1 ½ tablespoons olive oil
2 cloves garlic, minced
2 teaspoons lemon juice
8 (5 ounce) lamb loin chops
1 pinch salt and freshly ground black pepper

Steps:

  • Combine herbes de Provence, olive oil, garlic, and lemon juice in a small bowl. Rub mixture over lamb chops and refrigerate for at least 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Season chops with salt and pepper.
  • Place chops on the preheated grill and cook until browned and medium-rare on the inside, 3 to 4 minutes per side. Remove from grill and place on an aluminum foil-covered plate to rest for 5 minutes before serving.

4 cloves garlic, peeled and smashed
Kosher salt
Freshly ground black pepper to taste

Steps:

  • Preheat a grill or cast-iron grill pan over high heat. If using a charcoal grill, build the fire so that one side of the grill has more coals than the other - a "hot" side. If using a grill pan, preheat the oven to 400 degrees.
  • Rub the lamb chops with the garlic and season aggressively with salt and pepper. If grilling, place on the hot side for 2 minutes per side. Move the chops to the cooler side of the grill to cook through, an additional 6 to 7 minutes. If using a grill pan, grill one side for 2 minutes to sear, then turn over the chops and place the pan in the oven for 5 to 6 minutes. Remove from the grill or oven and allow to sit 5 minutes before serving.

5 -6 lamb loin chops
2 tablespoons all-purpose flour
2 tablespoons olive oil
2 tablespoons butter
8 ounces fresh cremini mushrooms, sliced
2 shallots, thinly sliced
2 garlic cloves, minced
1/2 cup marsala wine (or dry white wine)
1/2 cup chicken stock
1 teaspoon Dijon mustard
fresh thyme
salt and pepper

Steps:

  • In a shallow bowl, mix flour with salt and pepper. Lightly dredge loin chops in flour.
  • In a large frying pan over medium-high heat add olive oil. When oil is hot, add loin chops to pan. Sear on either side for 2 to 3 minutes. Remove from pan and set aside.
  • In the same pan, add butter and mushrooms. Sauté mushrooms until liquid is released, about 5 minutes. Add shallots and garlic. Cook 1 to 2 minutes, or until fragrant.
  • Slowly add wine to deglaze pan, using spatula to scrape it clean. Add chicken stock, mustard and seared loin chops. Continue to simmer, stirring frequently, until sauce is slightly thickened.
  • Sprinkle with fresh thyme and serve over hot mashed potatoes.

2.5 lbs lamb loin chops, 8 chops, 1.5 - 2" thick
1 tbsp za'atar, spice blend

Steps:

  • Mix marinade and coat lamb chops completely with the marinade. Refrigerate for 2 hours.
  • Remove from marinade, pat dry. Heat grill to medium-high heat.
  • Sprinkle lamb chops with za'atar and salt.
  • Place lamb chops on the grill and cook for 6 minutes over medium to medium-high heat.
  • Flip over and cook for another 6 minutes over medium heat. (turn down to medium low if needed)
  • Remove from grill and let rest for 5 minutes before eating.
  • A fresh squeeze of lemon is also nice on these.

1 tablespoon lemon juice
1 garlic clove (crushed)

4 -6 thick cut lamb loin chops (1-2 inch thick)
2 tablespoons stone ground mustard
1 tablespoon Dijon mustard
2 teaspoons dried rosemary
2 teaspoons dried thyme
1 teaspoon allspice
1 teaspoon garlic salt
fresh ground black pepper

Steps:

  • Place all dried ingredients into a spice grinder or a muddler and grind into a powder.
  • Sprinkle each side of chop with a pinch of the dried rub.
  • Add both mustards into a separate bowl, and combine remaining dry spice rub until well blended. (it should have a green color and rough texture).
  • Apply mustard rub to both sides of each chop as well as along the sides. There should be enough mixture to coat all chops evenly.
  • Cover chops in a shallow bowl and refrigerate for 30 minutes up to 4 hours. Remove chops from refrigerator 30 minutes prior to cooking.
  • Heat cast iron skillet and add oil. When ready, add chops and cook for 3-4 minutes on each side. (3-4 for medium rare, 4-5 for medium well) Sear sides of each chop to seal in juices and lock in flavor.
  • Remove chops from heat and place on a wire rack for 5 minutes. Serve with veggie of our choiec and enjoy!

6 -7 lamb loin chops (i.e., one Costco package)
3 sprigs fresh rosemary, chopped
3 -6 sprigs of fresh mint (mine were very large and I used 3)
1 tablespoon chopped garlic
2 tablespoons balsamic vinegar
4 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Throw everything in a baggy or tupperware container to marinate for a couple of hours REFRIGERATED.
  • Pour the marinade into a sauce pan and heat well.
  • In a large covered skillet,fry half of the chops on one side until browned, 4-5 minutes. Remove from pan and repeat with the other chops.
  • Return all of the chops to the skillet browned side up and fry for 1-2 minutes.
  • Add the simmered marinade, cover, reduce heat to low and allow flavors and aroma to permeate the meat until cooked to desired doneness; lamb usually does better when still slightly pink in the center and still juicy. (We don't do rare meat around here -- nasty cootie attack 15 years ago).
  • Classified under inexpensive as one chop can easily be a portion, and package of 7 was around $15.00 U.S. While it was easy as a dish can be, it would work quite nicely for a breaking-out-the-good-china dinner. Just dress up the serving platter with a little fresh mint and rosemary.
  • Cooking time includes marinating time.

12 lamb loin chops
12 cloves garlic (, chopped)
2 - 3 tablespoons fresh rosemary (, coarsely chopped)
Sea salt and freshly ground black pepper
Extra-virgin olive oil

Steps:

  • Arrange lamb chops on a rimmed baking sheet. Generously season with salt and pepper on both sides and drizzle with olive oil.
  • Rub garlic and rosemary over chops incorporating with the olive oil, until evenly covered. Cover the pan with plastic wrap or transfer to a container or zip-type bag and refrigerate 4 to 6 hours.
  • Light a charcoal grill and once the coals are hot, spread on only one side of the grill to allow for an indirect cooking zone on the other side. If using a gas grill, light all the burners and heat grill to 450 degrees. Reduce heat to low before placing lamb on grill.
  • Place lamb directly over hot coals, cover with the lid and cook for 2 minutes. Remove lid and turn the chops, cooking on each side for about 2 minutes to sear each side. Cover with lid after turning each time.
  • Grill lamb until medium-rare, 8 to 10 minutes total, depending on size. Once browned on all sides, check internal temperature.
  • If the thickest part of the meat is within 5 degrees of medium-rare temp, rotate to the indirect heat zone. If using a gas grill, simply turn off one of the burners to create an indirect heat zone.
  • The chops should have an internal temperature in the thickest part of the meat of 125-130° for medium-rare, 135° for medium.
  • Once done, remove chops from grill, tent with foil, and allow to rest for 10-15 minutes. Serve with Béarnaise Sauce.

2 tablespoons red wine vinegar
2 tablespoons brown sugar

Steps:

  • Place the Lamb chops in a flat glass or ceramic dish.
  • Combine the oil and lemon juice and pour into the dish, swirling the chops through the mix to coat both sides.
  • Season to taste with salt and pepper, cover with plastic and allow to marinate for 15-20 minutes, while you make the chutney.
  • To make the chutney, heat the olive oil in a saucepan, add the leek and cook for 2-3 minutes over medium heat, or until soft.
  • Add the peaches, vinegar, sugar and wine and bring to a boil.
  • Reduce heat and simmer until peaches are soft and mixture is syrupy, about 15-20 minutes.
  • Keep warm or refrigerate in a sealed container until ready to use.
  • Remove chops from marinade and pat dry.
  • Preheat a broiler or barbecue to medium high and grill the chops for 2-3 minutes on each side for medium rare or until cooked as desired.
  • Serve with the chutney and garnish with cilantro or basil.

2 tablespoons olive oil ((divided))
1 sprig fresh rosemary ((or scant teaspoon dried rosemary))
3 sprigs fresh thyme ((or 1 teaspoon dried))
2 teaspoons garlic paste ((or 2 cloves of garlic, crushed))
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon kosher salt

Steps:

  • In the gallon bag, add lamb loin chops, 1 tablespoons of oil, rosemary, thyme, garlic powder, onion powder, cumin, garlic paste, and salt.
  • Massage bag, making sure the chops are covered. Leave on the counter for 30 minutes.
  • Preheat oven to 350 F
  • Heat sauté pan on medium heat, add 1 tablespoon olive oil and once it heats up, add lamb loin chops and sear for 2 minutes each side
  • Place pan in oven and bake for 8 - 9 minutes. I like it medium rare, so mine took 8 minutes.
  • Pull pan out of oven and let rest for 5 minutes before serving

1 teaspoon fresh thyme leaves
Pinch cayenne pepper
Coarse sea salt
2 tablespoons extra-virgin olive oil
6 lamb chops, about 3/4-inch thick

Steps:

  • In a food processor fitted with a metal blade add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and pulse into a paste. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.
  • Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.
