2 pounds boneless skinless chicken thighs
1/2 cup canned pineapple juice*
1/3 cup olive oil
1/3 packed light brown sugar
1/4 cup reduced sodium soy sauce
1/4 cup ketchup
1/4 cup Asian sweet chili sauce (like Mae Ploy)
1 tablespoon Asian chili sauce
1 tsp EACH ground ginger, onion powder, garlic powder
1/2 tsp EACH paprika, salt, pepper

Steps:

  • Whisk the marinade ingredients together in a large freezer bag or bowl. Remove 1/4 cup to baste chicken while grilling.
  • Add chicken, remove excess air, seal and turn to coat. Marinate 4-24 hours (marinate up to 12 hours if using chicken breasts).
  • Heat grill to medium-high heat (375-400 degrees F), clean and grease. Add chicken and cook 6-8 minutes per side, or until no longer pink and the chicken registers 165-175 degrees F. Baste the chicken with the reserved 1/4 cup marinade the last 3 minutes.
  • Hawaiian chicken is especially delicious with fresh grilled pineapple and cilantro lime rice.

2 pounds boneless skinless chicken breasts (diced)
Salt and Pepper to taste
2 cups diced bell peppers (red, orange, yellow mix)
1 fresh pineapple (diced)
3 cups Cooked white rice
1 Tbs olive oil
3 Tbs Soy Sauce
3 Tbs dark brown sugar
2 Tbs rice vinegar
½ tsp ground ginger
1 Tbsp minced garlic
1/2 cup barbecue sauce
½ cup pineapple juice

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper then add to the skillet.
  • Sear outside until a nice golden crust forms.
  • Remove chicken from pan, add in peppers and saute for 3-5 minutes until tender, remove from pan
  • Add sauce ingredients to pan, and bring to a simmer, add chicken back in, and cook on medium-low heat, letting sauce reduce while chicken cooks through.
  • Add peppers and pineapple to pan, and cook a few minutes more, until sauce is thick, sticky, and glossy, and peppers are tender
  • Serve over cooked white rice.

6 skinless, boneless chicken breast halves
2 cups teriyaki sauce, divided
6 pineapple rings
½ cup butter, melted
¾ cup packed brown sugar
¾ cup soy sauce
¾ cup unsweetened pineapple juice
6 tablespoons Worcestershire sauce

Steps:

  • Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight.
  • Preheat a grill for high heat.
  • Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter.
  • In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!

1 cup chicken broth
1 (8 ounce) can pineapple chunks, undrained
2 tablespoons lemon juice

½ teaspoon dry mustard

1 small red bell pepper, cut into 1/4-inch rings

1 onion, chopped
1 stalk celery, chopped
1/4 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 (20 ounce) can pineapple, drained and reserve liquid
1 cup pineapple juice
3 tablespoons cornstarch
3 tablespoons soy sauce
1/4 cup vinegar
1/4 cup brown sugar, packed
1 green pepper, sliced
1 cup cashew nuts
2 cups raw rice, cooked as directed on package

Steps:

  • Combine chicken with onion, celery, thyme, salt and pepper, cover with water and simmer until tender.
  • Remove from heat letting chicken cool in the liquid.
  • Skin and bone chicken.
  • Cut into bite size pieces and put in a 2 quart greased baking dish.
  • In a saucepan combine liquid from the canned pineapple, pineapple juice, cornstarch, soy sauce, vinegar and sugar and cook until clear.

1/4 cup butter, melted
1 can (20 ounces) pineapple chunks
1/4 cup packed brown sugar
2 tablespoons cornstarch
1 teaspoon salt
1/3 cup ketchup
1/4 cup cider vinegar
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
Pinch ground ginger

Steps:

  • Place chicken in a greased 13-in. x 9-in. baking dish; drizzle with butter. Drain pineapple, reserving juice; set pineapple aside. In a saucepan, combine brown sugar, cornstarch and salt; stir in reserved pineapple juice until smooth. Add the ketchup, vinegar, chili powder, Worcestershire sauce, soy sauce and ginger. 6 large chicken breasts, cut in half
1/2 cup butter
1 (15 ounce) can pineapple chunks
1/2 cup pressed brown sugar
4 tablespoons cornstarch
1/4 cup very hot water
2 teaspoons salt
1/2 cup vinegar
1 teaspoon Worcestershire sauce
2 teaspoons chili powder
2/3 cup ketchup
2 teaspoons soy sauce

Steps:

  • Set oven to 350°F.
  • Place chicken in baking dish.
  • Melt butter in large skillet on low heat.
  • Mix corn starch and hot water in glass or small bowl until well blended; set aside.
  • Add excess pineapple juice from can of pineapple chunks.
  • Sprinkle pineapple chunks over chicken.
  • Mix brown sugar, salt, vinegar, worcestershire sauce, and chili powder in skillet until well blended.
  • Turn skillet to medium heat and let simmer for 2 minutes.
  • Stir in ketchup and soy sauce.
  • Stir in corn starch mixture and blend well, sauce will become very thick.
  • Let simmer 2-3 more minutes.
  • Pour sauce over chicken and pineapple chunks.
  • Bake chicken for 50-60 minutes, or until chicken is cooked completely through.
  • Remove with caution, pan may be heavy and it will be hot.
