3 pounds sweet potatoes, peeled and cut into chunks
1/2 stick butter
1 banana, sliced
1 orange, zested and juiced
1 cup chicken stock
1/2 cup brown sugar
1/2 teaspoon grated nutmeg
Salt and pepper

Steps:

  • Boil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.

5 large sweet potatoes (3 pounds)
3 tablespoons extra-virgin olive oil or melted unsalted butter
⅔ cups almond milk or any milk
2 teaspoons chopped fresh rosemary
2 garlic cloves
1 teaspoon ground ginger
1 teaspoon sea salt
Freshly ground black pepper
Fresh thyme leaves or chopped parsley for garnish (optional)
Pat of butter (for serving, optional)

Steps:

  • Preheat the oven to 425°F and line a baking sheet with foil.
  • Use a fork to poke a few holes into the sweet potatoes. Place on the baking sheet and roast until very tender, about 60 minutes.
  • Scoop the cooked sweet potato flesh out of the skins and place in a food processor. Add the olive oil, milk, rosemary, garlic, ginger, salt, and several grinds of pepper and process until creamy. If you prefer a chunkier consistency, mash with a potato masher. Season to taste.

In this easy mashed sweet potatoes recipe, the naturally sweet flavor of the potatoes is enhanced by just a little sweet butter, maple syrup, and cinnamon.

1 extra large sweet potato (unpeeled, washed and dried (20 oz)* )
3 tablespoons unsalted butter
3 tablespoons whole milk
1 tablespoon maple syrup
1/8 teaspoon Diamond Crystal kosher salt
1/8 teaspoon ground cinnamon

Steps:

  • Pierce the sweet potato with a fork on all sides. Microwave on high until very tender and the flesh is easily pierced with a fork, about 4 minutes per side. Let stand for 5 minutes, until cool enough to handle.
  • Meanwhile, in a medium microwave-safe bowl, add the butter, milk, maple syrup, kosher salt, and ground cinnamon. Microwave to heat through, 50-60 seconds. Don't allow the mixture to boil.
  • On a cutting board, use your fingers to peel the cooked sweet potato. Roughly mash it with a fork right on the cutting board, then transfer the mash to the bowl with the warm butter mixture.
  • Keep mixing and mashing with a fork (or with a hand masher) until the mash is uniform and smooth, about 1 more minute. It won't be perfectly smooth unless you use a hand mixer or an immersion blender. But I like it a bit rustic. When done mixing, I do like to use a rubber spatula to smooth it out, as shown in the video below.

These simply mashed sweet potatoes taste so good it's hard to stop eating them! It's amazing what just a little butter, sour cream and a few scallions can do without all the frills we usually add. Then again, the beautiful sweet potato doesn't need much help. These make a wonderful addition to a hearty meal and pair well with most meats, especially pork. I pre-bake the potatoes in the oven because I think they have the best flavor, but I included steps for cooking them in the microwave as well. The dish will take from 25 minutes using the microwave to 65 minutes using the oven, not counting the cooling period post cooking.

1/2 cup chopped green onion, some set aside for topping (about 4)

  • Wash and scrub the sweet potatoes; pat dry.
  • To bake the sweet potatoes, preheat the oven to 400 degrees F. Place pricked potatoes on a foil-lined baking pan to catch any juices that leak, then into the preheated oven and cook for 45 minutes, or until the potatoes are fully cooked and tender, up to 1 hour.

  • Peel and chop the sweet potatoes, add to boiling and slightly salted water in a large pan. I usually go for cubes about 3cm x 3cm and they need no more than 15-20 minutes to cook.

  • Put the sweet potatoes in a pot with 8 cups of cold water and 1 tablespoon of coarse salt. Bring to a simmer, cover, and cook until a knife slips in the sweet potatoes easily and cleanly, about 30 minutes. Drain the sweet potatoes and peel the skin off.
  • Mash the sweet potatoes using the back of a big spoon. You may also use a potato masher. If you want a silky smooth texture, transfer the mashed sweet potatoes to a food processor or electric mixer to process until it becomes a very fine and creamy texture.
  • In a small sauce pan heat up the milk and bring to a boil. Meanwhile, transfer the mashed sweet potatoes to a Dutch oven. On medium-low heat, add the chilled butter cubes to the sweet potatoes and stir continuously for a smooth and creamy texture, about 5 minutes.

Reduce the heat and simmer, uncovered, until the potatoes are tender (in other words, it’s easy to slide a fork in and out), about 9 to 12 minutes.
  • Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
  • Promptly add almost all of the green onion and parsley, reserving a small amount of each for garnish. Add the garlic, and stir to combine. Then stir in most of the sour cream (reserve roughly 1 tablespoon for garnish), all of the butter, and the remaining 1 teaspoon salt. Season to taste with additional salt (I usually add another 1/4 to 1/2 teaspoon) and freshly ground black pepper.
