HARD BOILED EGGS

Steps:
- Place your eggs in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat, then cover, remove from the heat and set aside 8 to 10 minutes. Drain, cool in ice water and peel.
- Bring a pot of water to a boil over high heat. Reduce the heat to low, then add your eggs and cook 4 to 5 minutes. Drain, cool in ice water and peel.
- Bring a pot of water to a boil over high heat. Reduce the heat to low, then add your eggs and cook 7 to 8 minutes. Drain, cool in ice water and peel.
GARLIC AND HERB DIP WITH HARD-BOILED EGGS
Steps:
- Combine the goat cheese and sour cream, and whisk until smooth. Finely mince the hard-boiled eggs or push through a strainer or French tamis until finely chopped, and add to the cheese mixture. Add the chives, cilantro, dill, lemon zest and juice. Stir to incorporate. Season with salt and pepper, and serve with spring vegetable crudite.

- In a food processor or blender purée the eggs with the Roquefort, the lemon juice, the yogurt, and salt and pepper to taste, transfer the mixture to a bowl, and stir in the scallions. Serve the dip with the potato chips or crudités.

- Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can be peeled and served immediately.
