Canola oil, cooking spray
2 (10-ounce) packages white button mushrooms
3 tablespoons canola oil
1 medium onion, diced
3 stalks celery, diced
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
2 eggs, beaten
2 (14.5-ounce) cans chicken broth
1 loaf day old French bread, diced into 1/2-inch cubes
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9 by 13-inch baking dish with cooking spray.
  • Remove the mushroom caps from the stems. Reserve the caps for the online round 2 recipe Stuffed Mushrooms. Roughly chop the stems and set aside.
  • In a large skillet over medium-high heat, add the canola oil. Stir in the onions and celery and cook until softened slightly, about 2 minutes. Add the mushroom stems and herbs and continue to cook until the mushrooms are browned and the vegetables are slightly tender, about 5 minutes.
  • Whisk together the eggs and chicken broth in a large bowl. Add the cubed bread and toss to coat all of the bread. Stir in the cooked onions and mushroom mixture and toss to combine. Season with salt and pepper, to taste. Transfer to the baking dish and bake, covered loosely with foil, for 40 to 50 minutes. Remove the foil for the last 10 minutes of cooking time to brown the top. Remove from the oven and serve.
  • Use the leftovers from this recipe to make quesadillas and stuffed mushrooms.

HAZELNUT, PANCETTA & ORANGE STUFFING



Hazelnut, pancetta & orange stuffing image

This recipe makes enough smoked pancetta, orange zest and sage stuffing for a 4.5kg turkey - or roll into balls and bake

150g pack diced smoked pancetta
75g butter
2 onions , finely chopped
1 garlic clove , crushed
grated zest 1 orange
200g fresh white breadcrumbs
2 tbsp chopped sage
50g hazelnuts , toasted and roughly chopped
1 egg , beaten

Steps:

  • Heat a large frying pan and add the pancetta. Cook for 2-3 mins until just starting to turn golden. Remove from the pan with a slotted spoon and set aside. Add the butter, onions and garlic to the pan, and cook for 4-5 mins, stirring occasionally. Remove from the heat and transfer to a bowl with the pancetta. Leave to cool.
  • Heat oven to 180C/160C fan/gas 4. Stir the orange zest, breadcrumbs, sage and nuts into the onion mixture and mix well. Season, then stir in enough of the beaten egg to bind the mixture but not make it sloppy. Use to stuff the turkey or shape into balls, place in a roasting tin and cook for 30 mins.

3 teaspoons plus 5 tablespoons unsalted butter
2 1/2 cups low-sodium store-bought chicken broth
1 large egg
1 large egg yolk
1/2 cup sliced bacon, about 2 ounces
1 cup finely chopped onion
1/2 cup finely chopped celery
1/2 pound shiitake or button mushrooms, stemmed and sliced
2 teaspoons minced garlic
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh sage
French or Italian-style bread, cut into 1-inch cubes (6 cups)
1/2 teaspoon coarse salt
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 400 degrees.
  • Butter a 9-by-9-inch square baking dish or a 10-by-6 1/2-inch oval baking dish with 2 teaspoons butter. Cut a piece of foil large enough to cover the dish and line with parchment paper. Butter parchment paper with 1 teaspoon butter. Set prepared dish, foil, and parchment aside until ready to bake.
  • In a small bowl, whisk together chicken broth, egg, and egg yolk; set aside.
  • Melt 1 tablespoon butter over medium-high heat in a medium skillet. Add bacon and cook for 1 minute. Add onion and celery and cook until softened, about 4 minutes more. Increase heat to high and add mushrooms, stirring to combine. Cook, stirring occasionally, for 2 minutes; stir in garlic. Remove skillet from heat and add parsley and sage. Transfer mushroom mixture to a medium bowl and add breadcrumbs, stirring carefully to combine; season with salt and cayenne pepper. Add chicken broth and egg mixture to stuffing, stirring until well combined. Transfer stuffing to prepared baking dish.
  • Melt remaining 4 tablespoons butter in a small skillet over medium heat until bubbling and lightly browned, about 2 minutes. Drizzle brown butter over stuffing and cover with prepared foil. Set baking dish on a baking sheet and transfer to oven. Bake for 25 minutes, uncover, and continue baking 15 minutes more. Remove from oven and let stuffing cool for 5 minutes before serving.

Turkey:
1 14- to 16-pound fresh turkey
1 cup coarse salt
2 Granny Smith apples, quartered
1 teaspoon nutmeg
1 teaspoon allspice
1 orange, quartered
1 Basting Sauce (to use at start of roasting):
1 cup unsalted butter
1/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/2 teaspoon coarse black pepper
3 tablespoons fresh thyme or 1 tablespoon dry
1/2 teaspoon salt
2 Basting Sauce (to use at end of roasting):
1/4 pound unsalted butter
1/4 cup maple syrup
Sausage and Hazelnut Stuffing:
1 cup hazelnuts, roasted and skinned
1 pound fresh pork sausage
1/2 pound chicken breast, skinned, boned, and diced
1/2 cup unsalted butter
1 pound chopped onion
2 cups chopped celery
2 tablespoons sage
1/2 pound Virginia ham, diced
8 cups stale bread, cut in 1/2-inch cubes
1 cup chopped Italian parsley
3 large eggs, beaten
2 teaspoons coarse salt
2 teaspoons coarse black pepper
2 ounces Amaretto
1 cup turkey stock

Steps:

  • Prepare Turkey:
  • Rub salt all over turkey, inside and out. Cover turkey with cold water and let sit for one hour in the sink (this will get rid of blood and gamey taste).
  • Preheat oven to 350°F.
  • Mix spices with apples.
  • Put 1/2 of apple mixture inside turkey under white meat (front). Using the other half of apple mixture and quartered orange, stuff under the dark meat (back) inside turkey.
  • Prepare basting sauce #1 by heating butter and adding juices and spices.
  • Put turkey in roasting pan and add basting sauce.
  • Roast, covered with foil, for 2 hours.
  • Prepare Stuffing:
  • Put hazelnuts in food processor and chop to medium coarseness.
  • In a large skillet, brown pork sausage and drain. Add 3 teaspoons of butter to pan and fry chicken until done. Sauté onions, celery, and sage until translucent. Add ham and rest of vegetables in large bowl, adding the pork, chicken and bread, mixing well. Add eggs and Amaretto. Finally, add turkey stock to moisten.
  • Put in baking pan and bake 1 hour at 350 °F.
  • Finish Roasting Turkey:
  • Remove foil and roast until internal temperature is 175°F, basting every 15 minutes.
  • Prepare #2 basting sauce by heating butter and maple syrup.
  • Remove bird from oven when it reaches 175°F. Let rest - turkey will continue to cook, reaching 180°F in the next 15 minutes.
  • Baste with #2 sauce until all sauce is gone.
  • Remove fruit from inside.

OVERNIGHT WILD RICE, HAZELNUT & MUSHROOM STUFFING



Overnight Wild Rice, Hazelnut & Mushroom Stuffing image

6 cups water
1 1/2 teaspoon salt
1 cup wild rice
Stuffing
4 cups (1-inch-cubed) rustic sourdough bread
1/2 cup toasted, coarsely chopped hazelnuts
4 tablespoons salted butter
1 cup onion (1/4-inch-diced)
1 cup celery (1/4-inch-diced)
3 cups sliced chanterelle mushrooms, or substitute other fall wild mushrooms or domestic mushrooms
1/2 teaspoon salt (or more to taste)
1/4 teaspoon fresh-ground black pepper
1/2 cup dried cranberries
1 1/2 cup chicken broth or stock
2 teaspoons finely chopped fresh thyme
1 1/2 teaspoon finely chopped fresh rosemary
1 tablespoon chopped fresh sage
2 tablespoons chopped fresh parsley
1 egg, beaten

Steps:

  • To make rice: In a large pot, bring water and salt to a boil. Stir in wild rice and return to a boil. Reduce heat and simmer rice, stirring occasionally, for about 45 minutes to 1 hour or until very tender. Drain and cool. To make stuffing: Spray an 8-inch square baking pan with cooking spray and set aside. Place bread cubes and hazelnuts in large mixing bowl and set aside. In a large saute pan over medium-high heat, melt butter, then add the onion, celery and mushrooms; season with salt and pepper. Saute for about 7 to 8 minutes or until tender. Add cranberries and broth and bring to a simmer. Add mushroom mixture and herbs and cool. Combine cranberry-mushroom mixture with cooked rice, beaten egg, bread and nuts, and toss until bread is thoroughly coated. Add salt and pepper if needed. Place stuffing in baking pan, cover and refrigerate overnight to let flavors develop. When ready to bake, pull out of refrigerator 30 minutes ahead to come to room temperature. Preheat oven to 350 degrees F. Bake in preheated oven for 35 to 45 minutes or until cooked through. For a "crisper" stuffing, bake for a few minutes more.

8 cups 1/2-inch cubes of firm white bread such as a Pullman loaf (1 pound)
1 1/2 cups finely chopped shallots (about 8 medium; 10 ounces)
1 1/2 sticks unsalted butter, divided
1 1/2 pounds cremini mushrooms, sliced 1/4 inch thick
1 1/2 cups finely chopped celery (from 3 ribs)
2 teaspoons chopped thyme
2 teaspoons finely chopped sage
1/2 cup dry white wine
2 cups hazelnuts (1/2 pound), toasted , any loose skins rubbed off in a kitchen towel, and coarsely chopped
1/2 cup finely chopped flat-leaf parsley
4 cups turkey stock , heated to liquefy if gelled, or reduced-sodium chicken broth
3 large eggs, lightly beaten
Equipment: a 3-quart shallow ovenproof baking dish (2 to 3 inches deep)

Steps:

  • Preheat oven to 400°F with racks in upper and lower thirds. Generously butter baking dish.
  • Arrange bread in 1 layer in 2 large shallow baking pans and toast, switching position of pans halfway through baking, until golden and dry, about 15 minutes. Transfer to a large bowl. (Leave oven on.)
  • Meanwhile, cook shallots in 1 stick butter in a 12-inch heavy skillet over medium heat, stirring occasionally, until softened and golden, about 6 minutes. Add mushrooms, celery, thyme, sage, and 1/2 teaspoon salt and cook, stirring occasionally, until liquid given off by mushrooms has evaporated and mushrooms are browned, 20 to 30 minutes.
  • Add wine and deglaze skillet by boiling, stirring and scraping up any brown bits, until wine is reduced by about half, about 2 minutes. Transfer to bread in bowl. Add hazelnuts and parsley and toss.
  • Whisk together stock, eggs, 1 teaspoon salt, and 1/2 teaspoon pepper, then stir into bread mixture. Transfer to baking dish and dot top of stuffing with remaining 1/2 stick butter.
  • Bake, loosely covered with a buttered sheet of foil (buttered side down), in lower third of oven 30 minutes, then remove foil and bake until top is browned, about 15 minutes more.

6 tablespoons unsalted butter, plus more for the baking dish
10 cups cubed sourdough bread
1 cup hazelnuts
Kosher salt and freshly ground black pepper
2 celery stalks, chopped
2 garlic cloves, minced
1 large onion, chopped
2 teaspoons chopped fresh rosemary, plus a sprig for garnish
2/3 cup dried currants
2 cups chicken broth
1 large egg, beaten

Steps:

  • Preheat the oven to 325 degrees F. Butter a 2- to 3-quart glass or ceramic baking dish.
  • Arrange the sourdough cubes in a large rimmed baking pan in a single layer. Bake until slightly dried out, about 30 minutes. Transfer to a large bowl.
  • Increase the oven temperature to 400 degrees F.
  • Melt 1 tablespoon butter in a medium skillet over medium-high heat. Add the hazelnuts and a large pinch of salt and cook, stirring often, until nutty smelling and toasted, about 4 minutes. Spoon the nuts onto a clean dish towel and gently but firmly rub the hazelnuts to remove some of the brown skins (it's okay if some of the skins remain). Roughly chop the nuts.
  • Add the remaining 5 tablespoons butter to the skillet and melt over medium heat. Add the celery, garlic, onion, rosemary and 1/2 teaspoon salt and cook, stirring occasionally, until softened, about 10 minutes. Add the currants and cook, stirring, just until plump, about 1 minute. Remove from the heat and cool slightly.
  • Add the hazelnuts and vegetables to the bowl with the bread and mix to combine. Whisk the chicken broth together with the egg, 1/2 teaspoon salt and a few grinds of pepper in a bowl. Add it to the stuffing mixture and stir until well mixed.
  • Spoon the stuffing into the prepared baking dish and bake until hot and golden brown on top, 35 to 45 minutes. Garnish with the rosemary sprig and serve.

MUSHROOM AND HAZELNUT LOAF

This is another Jeremy Vincent recipe. This loaf is a perfect partner for roast turkey or chicken. The loaf can be prepared a day ahead and stored in the fridge. It is served as an alternative to stuffing, or cooked in a loaf tin, and served on the side. The loaf can also be used as a stuffing inside the bird, put into the cavity of a chicken or turkey, and cooked with the poultry. I have posted the recipe as printed from the Weekly Times.

4 shallots, finely chopped
3 garlic cloves, minced
1 cup onion, chopped

1/2 cup white wine
680 g mixed mushrooms, stems removed, cut into 1cm chunks (button, field, shiitake or a combination of wild mushrooms)
1 cup chicken stock (substitute vegetable stock, if preferred)
sea salt
fresh ground white pepper
8 cups bread, cubed (use a rustic country or bakers loaf, rather than supermarket sliced)
1/4 cup fresh parsley leaves, chopped
3 sage leaves, chopped
3/4 cup hazelnuts, halved and lightly roasted
3 extra-large eggs, beaten
2 cups cream
1 teaspoon hazelnut oil (optional)

Steps:

  • Preheat oven to 180°C.
  • Melt the butter in a large frying pan, add the shallots, garlic and onion and saute until translucent.
  • Add a teaspoon of thyme and the mushrooms.
  • Cook until the mushrooms are light brown.
  • Add the wine and cook until the liquid evaporates, then repeat with the stock.
  • Season with salt and pepper.
  • Place the mushrooms in a bowl.
  • Generously butter a 26cm loaf tin.
  • Put the bread, parsley, sage, hazelnuts, remaining thyme and mushroom mixture in a large bowl.
  • Stir in the eggs, cream and hazelnut oil (if using) until combined and season with a teaspoon of salt and half a teaspoon of pepper.
  • Spread the stuffing in the loaf tin, then cover with foil and bake for 45 minutes.
  • Remove the foil and bake another 30 minutes, until golden.
  • Serve warm or at room temperature.
