HAMBURGER PASTRY
This is one of the Zaar recipes that I adopted. I hope to prepare this one soon and will post any modifications that I make to the recipe.

Steps:
- Heat the oven to 375 degrees F.
- Cook and stir the meat and onion in a large skillet until the meat is brown.
- Drain off the excess fat.
- Remove from the heat and stir in the remaining ingredients except the pie crust mix and set aside.
- Prepare the pastry as for a 2 crust pie as directed on the package.
- Divide the pastry into 8 equal parts.
- Roll each part, on a lightly floured surface, into a 7-inch circle.
- On half of the circle, spread about 1/4 cup of the meat mixture (packed) to within 1/2-inch of the edge.
- Moisten the edge of the pastry with water and fold over the meat mixture, sealing the edges with a fork.
- Place on an ungreased baking sheet and prick the tops with the fork.
- Bake 30 to 35 minutes.
- You can serve these as sandwiches or, if you prefer, place on a plate and top with gravy or sauce.
- NOTE: You can substitute 1 cup of your favorite cooked vegetable for the peas or carrots in this recipe.
HAMBURGER PATTIES
Perfect burgers every time! There is quite a debate about the origin of the popular American hamburger. I will side with the Wisconsin theory, and attribute this recipe to the Midwest U.S. region.

- Sometimes I vary the seasonings- using a steak seasoning or Cajun seasoning instead of salt and pepper.
- Mix ingredients with your hands using a light touch.
- Don't be tempted to overmix.
- If you do, it becomes too dense.
- When charcoal grilling, add 1/2 cup water to the beef mixture to keep it from drying out.
- For pan frying, don't use a nonstick pan- it won't brown as well, and heat some oil in the pan before adding burgers to keep the burgers from sticking and to help sear and form a nice brown, crispy exterior.
- Either method will take about 10- 12 minutes of cooking time, depending on thickness of patty, temperature of heat source and your preference (we like ours medium cooked).
- Note: when pan-frying don't be tempted to press down and squeeze all the juice out, just turn them more often (turn only once on the grill).

HAMBURGER BUNS
This recipe makes a classic sesame-studded hamburger bun with just the right amount of sweetness and richness to complement but not overwhelm a beefy patty (or whatever you like to put on your bun). It toasts beautifully, which is recommended to add a bit of sturdiness to the soft crumb. Make sure you let the dough proof fully before baking, otherwise the surface of the buns might split. The recipe time factors in dough preparation. If you already have all-purpose enriched bread dough on hand, this is much swifter work.

- Prepare the baking sheets: Line two large rimmed baking sheets with parchment paper. Lightly brush or spray the parchment with oil, then set aside.
- Portion the dough: Remove the dough from the refrigerator and uncover. Scrape the dough from the bowl and place on the work surface. Use the heel of your hand to knock out the gas and deflate the risen dough, which will be quite firm. Using a kitchen scale and a bench scraper or a knife, portion the dough into 10 equal pieces. (Each piece will weigh about 113 grams.) If you don't have a kitchen scale, you can eyeball it.
- Form the buns: Working with one piece of dough at a time, fold it onto itself a few times to create a smooth surface, then gather the edges and pinch them together to form a smooth bundle of dough that looks like a garlic bulb. Place it seam-side down on the work surface and position your hand over the dough, palm barely touching the top and fingers lightly cupping it and resting on the work surface. Drag your hand - and the dough with it - slowly across the surface, moving it in small rapid circles. The friction between the dough and the surface will help tighten the dome so your buns will have a uniform, round shape. You shouldn't need to add flour, since the cold dough is easier to handle and less sticky, but if your dough is slightly warm or otherwise sticky, add just a bit of flour to make it easier to handle. Continue with all the pieces of dough, then arrange the balls on the prepared baking sheets, 5 per sheet, spacing evenly.
- Proof the buns: The buns proof best in a humid environment, so use a spray bottle, if you have one, to lightly spritz the baking sheets with water, or just sprinkle some water around the buns with your fingertips. Loosely cover the baking sheets with plastic wrap, then cover with a damp kitchen towel. Let sit at room temperature, undisturbed, until the buns have doubled in size and appear puffed and balloonlike, 1 1/2 to 2 hours.
- Meanwhile, arrange one oven rack in the upper third and one in the lower third of the oven, then heat it to 350 degrees. Beat the egg in a small bowl until no streaks remain, then set aside.
- Test the buns: To see if the buns are fully proofed, uncover one, lightly oil your finger, and poke the surface gently. It should feel filled with air, spring back and hold a slight indentation from your finger. If it doesn't, cover again and continue to let them rise, repeating the test every 10 or 15 minutes.
- Apply egg wash and bake the buns: Brush the surfaces of the proofed buns generously with the beaten egg and sprinkle the sesame seeds over top. Transfer the pans to the oven, one on each rack. Bake, rotating each pan 180 degrees and top to bottom after 13 minutes, until the buns are puffed and deeply browned, 18 to 22 minutes. Remove from the oven and let cool completely on the baking sheets. Split horizontally with a serrated knife.
EASY HAMBURGER PASTRY

- 1. Heat oven to 375 degrees F.
- 2. Cook and stir the ground beef and onion in a large skillet until meat is browned. Drain off excess fat.
- 3. Remove from heat and add remaining ingredients except the pie crust. Set aside.
- 4. Prepare the pie crust. Divide into 8 equal parts. Roll each piece on a lightly floured surface into a 7" circle. Spoon about 1/4 cup of the meat mixture onto on half of the round. Making sure it's packed in to within a 1/2" on the edge of the crust round. Moisten the edges with water and gently fold over the unused side of the roll. Press edges together and crimp with a fork. Brush tops lightly with an egg mixture of 1 beaten egg and about 1/8 cup of water. Sprinkle lightly with salt.
- 5. Place on an ungreased baking sheet and prick the tops with a fork. Bake for 30-35 until deep golden brown. Can pour brown gravy or sauce over the finished pies and serve.
DOUBLE CHEESEBURGER FOR A CROWD RECIPE BY TASTY

- Preheat the oven to 400°F (200°C).
- In a medium 8-inch (20-cm) cast-iron skillet, press down half of the ground beef with a spatula to mold into a patty. Season with salt and pepper.
- Place the cast-iron skillet over medium-high heat and sear the patty until browned, about 4 minutes on each side.
- Remove the patty from the skillet and set aside. Repeat with remaining beef.
- Return the pan to low heat and add the onion. Cook, stirring occasionally, until the onion is caramelized, about 20 minutes.
- Add the garlic and spinach, stirring until the spinach is cooked down, about 5 minutes.
- Lay one sheet of puff pastry on a baking sheet and top with 1 patty.
- Layer 4 slices of cheese over the patty, then top with the caramelized onion mixture.
- Top with the remaining 4 slices of cheese and the other patty.
- Cover with the other sheet of puff pastry.
- Trim the edges of the pastry with a knife and discard.
- Crimp the edges of the pastry, then press with a fork to seal.
- Brush the top and sides of the pastry with the beaten egg and sprinkle with sesame seeds.
- Bake for 30 minutes, or until the pastry is golden brown and cooked through.
- Slice and serve with additional toppings of your choice.
- Enjoy!

PUFF PASTRY CHEESEBURGERS
This recipe comes from Paula's Party. I was watching her show the other night and saw her son Jamie make these. They looked so good that I wanted to share the recipe with everyone :) NOTE: I narrowed down the onions for our taste but original calls for 1/2 cup diced onions.

- Take out frozen puff pastry and let sit at room temperature for 30 to 40 minutes.
- Preheat oven to 350°F.
- Mix hamburger, diced onion,steak seasoning, steak sauce together until well blended.
- Make into 5 patties
- Grill or fry in frying pan using a little olive oil until burgers are medium well done.
- On a flat surface place a little flour out and place the puff pastry sheet on top and slightly roll to flatten lightly.
- Cut into 5 rectangles evenly, if possible.
- Again roll each rectangle out to fix one burger on.
- Place burgers on each rectangle and add a slice of cheese.
- Cover burgers by bringing ends together to cover the burger completely.
- Place on a lightly greased baking sheet.
- Whisk together egg yolk and water.
- Brush over the covered burgers.
- Place in preheated oven and bake for 15 minutes or until lightly browned.
- For a Garnish: squeeze a little ketchup zig zagging over the burgers and squeeze a little mustard the opposite way. Enjoy!

- Saute beef, onion and garlic, salt and lemon pepper in a large skillet over medium high heat, until beef is browned. Add cabbage, Worcestershire sauce and caraway seeds. Cook until cabbage is limp; drain liquid from mixture.
- Preheat oven to 350 degrees F (175 degrees C).
- On a lightly floured board, roll each loaf of dough into a 12 inch circle. Cut each circle into 6 wedges. Spoon cabbage/beef filling onto center of each dough piece, dividing equally. Pull three points of each wedge up to the center and pinch to seal. Place bierocks on a lightly greased cookie sheet. If desired, brush dough with melted butter or egg wash (1 egg white with 2 tablespoons water).
- Bake in preheated oven for 30 minutes, or until golden brown. Serve hot, or wrap and freeze for heating later.
