PARSNIP, PEAR, AND GINGER CAKE



Parsnip, Pear, and Ginger Cake image

The combination of parsnip, pear and ginger makes this deeply flavoured cake hovers around the same region as a fruity, moist carrot cake. Adapted from Lily Vanilli's Sweet Tooth.

250g (9 ounces) pears and parsnips, peeled, cored and grated
20g (1 ounce) fresh ginger, peeled and grated
100g (3.5 ounces) raisins, soaked in hot water
Juice and zest of 1 lemon
150g (5.3 ounces) plain spelt flour, sifted
½ tsp ground ginger
½ tsp ground cinnamon
1 tsp baking powder
150g (5.3 ounces) ground hazelnuts (or almonds)
3 eggs
150g (5.3 ounces) light brown sugar
125ml (4 ounces) olive oil
60g (2 ounces) soft unsalted butter
100g (3.5 ounces) full-fat cream cheese
125g (4.5 ounces) icing sugar, sifted
½ teaspoon vanilla extract
Chopped hazelnuts to decorate

Steps:

  • Grease and line a 23cm/9 inch spring-form or loose-bottomed cake tin. Preheat your oven to 180°C.(350°F)
  • Use kitchen roll or a clean tea towel to squeeze out any excess moisture from the grated pear and parsnip. Mix together in a bowl with the drained plumped up raisins, ginger, lemon juice and zest.
  • In another bowl, whisk together the eggs and sugar with an electric whisk until very light and airy, about 5 minutes on a high speed. Then beat in the oil to incorporate.
  • Sieve in the spelt flour, ground ginger and cinnamon, baking powder and ground hazelnuts or almonds and fold in gently to combine. Add the pear and parsnip mix and combine.
  • Pour the mixture into the prepared tin and level out.
  • Bake for 30 minutes or until a skewer inserted into the centre comes out clean.
  • Let the cake cool in the tin for 10 minutes and then remove from the tin to cool completely on a wire rack.
  • For the cream cheese icing, beat the butter with an electric whisk for 4-5 minutes, then add the cream cheese and beat for another 2 minutes.
  • Add the icing sugar and vanilla and beat slowly until combined before increasing the speed and beating until smooth and evenly mixed.
  • Spread the frosting over the top of the cake and sprinkle with the chopped hazelnuts.

2 tablespoons olive oil
1 ½ pounds peeled parsnips , cut into 1-inch chunks
1 large onion, cut into large dice
1 tablespoon butter
1 pinch sugar
3 large garlic cloves, thickly sliced
1 teaspoon ground ginger
¼ teaspoon cardamom
¼ teaspoon allspice
⅛ teaspoon cayenne pepper
3 cups chicken broth, homemade or from a carton or can
1 ½ cups half-and-half (or whole milk)
Salt and freshly ground pepper, to taste
Garnish: sauteed hazelnuts and dried cranberries*

Steps:

  • Heat oil over medium-high heat in a large, deep saute pan until shimmering.
  • Add parsnips, then onion; saute, stirring very little at first, then more frequently, until vegetables start to turn golden brown, 7 to 8 minutes.
  • Reduce heat to low and add butter, sugar and garlic; continue cooking until all vegetables are a rich spotty caramel color, about 10 minutes longer.
  • Add ginger, cardamom, allspice and cayenne pepper; continue to saute until fragrant, 30 seconds to 1 minute longer.
  • Add broth; bring to a simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until parsnips are tender, about 10 minutes.
  • Using an immersion blender or traditional blender, puree until very smooth, 30 seconds to 1 minute. (If using a traditional blender, vent it either by removing the lid's pop-out center or by lifting one edge of the lid. Drape the blender canister with a kitchen towel. To 'clean' the canister, pour in a little half-and-half, blend briefly, then add to the soup.)
  • Return to pan (or a soup pot); add enough half-and-half so the mixture is souplike, yet thick enough to float garnish. Taste, and add salt and pepper if needed. Heat through, ladle into bowls, garnish and serve.

1 6- to 7-ounce underripe Bosc pear, quartered, cored
1 7- to 8-ounce parsnip, peeled, cut into 1-inch pieces
1 large egg, beaten to blend
1 1/2 tablespoons chopped celery leaves
1 1/2 teaspoons drained white horseradish
3/4 teaspoon salt
1/2 cup panko (Japanese breadcrumbs)
Vegetable oil (for frying)

Steps:

  • Using coarse grating blade, shred pear in processor. Transfer to paper towels; squeeze very dry. Transfer to large bowl. Shred parsnip in processor; add to pear. Mix in next 4 ingredients, then panko and a sprinkle of black pepper. Coat bottom of large skillet with oil; heat over medium heat. Drop batter by packed 1/4 cupfuls into skillet; flatten to 1/2-inch thickness. Sauté until brown and cooked, about 4 minutes per side. Drain on paper towels.

3 cups carrots, cut into 1-inch pieces
3 cups parsnips, cut into 1-inch pieces
1 medium onion, chopped
2 celery ribs, chopped
1 piece fresh ginger, peeled and sliced
1 tablespoon olive oil
2 cups chicken broth or 2 cups vegetable broth
1/2-3/4 cup heavy cream or 1/2-3/4 cup half-and-half
salt and white pepper
1/2 lemon, juice of
fresh chives (to garnish) (optional)

Steps:

  • Sautee the onion and celery in olive oil in a large saucepan over medium-high heat for 10-15 minutes or until tender.
  • Add ginger and sautee for another 5 minutes.
  • Add carrots, parsnips, and chicken broth and bring to a boil. Reduce heat and simmer, stirring occasionally, for 30-40 minutes, or until carrots and parsnips are tender. Remove from heat, let cool for 5 minutes.
  • Process mixture in a food processor or with an immersion blender, and puree until smooth.
  • Return puree to saucepan. Stir in cream and return to a simmer over medium heat. Add salt, white pepper, and lemon juice to taste.
  • Garnish with chives and serve hot, or refrigerate, covered, for several hours and serve chilled.

  • Place carrots and parsnips in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 15-20 minutes or until crisp-tender. , In a large skillet, saute 1 tablespoon ginger in butter for 1 minute. Add the carrots, parsnips and salt; toss to coat. 1 tablespoon vegetable oil
4 pork loin, centre chops bone-in (about 2 lb.)
salt and pepper
3 firm slightly under-ripe pears, peeled
1 1/2 lbs parsnips peeled and cut into 2 12 by 1/2 -inch sticks (about 7 medium)
6 tablespoons grainy mustard
1/4 cup maple syrup
1/2 teaspoon crushed mustard

Steps:

  • Brush roasting pan with 1 tsp of the oil.
  • Place pork chops in pan; season with salt and pepper.
  • Cut pears into quarters and remove cores; cut each 1quarter in half, In a small bowl, toss parsnips with remaining oil.
  • Place pears and parsnips on and around chops.
  • Cover with foil and bake in a 375F oven for about 20 minutes.
  • GLAZE: In a small bowl, whisk together mustard, maple syrup and garlic; brush over pork chops, pears and parsnips.
  • Bake, uncovered, for 5-10 minutes more or until parsniips are tender and juices run clear when pork is pierced and just a hint of pink remains inside.
