- Preheat oven to 400 degrees F (200 degrees C).
- Cut chicken breasts into 1 1/2-inch sized pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter in a bowl or dish for dipping.
- Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

- Preheat oven to 425 degrees F.
- Spray a baking sheet with non-stick cooking spray.
- Trim any fat from chicken and cut into 1 inch cubes.
- In a bowl beat the eggs with the water and add the chicken.
- In a separate bowl, combine the parsley, thyme, red pepper, bread crumbs, wheat germ, basil and ground pepper.
- Stir in the oil with a fork and mix well to distribute evenly.
- Pour seasoning mixture into a large, resealable plastic bag and add the chicken pieces (without the eggs and water); shake to coat.
- Place coated chicken pieces on the prepared baking sheet and bake at 425 degrees F for 10 minutes, turn the pieces and cook for an additional 5 minutes.

- Preheat oven to 400 degrees. Cut chicken into 2-inch pieces. Spread panko on a rimmed baking sheet and bake until golden brown, 6 to 8 minutes. Transfer to a shallow dish, then add Parmesan and 1/2 teaspoon salt; drizzle with oil and stir to combine.
- Place flour and eggs in separate shallow dishes. Increase temperature to 450 degrees.
- Set a wire rack in a rimmed baking sheet; lightly coat rack with cooking spray. In batches, coat chicken in flour, shaking off excess, dip in egg, then coat with panko, pressing to adhere. Place on rack.
- Bake until chicken is cooked through, 12 minutes, flipping halfway through. Serve nuggets with sauce.

- Cook the quinoa in a pan of boiling water (according to the pack instructions).
- Preheat oven to 210C/410°F.
- Add the flour to a bowl, then add the egg and water to a separate bowl and whisk. Place the cooked quinoa in another bowl.

- Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.

- Prep: Preheat the oven to 400°F (200°C). Place a baking pan in the oven to preheat (a black pan works best).Add the eggs to a bowl and whisk until beaten.Place the breadcrumbs in a seperate shallow dish.
