1/2 cup all-purpose flour
1/3 cup cornmeal
1 teaspoon sugar
1/4 teaspoon paprika
1 large egg, lightly beaten
1/4 cup milk
Kosher salt and freshly ground pepper
Vegetable oil, for frying
18 cocktail franks
5 to 6 cups frozen curly french fries, thawed slightly (about 1 pound)
1 tablespoon Sriracha (hot Asian chili sauce) Juice of 1/2 lime
1/4 cup mayonnaise

Steps:

  • Make the franks: Whisk the flour, cornmeal, sugar and paprika in a large bowl. Add the egg and milk and whisk to make a thick batter, adding more milk if the mixture is too dry. Add 1/4 teaspoon salt, and pepper to taste.
  • Heat about 2 inches vegetable oil in a large pot over medium-high heat until a deep-fry thermometer registers 375 degrees F. Dip the franks in the batter, then carefully wrap a long curly fry around each. (If desired, thread the franks on wooden skewers before wrapping with fries.)
  • Working in batches, fry the franks in the hot oil, turning, until golden on all sides, 3 to 4 minutes. Remove with a slotted spoon and drain on paper towels; sprinkle with salt.
  • Meanwhile, make the dip: Whisk the Sriracha, lime juice and mayonnaise in a bowl. Serve with the franks.

FRANK'S STEAK

1/2 bottle rich, full-bodied red wine (recommended: Amarone)
2 tablespoons sugar
6 whole cloves
1 teaspoon fresh orange zest
1/2 teaspoon grated nutmeg
1/2 teaspoon ground cinnamon
2 (8 to 12-ounce) rib-eye steaks, about 1/2-inch thick
Salt and freshly ground black pepper

Steps:

  • Combine wine and sugar in a large pot and bring to boil; lower heat and simmer for 10 minutes. Stir in cloves, orange zest, nutmeg, and cinnamon and remove pan from heat to cool. Put steaks in a large baking dish and pour marinade over them. Marinate steaks in refrigerator for at least several hours and up to 3 days.
  • Take steaks out of the marinade, season with salt and pepper, and cook them in a very hot skillet, about 2 minutes each side for medium rare.

1/2 cup water
vegetable oil

Steps:

  • Pat franks dry.
  • Mix baking mix and water until soft dough forms; beat vigorously 20 strokes.
  • Divide dough into 10 equal parts.
  • Pat 1 part dough around each frank with finger floured with baking mix, completely covering frank.
  • (At this point, wrapped franks can be covered and refrigerated up to 24 hours.) Brush cooking grill with oil.
  • Grill franks about 4" from hot coals, turning frequently, until brown, about 15 minutes.
  • ALTERNATIVE METHOD OF COOKING: Bake wrapped franks.
  • Heat oven to 450 degrees.
  • Bake uncovered on greased cookie sheet until golden brown, 10 to 12 minutes.
