This easy to make batter bread brings the sweet and tender flavor of Hawaiian bread home from vacation. This is a recipe for homemade Hawaiian bread. It's sweet, spicy and tender.

2 (.25 ounce) envelopes active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
3 eggs
1 cup pineapple juice
½ cup water
¾ cup white sugar
½ teaspoon ground ginger
1 teaspoon vanilla extract
½ cup butter, melted
6 cups all-purpose flour

Steps:

  • In a small bowl, dissolve yeast in 1/2 cup warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, beat together the yeast mixture, eggs, pineapple juice, 1/2 cup water, sugar, ginger, vanilla, and melted butter. Gradually stir in flour until a stiff batter is formed. Cover with a damp cloth and let rise in a warm place for 1 hour.
  • Deflate the dough and turn it out onto a well floured surface. Divide the dough into three equal pieces and form into round loaves. Place the loaves into three lightly greased round cake pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven for 25 to 30 minutes, or until bottom of a loaf sounds hollow when tapped.

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Light setting; press Start.

1 (8 ounce) package cream cheese
milk (optional) or mayonnaise (optional)

Steps:

  • In saucepan combine pineapple and sugar. Bring to boil. Cook until thick, stirring constantly.
  • Cool. Stir in nuts.
  • Soften and mash cheese with enough milk or mayonnaise to make a good spreading consistency.
  • Combine with pineapple mixture.
  • Spread on thin bread, top as sandwich.
  • Trim and cut into squares.

I love this bread. It's so moist and versatile. I make it for breakfast, brunch, tea parties, and even desert. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other "Hawaiian" treats. I also use valtrompia bread tubes in different shapes and then slice. The slices look so pretty on a plate. If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. I learned this recipe when I used to be a consultant for Pampered Chef.

1/2 cup butter
1 cup sugar
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup mashed ripe banana
1/2 cup crushed pineapple in juice
1/2 cup shredded coconut

Steps:

  • Preheat oven to 350 degrees. Prepare bread pans, muffin pan, or tubes by spraying with Pam or rubbing with butter and dusting very lightly with flour.
  • Cream butter and sugar together. Add all other ingredients in order given. Mix until well blended.
  • Place mixture in prepared pans or tubes to about 2/3 full. If using tubes, be sure to put wax paper at each end of bread tube before putting caps on. If using tubes, place vertically in the oven. Bake at 350 degrees for up to 60 minutes or until done.
  • Let cool for 15 minutes and remove from pan or tube. Serve warm or cooled.

1/2 cup pineapple juice
1/4 cup packed brown sugar
2 tablespoons instant yeast
1/8 cup dry milk powder
1/2 tablespoon salt
3/4 tablespoon cinnamon
1 egg
1 ounce butter, melted
2 1/2 cups flour plus 3/4 cup as needed
1/2 cup grated carrots
1/2 cup shredded coconut
1/2 cup macadamia nuts
1/2 cup canned pineapple tidbits
Butter and preserves, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 4-by-8-inch loaf pan.
  • In a small saucepan, combine the pineapple juice and 1/2 cup water over medium heat until the mixture reaches 105 degrees F. Immediately transfer the liquid to the mixing bowl of a heavy-duty mixer with a dough hook attachment. Add the brown sugar; sprinkle the yeast on top and let stand for 5 minutes.
  • On low speed, mix in the dry milk powder, salt and cinnamon. Continue to mix, adding the egg and butter. Slowly incorporate the 2 1/2 cups flour. Raise the speed to medium. Add the carrots, coconut, macadamia nuts and pineapple tidbits.
  • Continue to knead in the mixer on medium speed until all ingredients are completely incorporated, about 5 minutes. Add the remaining flour as needed until the dough is slightly sticky, but not sticking to the bowl.
  • Form the dough into a ball. Cover with plastic wrap or a clean kitchen towel and set aside in a warm place to rise until doubled in size, about 5 minutes.
  • Roll the ball out slightly, then flip over and use a rolling pin to flatten the dough out completely in order to remove the air from the dough's first rising.
  • Roll the dough into a loaf shape, pulling back as you roll to tighten the loaf. Seal the ends and the seams in the dough thoroughly with your fingers.
  • Firmly press the dough into the prepared pan. Let the dough rise in the pan, in a warm place, until the top of the dough reaches 1-inch above the pan, about 20 minutes, depending on the temperature of the dough and the room. Gently place the pan in the oven and bake until the bread is firm and the crust is golden brown, about 45 minutes.
  • Gently remove the loaf from the pan and let cool on a rack. Serve slices with butter and preserves, or use in place of plain bread for a tropical take on sandwiches or French toast.

HAWAIIAN ICED TEA

I first tasted this tea in a popular Italian restaurant in my college hometown of Kailua. I have been craving it ever since, and have experimented with a few proportions. Add more tea leaves for a stronger tea, but do not steep longer or the tea will end up tasting bitter. (If it does, add a pinch of baking soda.) Always make something to your liking! This is also great to serve at showers.

4 orange pekoe tea bags
1 quart ice cold water
1 (16 ounce) can pineapple juice
½ cup simple syrup
1 fresh pineapple - peeled, cored, and cut into spears

  • Pour the barely boiling hot water into a large pitcher, and add the tea bags. Steep the tea, 2 to 4 minutes. Remove the tea bags and pour in the ice water. Pour in the pineapple juice. Refrigerate until thoroughly chilled, about 1 1/2 hours.
  • Pour the tea over ice, garnish with pineapple spears, and serve.

4 -4 1/2 cups all-purpose flour
1/3 cup sugar
1 teaspoon salt
1/2 ounce active dry yeast
1/2 cup warm water
1/2 cup warm milk
1/4 cup butter, softened
2 tablespoons honey
3 large eggs, divided

Steps:

  • Mix 1 1/2 cups flour, sugar, salt and yeast in a large bowl.
  • Add water, milk, butter, honey and 2 eggs. Mix very well, adding more flour if necessary, until a soft dough forms.
  • Knead dough on a lightly floured surface until it's smooth and stretchy, about 10 minutes.
  • Place dough in a greased bowl (I use the one I mixed everything in). Cover and let it rise in a warm place until it's doubled in size, about 1 hour.
  • Grease baking sheet. Punch down dough. Shape dough int oa ball. Place on baking sheet. Cover; let rise until doubled in size, 30-40 minutes.
  • Preheat oven to 350 degrees. Beat remaining egg in a small bowl until smooth.
  • Uncover the loaf and brush it with the egg. Bake the bread until golden, about 30 minutes.
  • Place on a wire reack to cool.

A dear friend brought back this recipe from her honeymoon in Hawaii. It is a delicious tea that is a thirst quencher.

2 quarts cold water
15 orange pekoe tea bags
fresh mint sprig
1/3 cup sugar
3 lemons, juice of
1/3 cup pineapple juice
pineapple, spears (to garnish) (optional)

Steps:

  • In a sauce pan bring 1 quart of cold water to a full rolling boil. Remove from heat; pour over tea. Stir and let stand for 5 minutes.
  • Stir and strain liquid into a pitcher containing 4 mint springs, sugar and 1 quart cold water. Stir to dissolve sugar. Cool mixture.
  • Remove mint before chilling for several hours or overnight. Stir in Pineapple juice.
  • Serve over ice in tall glasses. Garnish each glass with a pineapple wedge.

I love chai tea and thought I would try incorporating it into a bread recipe. This is a bread machine recipe. I ran it on the Dough cycle and then braided and baked the bread in the oven.

1 cup 2% milk
3 chai tea bags (such as Oregon Chai®), divided
3 cups bread flour
1 egg, separated
2 tablespoons butter, softened
⅓ cup white sugar
2 ¼ teaspoons active dry yeast
½ teaspoon salt
1 tablespoon water
1 tablespoon white decorator sugar, or to taste

Steps:

  • Heat milk in the microwave for 1 minute. Steep 1 tea bag in the warm milk for 7 to 10 minutes. Whisk contents of the remaining tea bags into flour.
  • Pour milk into a bread machine, discarding tea bag. Add egg yolk, butter, flour, sugar, yeast, and salt, in that order. Run Dough cycle.
  • Remove dough from the machine after the cycle is done, about 90 minutes. Place on a floured surface and punch down gently. Divide dough into 3 equal parts and braid together. Tuck ends under.
  • Place the braided loaf on a greased baking pan and cover loosely with a towel. Let rise in a warm place until doubled, about 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Whisk egg white with water to make egg wash. Brush egg wash over the loaf. Sprinkle decorator sugar on top.
  • Bake in the preheated oven until golden brown, about 20 minutes.
