A nutrient-packed, healthy tuna salad recipe with a spicy Asian kick.

10 oz. canned albacore tuna
1/2 cup shredded carrots
2 scallions (chopped)
1/4 cup craisins (chopped)
1 tbsp cilantro (chopped)
2 tbsp light mayonnaise
1 tbsp soy sauce
1/2 tsp chili powder
1/2 tsp toasted sesame oil
1/4 tsp cayenne pepper
1/4 tsp minced ginger

Steps:

  • Drain the tuna and flake with a fork in a medium-sized mixing bowl. Add the carrots, onion, craisins and cilantro and mix together.
  • In a small bowl, combine the mayonnaise, soy sauce, chili powder, sesame oil, cayenne pepper, and minced ginger.
  • Stir the mayonnaise mixture into the tuna mixture until well combined.

10-12 ounces of canned white albacore tuna packed in water, drained
8-10 small radishes, cut into wedges
1 large carrot, shredded
1 clove garlic, smashed and minced
1 teaspoon minced ginger
1/2 to 1 serrano chile, seeded and minced (taste for heat and adjust, can also sub some chili pepper flakes)
2 tablespoons vegetable oil
1 teaspoon dark sesame oil
3 tablespoons seasoned rice vinegar (or plain rice vinegar with a teaspoon of sugar)
Salt and black pepper to taste
2 tablespoons chopped cilantro
1 whole green onion, chopped
Optional: 8 ounces (dry) soba noodles* or fresh lettuce
*If mixing in with soba noodles, cook soba noodles according to package directions, and rinse with cold water.

Steps:

  • Place the drained tuna, radishes, shredded carrot, garlic, ginger, chile, vegetable oil, dark sesame oil, and rice vinegar in a large bowl. Gently toss to combine. Add salt and pepper to taste. Refrigerate until ready to serve.

5 (5 ounce) cans chunk light tuna in water, drained and flaked
½ cup sweetened dried cranberries (such as Craisins®)
½ cup finely chopped carrot
¼ cup chopped green onions
¼ cup finely chopped cilantro
1 tablespoon sesame seeds
1 ½ teaspoons ground ginger
1 ½ teaspoons ground red chile pepper
¾ teaspoon kosher salt
½ cup light mayonnaise
¼ cup Asian chile paste (such as sambal oelek)
2 tablespoons sesame oil
1 tablespoon light soy sauce
1 tablespoon honey

Steps:

  • Mix tuna, cranberries, carrot, green onions, cilantro, sesame seeds, ginger, ground chile pepper, and kosher salt together in a large bowl.

SPICY ASIAN TUNA SALAD



Spicy Asian Tuna Salad image

Do yourself a favor and try this fabulous variation on traditional tuna salad. It's good for everyday use on top of a salad with an asian vinagrette and can also be served with crackers at a dinner party. If you like a little crunch in your tuna salad feel free to substitute red onion for the green onion or add some chopped up celery. I created this recipe on a whim for use in my sushi rolls and have it posted under "Spicy Tuna Salad Sushi Roll" with a lot of detailed instructions on how to prepare the rolls.

2 (6 ounce) cans albacore tuna
1/3 cup mayonnaise
1 tablespoon chili paste (sriracha is the same thing)
2 teaspoons chili oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder (if using fresh ginger use 1/4 tsp)
1/2 teaspoon sesame oil
4 green onions, chopped

Steps:

  • Drain your tuna well and mix all of the tuna salad ingredients together. Everyone's different in how spicy they like their food, so you may want to taste it and add a little more spice to make it to your liking. Refrigerate until ready to use.
  • Serve with crackers for a delicious appetizer or on a tuna salad; you may even want to try it as a twist on the regular tuna salad sandwich. Enjoy!

2 (7 1/2 ounce) cans tuna
1 head iceberg lettuce, shredded
2 carrots, shredded
1 red pepper, chopped
10 ounces frozen peas, thawed
1 small red onion, sliced thin
salt and pepper, to taste
sunflower seeds, to taste
2 (4 ounce) cans chinese noodles
1 cup sour cream
1 cup mayonnaise

Steps:

  • Mix together the first seven ingredients.
  • Mix together sour cream and mayonnaise to make a dressing; set aside.
  • Just before serving, add seeds and noodles to the big mixture.
  • Dress with dressing and serve.
