill pan or skillet over medium-low heat; see Cook's Note). Spread the top with the remaining 1 tablespoon butter.
- Close the panini maker and grill until the bread is crusty and golden, the fillings are hot, and the cheese is melted. (If using a grill pan or skillet, flip the sandwich halfway through to grill on the other side.)
- Pull the sandwich off the heat and slice it in half--this sandwich is to die for!
DAY AFTER THANKSGIVING PANINIS

- MIX cranberry relish, mustard and brown sugar in small bowl; set aside.
- TO ASSEMBLE, spread butter on 1 side of each slice of bread. Place 4 of the bread slices, buttered-side down, on cutting board. Spread about 2 tablespoons (30 ml) of the mustard mixture on each slice. Divide turkey, arugula and Crispy Fried Onions evenly on each of the 4 bread slices. Cover each sandwich with remaining slices of bread, buttered-side up.
- HEAT panini press on medium-high. Place 2 sandwiches at a time on panini press. Close. Cook 5 to 8 minutes or until bread is crisp and golden brown. Repeat with remaining sandwiches. Cut each sandwich in half to serve.

- Preheat an electric panini maker according to the manufacturer's instructions.
- Brush one side of each bread slice with olive oil. Lay the slices, oiled side down, on a clean work surface. Spread the top of one slice with the mayonnaise. Spread the top of the other slice with the cranberry relish. Arrange the turkey on the mayonnaise. Top with the dressing, then top with the other bread slice, oiled side up.
- Place the sandwich on the preheated panini maker and cook according to the manufacturer's instructions until the bread is golden, 3 to 5 minutes.

DAY AFTER THANKSGIVING DINNER
Several years ago, on the Friday after Thanksgiving, I wanted to use my leftovers for something other than a turkey sandwich or turkey soup. I opened up all the containers in the fridge and came up with this. It's a family favorite and easy to create. It's also easy to put together from scratch, without using leftovers. I've provided amounts as a guideline but the recipe is very forgiving and can be adjusted or modified for more or less, depending on how many ingredients you have on hand. Also - if your stuffing isn't very savory, you can add more herbs to either your turkey mixture or your stuffing mixture - or both!!

- Mix together the stuffing and mashed potatoes.
- Add the egg and mix thoroughly.
- With your hands, form 1-1/2 to 2 inch balls (patties will work as well).
- Place the balls on a greased baking sheet and bake in a 350 degree oven until heated through and a bit crunchy on the outside (about 15-20 minutes).
- While the stuffing balls are baking, make a roux, as follows:.
- Sift the flour, salt, pepper and thyme together.
- Melt the butter.
- Add the seasoned flour, one tablespoon at a time, mixing after each. (I use a whisk to keep the consistency smooth.).
- When the roux is smooth and bubbling, remove from heat and slowly add chicken broth, stirring and incorporating after each addition.
- Stir in the gravy and the milk.
- Return to heat and bring to a slow boil, stirring constantly, until thick and smooth.
- Stir in the turkey pieces and heat through. (At this point, you can add more of any of the liquids if the sauce is too thick.)
- Serve the turkey and gravy sauce over the crunchy stuffing balls. Any leftover vegetables can be served with the meal or a green salad would be a great compliment. And don't forget the cranberry sauce!

- Spread some cold gravy over one side of each slice of bread. Heat the rest of the gravy and use for dipping! On one piece of bread layer turkey and dressing/stuffing and cheese if desired. Top with some cranberry sauce and season with sage, salt and pepper if desired. Place other bread slice of top, gravy side down.
- Butter the outside of the sandwich on the each side. I butter the top of the sandwich and then lay the sandwich in the preheated pan with that buttered side now on the bottom. Now butter the new 'top' of the sandwich, close or cover and weigh down and toast til done.
- Toast to golden brown in a panini press or in a cast iron skillet with another pot or pan on top of sandwich with a heavy can weighing it down to 'press' the sandwich.
