I must admit that I'm one of those health food obsessed people, so I concocted this little recipe when craving a breakfast muffin to help me get energized before a workout. Enjoy!

Number Of Ingredients 10

1 1/4 cups whole wheat flour (can use all purpose)
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 (15 ounce) can peaches in light syrup, undrained
1/2 cup brown sugar, packed
1/2 cup fat free egg substitute or 4 egg whites
1 1/2 tablespoons vegetable oil
2 1/2 cups Kashi Golean cereal (If you don't have this cereal, any bran flake cereal will do fine)
1 cup raisins

Steps:

  • Spray muffin tin with non-stick cooking spray.
  • Combine flour, baking soda, cinnamon and salt in a medium bowl and put aside.
  • Drain peaches and reserve 1/3 cup of syrup and then puree in a blender, until smooth.
  • Whisk the peach puree, sugar, egg substitute and oil.
  • Add Kashi cereal and mix well.
  • Add flour mixture and stir until dry ingredients are just moistened.
  • Fold in the raisins.
  • Add muffin mixture to muffin pan, and bake for 15 to 20 minutes.

2 1/2 cups Raisin Bran cereal
1 1/4 cups buttermilk
1/3 cup applesauce
1 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup Splenda Sugar Blend for Baking
1/2 teaspoon cinnamon
1/2 cup raisins

Steps:

  • Preheat oven to 375 degrees F. Spray with non-stick cooking spray.
  • In a large bowl, whisk together the flour, baking soda, baking powder, Splenda, salt, raisins and cinnamon; set aside.
  • In a large bowl, Combine cereal and buttermilk; let sit for 10 minutes.
  • Stir in the applesauce, egg, and vanilla extract.
  • Pour the wet ingredients over the dry ingredients, and stir until completely combined.
  • Divide the batter between the 12 prepared muffin tins.
  • Bake 15-20 minutes until toothpick inserted in middle of muffin comes out clean.
  • Cool a few minutes; turn on a wire rack.
  • Enjoy!

1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups Kashi Good Friends cereal or 1 3/4 cups Kashi Golean cereal
3/4 cup rice milk or 3/4 cup soymilk
1/4 cup honey
2 egg whites
1/4 cup unsweetened applesauce
1 medium ripe banana, mashed
cooking spray

Steps:

  • Spray muffin tin cups with cooking spray and preheat oven to 400 degrees.
  • In a small bowl, stir together flour, baking powder and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk and let stand for 2-3 minutes.
  • Add the honey and egg whites and beat well.
  • Stir in apple sauce and banana.
  • Add flour mixture and mix only until dry ingredients are moistened, over mixing will produce rubbery muffins.
  • Fill sprayed muffin tins.
  • Bake for 20-25 minutes or until lightly browned.

1/3 cup oil
2 eggs
1 cup milk
1 teaspoon lemon juice
2 1/2 cups flour
2 1/2 teaspoons baking powder
2 cups Raisin Bran cereal

Steps:

  • add lemon juice to milk in bowl
  • after 5 minutes add ceeal eggs sugar and oil
  • let stand 30 minutes mush aaround
  • then mix in flor and baking powder
  • put in greased muffin tins
  • bake at 375 for 10 minutes or til done my oven is a little warped so check can make bigger then will be 12 but must cook them longer.
