SPICY ORANGE MARINATED CHICKEN

2 cups freshly squeezed orange juice from 3 to 4 large navel oranges, or 6 small oranges, peeled and chopped
1 onion, chopped (about 1 1/2 cups)
1/2 of a 7-ounce-can of chipotle chili peppers in adobo (3 1/2 ounces total)
3 cloves garlic, chopped
1/3 cup chopped fresh cilantro
1 tablespoon fresh rosemary leaves, chopped (or 1 teaspoon dried)
1 Tbsp fresh thyme leaves (or 1 teaspoon dried)
1 Tbsp fresh marjoram or oregano leaves, or 1 teaspoon dried of either
1 teaspoon salt
2 tablespoons extra virgin olive oil
3 pounds boneless skinless chicken thighs (4 pounds if buying bone-in)
Chopped fresh cilantro or parsley and orange slices for garnish

Steps:

  • Make the marinade: In a blender or food processor, combine the orange juice or chopped oranges, onion, chipotle in adobo, garlic, cilantro, rosemary, thyme, marjoram, and salt. Pulse a few times to make a coarse purée. Transfer to a large bowl.
  • Trim the fat from the chicken thighs: With scissors, snip off the excess fat from the thighs.
  • Pound the chicken thighs to even thickness: Put the chicken thighs between two sheets of plastic wrap or wax paper and pound with a meat mallet or rolling pin until an even thickness of about 1/2-inch.
  • Marinate the chicken: Add the chicken to the bowl of marinade (or transfer both to a zipper freezer bag). Refrigerate 2 hours or overnight.
  • Cook the chicken: Heat the olive oil in a large cast iron pan or heavy skillet on medium high heat. Remove the chicken pieces from the marinade, blotting off the excess (but not all) with a paper towel. Working in batches, cook the chicken pieces for 5 minutes on each side, or until browned and cooked through.
  • To serve: Sprinkle the chicken with chopped cilantro or parsley, garnish with orange wedges and serve with Spanish rice . Recipe adapted from one by the National Chicken Council

1 cup orange juice
⅓ cup brown sugar
⅓ cup rice vinegar
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon fresh ginger root, grated
1 teaspoon crushed red pepper flakes
2 pounds skinless, boneless chicken thighs, cut into chunks
1 bunch green onions, sliced, white parts and tops separated
1 fresh jalapeno pepper, sliced into rings
1 red bell pepper, cut into 2 inch pieces
½ cup sugar snap peas
4 cloves garlic, minced
2 tablespoons grated orange zest
1 bunch cilantro leaves, for garnish

Steps:

  • Whisk orange juice, brown sugar, rice vinegar, fish sauce, soy sauce, ginger, and crushed red pepper flakes in a large bowl.
  • Mix in chicken pieces and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 hour.
  • Remove chicken from refrigerator and drain thoroughly in colander, reserving marinade.
  • Heat a large non-stick skillet over high heat. Cook and stir chicken for 2 minutes; spoon out any excess liquid.
  • Continue to cook and stir until chicken caramelizes, 6 to 7 minutes.
  • Stir in white portions of green onions, garlic, and orange zest; cook and stir 2 to 3 minutes.
  • Pour in half of reserved marinade. Simmer until reduced and thickened, 3 to 4 minutes.
  • Stir in jalapeno pepper, bell pepper, and sugar snap peas; cook and stir until vegetables are warmed, about 2 minutes.
  • Stir in green portions of green onions; cook and stir 1 minute.
  • Remove from heat. Garnish with cilantro and serve.

1 teaspoon orange zest, grated
1 clove garlic, minced

1/2 teaspoon vegetable oil

Steps:

  • In small bowl, combine honey with juice concentrate, orange zest, garlic, salt and red pepper flakes.
  • Rinse chicken with cold water and pat dry. Season lightly with salt.
  • In large non-stick skillet, heat margarine and oil over medium-high heat. Add chicken and cook about 4 minutes, until seared.
  • Turn chicken, cook another 4 minutes until just cooked through.
  • Pour honey mixture over chicken and cook, turning chicken to coat as sauce begins to thicken, about 2 min.

A delicious take on orange chicken! Such a bright and delicious blend of sweet, tangy and smokey flavors. Its so easy to make and that glaze will leave everyone craving more. My whole family loved this chicken!

1/2 cup fresh orange juice
1 Tbsp orange zest
1 1/2 Tbsp fresh lemon juice
1/4 cup olive oil
2 Tbsp hot sauce
2 Tbsp dijon mustard
2 garlic cloves, (minced)
3 1/2 lbs boneless chicken thighs, (trimmed of excess fat)
1 tsp chopped parsley, (for garnish (optional))
2 Tbsp butter
1/4 cup honey
1/4 cup fresh orange juice
2 tsp orange zest
1/4 cup BBQ sauce
2 Tbsp dijon mustard

Steps:

  • In a medium mixing bowl whisk together orange juice, orange zest, lemon juice, olive oil, hot sauce, dijon mustard and garlic.
  • Place chicken thighs in a gallon size resealable bag, pour marinade over chicken then seal bag while pressing out excess air.
  • Rub marinade over chicken, transfer to refrigerator and let marinate 1 - 6 hours.
  • Preheat a grill over medium-high heat to about 400 degrees.
  • While grill is preheating prepare glaze - in a small saucepan melt butter over medium heat.
  • Whisk in honey, orange juice, orange zest, BBQ sauce and dijon mustard and remove from heat. Set aside about 1/3 cup for serving.
  • Grill chicken about 4 minutes per side then brush with glaze and grill until cooked through (165 degrees in center) and slightly charred about 2 minutes per side more.
  • Serve warm with reserved glaze, garnished with parsley if desired.

garlic powder
fresh ground black pepper

Steps:

  • Coat both sides of chicken breasts in Frank's Red Hot.
  • Sprinkle both sides generously with garlic powder.
  • Sprinkle both sides with black pepper.
  • Let stand in fridge for at least 30 minutes.
  • Spray grill with oil.
  • Preheat on high for 10 minutes.
  • Transfer chicken breasts to grill with tongs and cook for 7-10 minutes on each side until done.

5 navel oranges, divided
1/2 cup KRAFT Original Barbecue Sauce
2 tsp. Sriracha sauce (hot chili sauce)
4 small boneless skinless chicken breasts (1 lb.)

Steps:

  • Grate zest from 1 orange, then juice orange. Mix zest and juice with barbecue sauce and Sriracha sauce until blended. Pour half over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 15 min. to marinate. Meanwhile, heat grill to medium heat. Cut each of the 4 remaining oranges into 4 slices.
  • Remove chicken from marinade; discard marinade. Place 8 orange slices on grill grate; top with chicken. Brush with some of the remaining barbecue sauce mixture.
  • Grill chicken 5 min.; turn. Add remaining orange slices to grill. Cook 15 to 20 min. or until chicken is done (165ºF), turning chicken and oranges occasionally and brushing with remaining sauce.
  • Remove chicken and oranges from grill. Discard orange slices from under chicken. Serve chicken with remaining grilled orange slices.
