HAUPIA (HAWAIIAN COCONUT PUDDING)
This is a great traditional coconut recipe. We serve this at our family luau every year.

Steps:
- Stir coconut into boiling water in a large bowl. Let sit for 15 minutes, then strain through cheesecloth, squeezing out all of the liquid to yield 3 cups.
- Stir together the cornstarch, sugar, nutmeg, and salt. Bring the coconut milk to a simmer in a saucepan over medium-high heat. Whisk in the sugar mixture, and cook until thickened, stirring constantly. When very thick, remove from heat ,and stir in vanilla. Pour into an 8x8-inch pan, and cover with plastic wrap. Refrigerate until set.

Steps:
- Combine sugar and food coloring, add as many drops as you would like to achieve your desired color darkness, into a wide bowl and set aside.
- Combine shredded coconut and corn syrup in a bowl, mash, squeeze and mix until coconut is fully saturated
- Once combined, grab about a 1/2 inch section, squeeze again in palm and then roll lightly into a ball.
- On a wax or parchment paper lined cookie sheet, place the coconut balls on the sheet. Continue rolling balls until bowl is emptied.
- Add the remaining 1/4 cup of light corn syrup into a shallow bowl.
- Take an already shaped ball, dip lightly in corn syrup and roll lightly in your palm again, then add to the colored sugar.
- Roll ball again in palm, add to sugar once more, and toss lightly to coat again.
- Place back onto cookie sheet and place in fridge for about an hour.
- Once hardened, transfer to an airtight container and enjoy!

HAWAIIAN FUDGE--NON CHOCOLATE
Unique candy with fudge like texture with delightful tropical flavor but no chocolate. My husband's co-workers expect him to bring this to the office every year at Christmastime. We had this every Christmas. Mom got it from Southern Living Cookbook that is currently falling apart and held together by various batters and rubber bands.

Steps:
- Combine sugar, milk or cream, and well drained pineapple. Bring to a boil over medium heat and cook until mixture reaches the soft ball stage (232-240 on the candy thermometer).
- Remove from heat and stir in pecans and coconut if using. You can also add a few drops of green food coloring for aesthetics, but be careful or it will glow :0 and look like toxic waste ;)
- Let cool slightly and then beat until creamy.
- Pour into a greased loaf pan, cook and cut into squares.
- The cook time is is approximate. Experienced candy makers know it depends on the weather and how fast you can get the milk to heat up to soft ball stage.

HAWAIIAN HOT CHOCOLATE
I created this drink from the memories of a trip to Hawaii, where I met my (now) husband. Surprisingly, it does get chilly in Hawaii, especially at night and in cold, rainy regions. This is a different take on the usual cold and frozen Hawaiian libations.

- Whisk half-and-half, milk, sugar, and cocoa powder in a saucepan over medium-high heat until cocoa and sugar dissolve. Remove from heat when mixture begins to steam, 5 to 10 minutes.
- Whisk vanilla extract, coconut extract, and salt into cocoa mixture. Pour into glasses and top each with whipped cream and toasted coconut.
