Philadelphia-Style Ice Cream Base image

Made without eggs, this ice cream is much less rich than those made with a custard base. The lack of eggs also allows the flavorings to shine through, making it a light in texture yet intense in taste. Using a combination of granulated sugar and liquid sugar (corn syrup, honey or agave syrup) helps keep the texture smooth and silky.

Number Of Ingredients 6

3 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar
1/2 cup/167 grams light corn syrup or substitute 1/3 cup agave syrup or honey
1/2 teaspoon fine sea salt
Your choice of flavoring (see note)

Steps:

  • In a saucepan, combine cream, milk, sugar, corn syrup and salt, and bring to a simmer. Continue to simmer until sugar dissolves, then transfer mixture to a container and refrigerate until very cold, at least 4 hours and preferably overnight.
  • Churn in an ice cream maker according to manufacturer's instructions. Serve immediately or transfer to an airtight container and freeze until hard.

200g honey nut cornflakes
2 x 400g jars chocolate hazelnut spread
2 x 180g tubs full-fat cream cheese
1 tbsp roasted and chopped hazelnuts

Steps:

  • Put the cornflakes and half a jar of chocolate hazelnut spread in a bowl and beat to combine - don't worry about breaking up the cornflakes. Press the mix into the base of a 23cm springform tin.
  • In a separate bowl, beat the cream cheese until smooth, then fold in the remaining chocolate hazelnut spread. Smooth onto the cornflake base, wrap tightly in cling film and freeze overnight.
  • Remove from the freezer 30 mins before serving, or until you can cut it easily with a sharp knife. Serve in slices with hazelnuts sprinkled over. Will keep in the freezer for up to 1 month.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup half-and-half cream (110° to 115°)
1/2 cup 2% milk (110° to 115°)
2 tablespoons sugar
2 tablespoons butter, softened
2 tablespoons Nutella
1 tablespoon hazelnut flavoring syrup
1 teaspoon salt
1 teaspoon instant espresso powder
3-3/4 to 4-1/4 cups bread flour
FILLING:
1 cup Nutella
1/4 cup butter, melted
1 tablespoon all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon hazelnut flavoring syrup
1/2 teaspoon instant espresso powder
GLAZE:
1/2 cup confectioners' sugar
2 teaspoons butter, softened
2 teaspoons buttermilk
2 teaspoons hazelnut flavoring syrup
Chopped hazelnuts, optional

Steps:

  • In a large bowl, dissolve yeast in warm water. Add cream, milk, sugar, butter, Nutella, hazelnut syrup, salt, espresso powder and 2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 45 minutes. , Punch dough down. Turn onto a lightly floured surface. Roll into a 20x16-in. rectangle. Combine filling ingredients until smooth. Spread over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Cut into 8 slices. Place in a greased or parchment-lined 13x9-in. baking pan. Cover and refrigerate overnight., Remove from refrigerator; cover and let rise in a warm place until almost doubled, about 45 minutes., Preheat oven to 350°. Bake until golden brown, 25-30 minutes. Meanwhile, combine confectioners' sugar, butter, buttermilk and hazelnut syrup until smooth. Drizzle over warm rolls. Sprinkle with hazelnuts if desired. Serve warm.

2 cups whole milk
1 cup heavy cream
1/2 cup sugar, plus 1/4 cup
4 egg yolks
1/2 teaspoon vanilla extract
1/2 cup chocolate-hazelnut spread (recommended: Nutella)
1/2 cup toasted hazelnuts, crushed, for garnish

Steps:

  • In a saucepan combine the milk, cream, and 1/2 cup sugar over medium heat. Cook until the sugar dissolves, about 5 minutes.
  • Meanwhile, in a medium bowl whip the egg yolks with the remaining sugar using an electric mixer until the eggs have become thick and pale yellow, about 4 minutes. Pour 1/2 cup of the warm milk and cream mixture into the egg mixture and stir. Add this mixture back into the saucepan. Cook over very low heat, stirring constantly, until the mixture becomes thick enough to coat the back of a wooden spoon, about 7 to 10 minutes.
  • Place a strainer over a medium bowl and pour the warm custard mixture through the strainer. Stir in the vanilla and hazelnut spread until it dissolves. Chill mixture completely before pouring into an ice cream maker and follow manufacturer's instructions to freeze. To serve, scoop gelato into serving bowls and top with hazelnuts.

HAZELNUT ICE CREAM

1/2 cup hazelnuts
2 cups half-and-half
2/3 cup sugar
6 egg yolks, beaten
1 cup heavy whipping cream
1 tablespoon Frangelico or 1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F.
  • Place hazelnuts in a baking pan and bake for about 10 minutes, until lightly toasted.
  • Place nuts on a cloth towel, wrap the nuts up, and rub them together until their papery skins come off.
  • Cool nuts.
  • In blender or food processor, grind nuts until are finely ground and start to release their oil but still have texture.
  • In a double boiler combine half-and-half and the nuts.
  • Cook over simmering water for 15 minutes.
  • Whisk sugar into the egg yolks.
  • Whisk some of the hot half-and-half mixture with the egg yolks return the egg yolk mixture to the pan and cook, stirring constantly, until the custard coats the spoon.
  • When done, place the pan in a pan of very cold water and stir until cool.
  • Stir the cream and Frangelico or extract into the mixture.
  • Cover and refrigerate overnight, or til thoroughly chilled.
  • Freeze in an ice cream maker following the manufactuer's directions.
  • Enjoy!

100g caster sugar
1 tsp ground cinnamon , freshly ground if possible
450ml whipping or double cream

Steps:

  • Put the milk in a pan with the cinnamon stick and bring to the boil. In a bowl, whisk together the yolks, sugar and ground cinnamon. Discard the cinnamon stick, then strain the hot milk over the yolks, whisking continuously.
  • Pour the custard mix back into a pan and cook on a low-ish heat for 8-10 mins, stirring constantly until thickened. Whisk the custard into the cream, then cool, chill and freeze in an ice-cream maker.

2 cups (480 grams) milk
2 cups (480 grams) heavy cream
1 cinnamon stick, 2 inches long
8 egg yolks
3/4 cup (255 grams) honey
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt

Steps:

  • In a medium saucepan, combine the milk and cream. Break up the cinnamon stick into several pieces and toss them into the pan. Scald the milk mixture over medium-high heat (bubbles start to form around the edge of the pan, but the liquid is not boiling). Remove from the heat and let the cinnamon steep in the milk mixture for about 1 hour.
  • In a medium bowl, whisk the egg yolks until blended, and then slowly whisk in the honey, sugar, and ground cinnamon until combined. Return the milk mixture to medium-high heat and scald again. Slowly add the hot milk mixture to the egg-honey mixture, a little at a time, whisking constantly. When all of the hot milk mixture has been incorporated, return the contents of the bowl to the saucepan, and return the saucepan to medium heat. Cook, stirring continuously with a wooden spoon, for 6 to 8 minutes, or until the mixture thickens and coats the back of the spoon. The mixture will seem watery at first, then it will start to steam, and then it will start to develop a little body and get thicker. Remove from the heat and immediately strain through a fine-mesh sieve into an airtight container. Whisk in the salt. Cover and refrigerate for at least 2 hours, or until cold, or up to overnight.
  • Churn in an ice cream maker according to the manufacturer's directions.
  • When the ice cream has finished churning, freeze it for at least 2 hours to allow it to ripen. During the ripening process, the ice cream becomes harder and smoother and the flavors more fully develop. The ice cream can be stored in an airtight container in the freezer for up to 1 week.
