GARLIC LIME CHICKEN BREASTS
This came from my friend Liz's recipe box. Few ingredients but great flavor, chicken always turns out moist. She makes extra to have leftovers for Mexican Lime Chicken Soup.

Steps:
- Whisk together lime juice, oil, garlic, salt, and pepper in a large bowl.
- Add chicken, turning to coat. Marinate chicken, covered and refrigerated, turning once or twice, for at least 2 hours and up to 8 hours.
- Put a rack in the upper third of the oven and preheat to 400 degrees.
- Remove chicken from marinade (discard marinade) and arrange skin side up, without crowding, in a shallow baking dish.
- Season with salt and pepper. Roast until just cooked through, 25 to 30 minutes.
- If chicken has a skin, turn oven to broil. Broil chicken about 2 inches from the heat until skin is crisp, about 2 minutes.
- Serve with lime wedges.
GRILLED CHICKEN BREASTS WITH LIME AND DILL
This is a very easy and very tasty chicken dish. I can even eat this on Weight Watchers,I just don't serve with the buttered noodles. Marinate time is only 15 min. so it is also quick. Prep time does not incluce marinating. Can't remember where I got this recipe from to give them credit.

- Combine all marinade ingredients in heavy ziplock bag and mix.
- Add chicken breasts, seal; turn bag to coat.
- Let stand at room temperature for 15 minutes.
- Cover grill with foil.
- Place breats on foil and cook on grill at low heat setting.
- Cook for 20-30 minutes depending on size of breasts.
- Meanwhile melt the butter.
- Baste the breasts with butter when done.
- Can serve with buttered noodles.

- Season chicken breasts on both sides with salt and pepper. Heat 1 1/2 teaspoons oil in a large heavy skillet over medium-high heat. Add the chicken and sear until well browned on both sides, about 3 minutes per side. Transfer chicken to a plate and tent with foil.

- Dredge the chicken breasts lightly in flour; season with a pinch each of salt and pepper.
- In a skillet, heat butter and oil over medium-high heat; cook chicken, turning once, for about 6 minutes or until golden brown and no longer pink inside.

- Gather the ingredients.
- Sprinkle the chicken breasts with seasoned salt. If the chicken breasts are quite large, slice each one in half horizontally to make two cutlets. For faster and more uniform cooking, put each chicken breast or cutlet between two sheets of plastic wrap and gently pound with the smooth side of a meat tenderizer.

So you know it is a great main for your next party and if you follow our easy version you can quickly make it at home and fortunately the flavour improves with being made ahead. My version adds a little excitement with lime juice to wake up the complex flavor and cut the richness. Another plus of this version is that less than a teaspoon of butter a serving adds a luxuriousness of flavor to this already pleasingly fiery sauce. It's a snap to double or triple this recipe if you're having a crowd. Be sure to have rice to soak up all the complex flavoured sauce.

- Cut chicken into large bite-size pieces, about 1 inch (2.5 cm) wide. In a large frying pan, combine broth, jalapeno (If you are not a fiery fan remove seeds before chopping), garlic, lime peel and juice, plus cumin, garam masala and salt. To develop flavor, boil gently, uncovered, until reduced to about a cup (250 mL), about 10 minutes.
- Stir in cream, tomatoes and chicken. Cover and bring to a boil. Then reduce heat so mixture just simmers. Simmer, covered and stirring often, until chicken feels springy when tapped, about 10 minutes.

- Melt butter in large skillet over medium high heat. Arrange chicken pieces skin side down and fry about 5 minutes or until golden. Turn pieces over, briefly brown the other side; then remove from pan and set aside.

This sauce would also be wonderful over whitefish fillets. If you use dried herbs, reduce the quantity to 1/3, as dried herbs are more potent.

- Salt and pepper chicken breasts, and sprinkle both sides with a little dill weed.
- Heat large skillet on medium heat.
- Melt 1/2 stick of butter in skillet, garlic, salt & pepper, 1T of dill weed, 2T lime juice and the juice of 1.5-2 limes.
- Add chicken breasts, over medium heat cook approximately 6-8 minutes per side or until done.
- In seperate smaller skillet combine the other 1/2 stick of butter, 1.5T dillweed, 2T lime juice and juice of 1.5 lime (save at least 1/2 of a lime for garnish). Heat over low heat until combined and melted.
- Pour sauce from second skillet over plated chicken breasts.
- Garnish with lime slices. Slice off a thin circle of lime. Cut 1/2 down center and then pull ends in opposite directions to create a spiral like shape.
- I serve this dish with rice or parmesan angel hair pasta and a vegetable.
