SWEET ONION CASSEROLE

- Preheat oven to 350°. In a large skillet, saute onions in butter until tender. Place half of onions in a greased 2-qt. baking dish; sprinkle with half of the cracker crumbs and cheese. Repeat layers. , Bake, uncovered, until golden brown and bubbly, 25-30 minutes.

- In a large skillet, melt butter over medium-high heat. Saute onions and mushrooms until tender. Place in a 11x7-in. baking dish or 2-qt. baking dish. Sprinkle shredded cheese on top. Combine the soup, milk and soy sauce; pour over cheese. Top with bread and cheese slices. Cover and refrigerate 4 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Loosely cover with foil and bake at 375° for 30 minutes. Uncover and bake 15-20 minutes longer or until heated through. Let stand for 5 minutes before serving.

This is truly a simple and wonderful sidedish made with sweet onions in a cream sauce. It can go with just about any meal! (Hint: if you will refrigerate your onions before cutting them, you won't cry!)

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Melt the margarine in a large skillet over medium heat. Add onions; cook and stir until tender. Turn off the heat, and stir in the sour cream and Parmesan cheese. Transfer to the prepared baking dish, and crumble the crackers over the top.
- Bake uncovered for 30 minutes in the preheated oven, until the top is browned and the sauce is bubbly.

Don't remember where I got this recipe but I've had it for about 25 years and love it!!! The salt from the potato chips is all you need for seasoning. Add the cayenne for a bit of zip. It's always a big hit with grilled sirloin steaks.

Steps:
- Set oven to 350 degrees.
- Grease a 1-1/2-quart baking dish.
- in a skillet, saute the fresh asparagus and onions in 1 Tbsp butter until crisp-tender (about 8 minutes, less time for frozen).
- Transfer to a prepared baking dish.
- In a saucepan melt 2 Tbsp butter.
- Whisk in the flour until smooth; gradually add in the half and half cream OR milk, bring to a boil; cook and stir for 2 minutes, or until thickened.
- Reduce the heat.
- Add in the cream cheese, 1 Tbsp grated Parmesan cheese (if using) salt and pepper; stir until the cheese is melted.
- Pour over the veggies in the baking dish.
- Sprinkle with cheddar cheese.
- Melt 2 Tbsp butter; toss with the Parmesan cheese (if using) and the bread crumbs.
- Sprinkle the bread crumb mixture evenly over the top of the casserole.
- Bake, uncovered for 35-40 minutes, or until heated through.

FRENCH ONION CASSEROLE
Creamy and just delicious, if you love onions then this is one you have to try. Plan ahead this needs to be refrigerated for a minumum of 4 hours.

Steps:
- Sice the onions crosswise, cut each slice in half.
- Melt the butter in a frypan, cook the onions and the mushrooms until tender.
- Spoon the mixture into a lightly greased baking dish.
- Sprinkle with 1 cup Swiss cheese.
- In a bowl, combine the soup, evaporated milk Parmesan cheese (if using) and soy sauce; pour the mixture over the cheese.
- Top with the bread cubes, and the remaining 1 cup Swiss cheese.
- Sprinkle with parsley (if using).
- Cover, and refrigerate for 4-8 hours.
- Let stand at room temperature for 30 minutes before baking.
- Bake, covered in a 350 degree oven for 30 minutes.
- Uncover, bake for an additional 15-20 minutes.

Steps:
- Cook onions in 2 Tablespoons butter in skillet until onions are soft but not brown, 6-8 minutes.
- Crush crackers (4 oz. is equal to one 1 sleeve).
- Add 1 tablespoon butter, 3 tablespoons milk and ½ cup cracker crumbs on bottom.
- Add onions and then cheese and crumbs on top. Bake 20 to 30 minutes at 350°F, uncovered.
- Note: I put a few drops of milk on top of crackers before I put them in oven.
