6 lb pork butt (or pork shoulder)
1 1/2 tbsp Hawaiian salt (sea salt works too)
1 cabbage head (optional)

Steps:

  • Rub the salt all over the pork butt.
  • Add it to the crock pot and pour in the liquid smoke flavoring on top of it.
  • Select low heat for 8 hours. Half way through flip the pork. Cut up a head of a cabbage and set aside.
  • 30 minutes before the crock pot finishes cooking, add in the cabbage.
  • Shred the meat with two forks. Take off all the meat around the bound and discard it. Serve and enjoy!

1 4-6 pound pork shoulder or Boston butt roast*
1 Tablespoon liquid smoke, Hickory or Mesquite flavor
2-3 teaspoons red Hawaiian Sea salt ( 2-3 Tablespoons for a larger roast- over 6 pounds)***see notes
Banana leaves - optional (I personally don't use them in the slow cooker, but I do when we cook it in our smoker - see notes for smoking instructions)

Steps:

  • Rinse and pat the pork shoulder dry with paper towel, do not trim off excess fat and place in the slow cooker.
  • Pierce all over with a fork, pour the liquid smoke evenly over the roast and sprinkle liberally with the sea salt.
  • Place the lid of the slow cooker on and set the time for eight to twelve hours on LOW.
  • Check at about eight hours for doneness. If not done let go the full 12 hours, checking every hour.
  • If you have used banana leaves you can remove them before shredding the pork.
  • Remove around 2 cups of liquid (500ml) and set aside. This should be most of the cooking liquid removed. Shred the pork with forks and then add some of the liquid back in to keep the pork from drying out. You might not add all the liquid back in, save it for storing the pork if there are leftovers.
  • The pork should be kept warm-hot in the liquid before serving. You can place the banana leaves on a platter then serve the pork on top of them or use fresh banana leaves for serving. Do not eat the banana leaves.
  • The pork saves well kept in an airtight container in the refrigerator or freezer, keep some of the cooking liquid with it. Thaw in refrigerator if frozen. It can be reheated on low in the slow cooker.

5 lbs pork butt (or shoulder)
1 tablespoon liquid smoke (or soy sauce)
2 garlic cloves, crushed
3 tablespoons hawaiian salt (or sea salt)

Steps:

  • Cut slits in pork and rub with salt, garlic & liquid smoke or soy sauce. Wrap in plastic and let in rest overnight in the fridge.
  • 10-12 hours before serving, place in crockpot. Add an inch of water. Turn crockpot on low and leave it to cook for 10-12 hours, flipping pork over halfway through.
  • Remove from the crockpot and shred with two forks.
  • Eat as is or on a sandwich or even stir fried quickly with some shredded cabbage!

4 tablespoons plus a few drops liquid smoke, divided
8 to 12 large ti leaves, ribs removed
2 cups boiling water

Steps:

  • Preheat oven to 350 degrees F.
  • After scoring pork on all sides with 1/4-inch deep slits about 1-inch apart, rub with 3 tablespoons salt, then liquid smoke. Wrap the pork completely in ti leaves, tie with string, and wrap in foil. Place meat in a shallow roasting pan with 2 cups of water and roast for 4 hours. Dissolve 1 tablespoon Hawaiian salt in 2 cups boiling water and add a few drops of liquid smoke. Shred the cooked pork and let stand in this solution for a few minutes before serving.

2 teaspoons kosher salt
1 1/2 teaspoons garlic powder
1 teaspoon freshly ground black pepper
5 pounds boneless pork butt or shoulder
One 8-ounce can crushed pineapple
1/2 cup hoisin sauce
2 tablespoons honey
2 tablespoons soy sauce
2 tablespoons rice vinegar
Hawaiian buns, for serving
4 cups thinly shredded savoy cabbage
1/4 cup rice wine vinegar
2 teaspoons sugar
1 teaspoon celery seeds
Kosher salt and freshly ground black pepper

Steps:

  • For the Hawaiian pulled pork: In a small bowl, mix the onion powder, salt, garlic powder and pepper. Rub the mixture on all sides of the pork. Put the pork in a slow cooker and cook on low for 8 hours.
  • Shred the pork with 2 forks, removing any large pieces of fat. Pour the broth into a fat separator or skim off the fat. In a bowl, whisk 2 cups of the skimmed broth with the crushed pineapple, hoisin, honey, soy sauce and vinegar. Put the pork back in the slow cooker and stir in the sauce. Cook on low for 1 hour.
  • For the slaw: Meanwhile, combine the cabbage, rice vinegar, sugar, celery seeds and some salt and pepper in a bowl and toss to coat. Let stand, tossing frequently, until the cabbage wilts, about 20 minutes.
  • Serve the pulled pork on Hawaiian buns topped with slaw.

Adapted from a recipe by Kikuchan at allrecipes.com. I'm told this is the commonest way to make this, even in Hawaii. Do try to get the Hawaiian salt; it adds a subtle flavor that will be missing with plain sea salt. You can often find it at high-end specialty stores like Trader Joe's, Whole Foods or Williams-Sonoma. Be sure to get a roast which has not been "injected with a salt solution" - it will make your dish terribly salty. If you use a smaller piece of meat, be sure to scale down the salt, the liquid smoke, and the cooking time!

6 lbs boston butt (also called pork shoulder)
1 tablespoon hawaiian sea salt
1 tablespoon liquid smoke
1 bay leaf
2 garlic cloves, gently smashed
1/4 cup water
2 tablespoons cornstarch, dissolved in 3 tbsp cold water
1 medium savoy cabbage or 1 medium napa cabbage, shredded

Steps:

  • Poke roast all over with carving fork. Rub thoroughly with salt and liquid smoke (wear disposable gloves or your hands will smell of smoke for days!). Place pork, bay leaf, garlic and water in slow cooker.
  • Cover and cook on Low 16-20 hours, turning once. (You can also cook 3 hours on high then 7 hours on low if you need it to be done the same day.).
  • About 3 hours before meat is done, skim off as much fat from juices as possible then remove bay leaf and garlic. Add cabbage. (If it doesn't all fit, just use as much as will fit - it will cook down.) Re-cover and continue cooking on low.
  • Remove meat from slow cooker and shred, using two forks. Drain juices from pot into a large glass measuring cup. Put 1 1/2 cups of juices into a saucepan; return the rest of the juices to the slow cooker with the shredded meat and cabbage. Reduce slow cooker to Keep Warm.
  • Bring juices in saucepan up to a boil. Drizzle in cornstarch slurry. Pour gravy into a sauceboat and serve alongside the meat. Serve with sticky rice, or with Hawaiian or Portuguese sweet rolls. You can offer barbecue sauce on the side, but you won't need it!

2 -3 pork tenderloin, cut in pieces
2 tablespoons vegetable oil
1 onion, chopped
2 celery ribs, chopped
1 cup ketchup
1/4 cup water
2 tablespoons lemon juice
2 tablespoons vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 (8 ounce) pineapple tidbits (drained well)
1/2 teaspoon salt
1/2 green pepper, chopped (optional)

Steps:

  • In a skillet lightly brown pork pieces slowly in vegetable oil. Remove from skillet and place in bottom of crock pot.
  • In same skillet cook onion and celery just until tender, but not browned.
  • Add remaining ingredients and simmer about 1 minute. Pour sauce over pork pieces in crock pot.
  • Turn crock pot on high for 1st hour and then to low for 3-4 hours.
  • Note: If using optional green pepper, brown with onion and celery.
  • Note: If you want sauce thicker, add 1 tablespoon of cornstarch during last 30 minutes.
  • Great served over buttered rice!

4 Tbsp hawiian or coarse sea salt
4 Tbsp liquid smoke flavoring
ti leaves, banana leaves, or spinach leaves to cover pork
2 c apple cider or water

Steps:

  • 1. Cut small slits, about 1 to 1-1/2 inches in length, all along the surface of the pork. Rub the pork with Hawaiian or coarse sea salt then with liquid smoke.
  • 2. Lay out a large piece of heavy-duty aluminum foil, and place leaves on top. Place pork on leaves and wrap them around the pork. Cover with remaining leaves until pork is completely covered. Wrap the foil tightly around the pork to make a seal.
  • 3. Place roast in a slow cooker with apple cider or water. Cover and cook on low for 8 to 10 hours.
  • 4. Remove meat from slow cooker. Allow it to rest for 15 minutes then shred adding drippings if needed to keep the meat moist.
  • 5. You can add vegetables, water, and some of the shredded pork to the stock for a nice soup.
