ANGEL HAIR WITH SHRIMP AND ASPARAGUS

Angel Hair with Shrimp and Asparagus is a quick and easy pasta dish made with fresh tomatoes and asparagus in a light tomato broth.

Number Of Ingredients 11

1 bunch asparagus (tough ends removed, quartered)
1 tbsp olive oil
6-8 ripe plum tomatoes (diced)
2 cloves garlic (thinly sliced)
16 oz large shrimp (peeled and de-veined)
1/2 cup chicken broth
2 oz white wine
kosher salt and fresh pepper (to taste)
1/2 tsp herbs de Provence (or you can use your favorite herbs)
1/2 tsp red pepper flakes (gives it a little kick)
8 oz angel hair pasta (wheat or gluten-free)

Steps:

  • Season shrimp with salt and pepper. Heat a large skillet on high heat.
  • When skillet is hot, spray with oil and add shrimp.
  • Cook shrimp about 1 to 2 minutes in each side until ALMOST cooked through and remove from the pan. Set aside.
  • Reduce skillet heat to medium, add olive oil and garlic and sauté until golden, careful not to burn, about 1 minute.
  • Add tomatoes and season with salt and pepper. Simmer until tender, about 4 minutes.
  • Add the white wine and broth and stir, cook 1 minute then add the asparagus, salt, pepper and herbs.
  • Cover and simmer for 10 minutes on medium low heat, until the vegetables are tender.
  • While sauce is simmering, bring a large pot of salted water to a boil and cook pasta al dente. Drain when done.
  • After sauce simmers 10 minutes, return shrimp to sauce and finish cooking, about 1 minute (Do not overcook or shrimp will get tough).
  • Add pasta to the sauce and toss well.
  • Divide equally in 4 bowls and top with a good grated cheese.

Steps:

  • Cook pasta according to package directions. Meanwhile, sprinkle shrimp with salt and pepper flakes. In a large skillet or wok, heat 1 tablespoon oil over medium-high heat. 1 pint cherry tomatoes, halved
Kosher salt
8 ounces angel-hair pasta
8 cups chopped escarole, kale and/or Swiss chard
1 pound medium shrimp, peeled and deveined
1/2 teaspoon red pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the greens to the water. Drain and rinse under cold water; transfer to a large bowl.

2 tablespoons butter, cut into small pieces
1 large shallot, finely chopped
1 lemon, zested
1/3 pound baby shrimp, 300 count
1/4 cup dry vermouth or white wine, eyeball it
1/2 cup grape tomatoes
1/3 pound angel hair pasta, cooked to al dente
Salt and pepper
2 tablespoons chopped or snipped fresh chives

Steps:

  • Get your pasta water going. Start the scampi sauce when you drop your pasta into boiling water to cook.
  • Heat a large skillet over medium high heat. Add extra-virgin olive oil and melt the butter into it. Add shallots and cook a minute or 2, stirring constantly. Add lemon zest and shrimp and heat shrimp through, another minute or two. Add vermouth or wine and tomatoes. Toss another minute to heat the tomatoes through. Add cooked pasta to the pan and toss to coat evenly in sauce and to distribute the shrimp. Season liberally with salt and pepper and serve with chives to garnish.

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and place in a large bowl.
  • Heat the oil in a large deep skillet over medium-high heat. Add the tomatoes, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Cook, stirring occasionally, until softened, about 2 minutes. Add the crushed red pepper flakes and garlic. Cook for 30 seconds until aromatic. Add the wine and asparagus. Bring to a boil and simmer for 5 minutes.

2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced

1/2 cup dry white wine
5 tablespoons butter
1/4 cup chopped parsley leaves

Steps:

  • Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
  • Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
  • Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

1 (16 ounce) package frozen peeled-and-deveined shrimp

8 ounces uncooked angel hair pasta
3 tablespoons butter, divided
4-1/2 teaspoons all-purpose flour
2 cups half-and-half cream
1/4 cup grated Parmesan cheese
2 tablespoons prepared pesto sauce
2 tablespoons minced garlic, divided
1 teaspoon Worcestershire sauce
1 teaspoon hot pepper sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups fresh broccoli florets
1 pound uncooked medium shrimp, peeled and deveined

Steps:

  • Cook the pasta according to the package directions. Meanwhile, in a large saucepan, melt 4-1/2 teaspoons butter over medium heat. Stir in flour until smooth. Gradually add cream. Bring to a boil; cook and stir for 2 minutes or until thickened., Stir in the cheese, pesto sauce, 1 tablespoon garlic, Worcestershire sauce, hot pepper sauce, salt and pepper. Keep warm over low heat., In a large skillet, saute broccoli in remaining butter for 5 minutes. Add shrimp and remaining garlic; cook and stir until shrimp turn pink. Stir in the cream sauce. Drain pasta; add to shrimp mixture and toss to coat.

8 large fresh shrimp, peeled and deveined
4 ounces angel hair pasta, uncooked
2 tablespoons olive oil
2 tablespoons minced garlic
1 teaspoon chopped shallot
6 stalks asparagus, cut into 2-inch pieces
1/4 cup peeled seeded, diced tomatoes
1/2 cup slice shiitake mushroom caps (or your favorite mushrooms)
1/4 teaspoon salt
1/8 teaspoon dry crushed red pepper
1/2 cup dry white wine
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh parsley
2 tablespoons freshly grated parmesan cheese

Steps:

  • Cook pasta according to package directions; drain and set aside.
  • Heat a 9-inch skillet over high heat 1 minute; spray with vegetable spray and add olive oil and shrimp, garlic and shallots; cook, stirring constantly, 2 to 3 minutes or until shrimp turn pink.
  • Add asparagus and next 4 ingredients; stir in wine, scraping bottom of skillet to loosen any particles, if necessary.
  • Add pasta, basil, and remaining ingredients; toss gently.
  • Serve immediately.
  • (you can drizzle extra virgin olive oil on finished dish if desired).

Another recipe for a not so local Farmers' Market here in our state. Wish I could go to it every Saturday. I've not tried this but don't want to misplace the recipe.

2 lbs asparagus
salt, for water
2 tablespoons olive oil
8 garlic cloves, shaved thin and julienned
1 cup shallot, peeled and julienned
1 pinch crushed red pepper flakes
2 lemons, juice of
3/4 cup fresh chives, chopped fine
1 lb angel hair pasta
salt and pepper
1/2 cup parmesan cheese, freshly grated

Steps:

  • Rinse the asparagus and remove the bottom inch of the stem.
  • Cut the tips into 2 inch pieces.
  • Cut the remaining piece julienned.
  • Set the asparagus aside.
  • Bring a large pot of water to a boil, add salt.
  • In a large nonstick skillet, saute the garlic, shallots and red pepper flakes in olive oil, until tender but not browned.
  • Add the lemon juice and reduce by half.
  • Drop the pasta and the asparagus tips into the boiling water.
  • Cook until the pasta is ala dente, about 3 - 4 minutes.
  • Drain for a few minutes and add to the pan.
  • While the pasta is cooking add the remaining asparagus to the pan with the shallots and saute until they begin to wilt.
  • Toss in the chives, the pasta and cook until the remaining water has evaporated.
  • Season with salt and freshly ground pepper.
  • Remove from heat and add the Parmesan cheese.
  • Serve immediately.
  • (When I make this a second time, I'm going to add a little lemon zest in step 7).

1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1/2 pound sliced fresh mushrooms
1 teaspoon minced chives
3 tablespoons butter
2 tablespoons all-purpose flour
2-1/4 teaspoons salt-free seasoning blend
1/2 teaspoon salt
2-1/4 cups whole milk
1-1/2 cups shredded Swiss cheese
Grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-5 minutes or until crisp-tender., In a large saucepan, saute mushrooms and chives in butter until tender. Stir in the flour, seasoning blend and salt; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the Swiss cheese; cook and stir until melted. , Drain pasta and place in a large bowl. Add asparagus and cheese sauce; toss to coat. Garnish with Parmesan cheese if desired.
