SPINACH DIP
This recipe came from our cookbook at the beauty shop where I work. We had many pot lucks, and every one wanted this and that recipe, so we all gave recipes and had our own book printed and sold them in the salon.

THE BEST SPINACH ARTICHOKE DIP
This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Steps:
- Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
- Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
- Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

- Thaw the spinach and squeeze as much water out as you can. Wring it like a towel, not kidding.
- Chop up the spinach until its fine. The reason I recommend chopping it is because the spinach stems get stringy in the dip if you leave them whole. Even with pre chopped frozen spinach.

- Add all the ingredients EXCEPT the artichoke and spinach to a high speed blender. Process until smooth, it will be very liquidy but don't worry, it will thicken as it cooks.
- Transfer the mixture to a non stick skillet (or use an oven safe skillet if you want to broil and brown the dip) along with the sliced artichoke and spinach. Cook over medium heat stirring often for about 5 minutes until thickened and bubbly.
- OPTIONAL: Set the oven to broil on high and transfer the dip to an oven safe dish or place your oven safe pan in the oven for about 2-5 minutes. Broil until nicely browned on top but watch carefully to prevent burning. Then sprinkle the optional parmesan cheese on top, if using.

- First, you need to defrost the frozen spinach. You can either add it to a frying pan over a fairly low heat, and cook until most of the water has evaporated, or you can microwave the frozen spinach and then thoroughly squeeze out as much of the water as possible.
- Then, add the spinach to a large bowl with the remaining ingredients and plenty of salt and black pepper. Mix well to combine, and serve with crackers.
