DIABETIC DARK CHOCOLATE CHIP OAT BAR
I know the word "diabetic" in a recipe indicates "tasteless" at times. Well, not so with this recipe. I enjoy fiber bars but the sugars are awful. This one works very well in my no sugar, no white flour lifestyle. And the calories and sodium content are really good as well. Hope you like them and feel free to add cinnamon...

Steps:
- 1. Whisk egg, yogurt and brown sugar with cinnamon. Blend in oats, flaxseed. Add chocolate chips and optional ingredients. Spread mixture in a sprayed 8 inch square pan. Bake in preheated 350 degree oven for 30 minutes. Cut while warm into bars. Let cool before serving. NOTE: Nutrition: 104 calories, 3g fat, 3g protein, 18 cholesterol 17g carbs, 1g fiber 12mg sodium
OATMEAL CHOCOLATE BAR COOKIES
Easy one-bowl oatmeal cookie bars with lots of chocolate chunks, very chewy and sweet. These are similar to regular chocolate-chip cookies, but baked in a sheet pan for convenience. I made these with chopped dark chocolate bars because dark chocolate is "healthier" than milk or semisweet chocolate - you can substiture one 12-ounce package of chocolate chips if you prefer

- Have ready, ungreased, two 9x9" square baking pans or one 15x10" jelly-roll pan.
- Preheat oven to 375 degrees.
- In a large glass or plastic mixing bowl, soften the butter (a few seconds in the microwave); it should be very soft but not completely melted. Using a heavy spoon, beat in both sugars, then beat in the eggs until smooth. Beat in the vanilla, baking soda and salt. Mix in the flour just until combined, then stir in the oatmeal and chocolate chunks.
- Spoon the cookie dough into ungreased baking pans. Using the back of the spoon, lightly spread the dough, leaving it a little higher at the sides and corners than in the middle. Bake on the middle rack of the oven for 17-20 minutes, until set in the middle and brown around the edges. Because of the brown sugar, this cookie gets much darker than "golden brown" when it is done.
- Cool in the pan. Cut into bars to serve. Take some to work or school to give away, because the large amount of oatmeal makes them dry out in a few days if you have leftovers.

Steps:
- Preheat oven to 350 degrees with the rack in the middle position.
- Melt the butter in a large microwave safe bowl.
- Add the brown and white sugars and let cool a bit.
- Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
- Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
- With a spatula spread dough evenly into a greased 8x8 baking pan.
- Bake at 350 for 25- 30 minutes.
- Cut into bars when cool.

- Grease 15 x 10 or 13 x 9-inch pan.
- In a large bowl, beat brown sugar and shortening until light and fluffy.
- Add molasses, vanilla and eggs; blend well.
- Stir in oats, flour, baking soda and salt; blend well.
- Stir in nuts and chocolate chips.
- Spread in greased pan.
- Bake at 350°F.
- for 20 to 25 minutes or until light golden brown and center is set.
- Cool slightly. Cut into bars.
- Serve warm or cool.
- Yield: 48 bars Enjoy!
