1/4 cup pepperoncini
1/4 cup sunflower seeds
Sea salt, for garnish
One of these dressings: Creamy Avocado Dressing (shown here)
Best Balsamic Vinaigrette
Homemade Ranch Dressing
Dijon Mustard Dressing or Honey Mustard Dressing
Italian Dressing
Blue Cheese Dressing
Citrus Salad Dressing

Steps:

  • If using, make the Homemade Croutons.
  • Wash and chop the romaine. If necessary, wash the mixed greens. (You can use any mix of greens here; measure about 2 cups of greens per serving.)
  • Thinly slice the red onion. Thinly slice the green onion.
  • Peel and chop the cucumber.
  • Shred the carrot (we used this Handheld Julienne Shredder).
  • Thinly slice and half the radishes.
  • Choose and make the dressing (select from the dressing recipes above!).
  • Toss together the greens, red onion, green onion, cucumber, carrot, radishes, and pepperoncini. Top with sunflower seeds and croutons, and drizzle with dressing.

3 mushrooms, sliced thinly
1 tomatoes, sliced
2 slices cheese, cubed (sliced off of the block)
1/2 red capsicum, sliced (red bell peppers)

This Everyday Tossed Salad is an easy garden salad to pull together to serve as a starter or have as a light main. I've tossed this salad with a delicious light dressing made with avocado oil, lemon juice, turmeric, garlic, Dijon mustard and honey.

1/4 cup + 2 tablespoons avocado oil
3 tablespoons lemon juice
2 teaspoons pure clover honey

1 large head Romaine lettuce, core removed, rinsed, dried and chopped (or 1/2 head Romaine and 2-4 cups mixed greens)
1 cup cooked corn, fresh or frozen (barely blanched so its crisp))
3/4 cup cherry tomatoes, sliced in half lengthwise
1 cup sliced cucumber (peeled and seeded if you prefer)
3/4 cup sliced radishes
3/4 cup cauliflower, grated on a box grater or finely chopped
1 avocado, peeled, remove seed and chop meat
1/2 cup raw sunflower seeds
1/2 cup golden raisins

Steps:

  • Rinse, spin and chop lettuce.
  • In a large bowl, combine the ingredients and gently toss to combine.
  • Drizzle 1/3 to 1/2 cup of the vinaigrette over the salad, then toss gently to coat the ingredients with the dressing.

¼ cup chopped onion
¼ cup chopped or thinly sliced carrots
4 cups chopped romaine lettuce
1 cup chopped fresh tomatoes or halved grape tomatoes

Steps:

  • Preheat oven to 425 degrees F.
  • Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute.
  • Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky.
