This is a great easy dinner. We have been making this for years for the sport teams at the high school. They love it so I thought I would share it.

3 (10.75 ounce) cans condensed cream of chicken soup
2 ¼ cups water
1 cup milk
4 cups long grain and wild rice mix
1 (16 ounce) package baby carrots
6 skinless, boneless chicken breast halves

Steps:

  • Spray the inside of a slow cooker with cooking spray.
  • Stir together cream of chicken soup, water, milk, long grain and wild rice mix (including seasoning packets, if any), and baby carrots in the slow cooker.
  • Place chicken breasts on top of the mixture.
  • Cover and cook on High until chicken is cooked through and rice is tender, about 5 hours; or cook on Low setting for 7 to 8 hours.

2 (6 ounce) packages dry instant long grain and wild rice mix
2 ½ cups water
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup butter
½ pound processed American cheese
½ cup sliced fresh mushrooms

Steps:

  • In a slow cooker, place onions, celery, rice mix, water, condensed cream of mushroom soup, butter, American cheese and mushrooms. Cover, and cook on Low 6 to 10 hours or on High 2 to 4 hours.

1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup diced celery (optional)
1 cup Minute Rice

Steps:

  • Mix in crock pot the 3 cans of soup & rice. Place chicken on top of the mixture, then add diced celery (optional). Cook for 3 hrs on high or 4 hours on low. makes 4 servings.
  • More rice, about 1/2 cup and 2 more chicken breasts may be added to make 6 servings.
  • you can also use chicken tenderloin or other boneless chicken parts.

1 1/2 cups diced carrots (about 4 medium)
1 small shallot
1 tablespoon Dijon mustard
1 1/2 pounds boneless, skinless chicken breasts (or chicken thighs)
1 1/2 teaspoons garlic powder
1 teaspoon dried thyme
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 1/2-3 1/2 cups low-sodium chicken broth
1 cup frozen peas
1/2 cup nonfat plain Greek yogurt
1/2 cup freshly grated sharp cheddar cheese (divided (I love white cheddar for this))
Chopped fresh parsley (optional for serving)

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Add the rice, carrots, shallot, and Dijon mustard, and stir to combine. Arrange the chicken breasts on top, then sprinkle with the garlic powder, thyme, salt, and pepper. Pour in the chicken broth. Cover and cook on HIGH for 1 1/2 to 2 1/2 hours, until the chicken is cooked through.
  • Remove the chicken to a plate and cover to keep warm. Stir the rice, vegetables, and broth, then re-cover and continue cooking on high until the rice is tender, about 1 additional hour.**
  • Uncover and stir in the peas and Greek yogurt. Dice the chicken and stir it in with 1/4 cup cheddar cheese. Sprinkle the remaining cheese over the top, then re-cover and cook for a few additional minutes on high until the cheese is melted. Serve warm, sprinkled with fresh parsley as desired.

1 large carrot (chopped into 1/4" thick pieces)
1 large stalk celery (trimmed and chopped into 1/4" thick pieces)
1 clove garlic (minced or 1/2 teaspoon garlic powder)
1 sprig fresh thyme or 1/2 teaspoon dried thyme
1 bay leaf
1 cup Floating Leaf Fine Foods Sprouted Crimson Lentil Wild Rice and Quinoa Prairie Blend
3 cups reduced sodium chicken stock (vegetable stock or water)
2 boneless skinless chicken breasts (seasoned with salt and black pepper, to taste)
1/2 cup green peas (fresh or frozen)
1 cup of grated cheddar cheese
salt and pepper (to taste)

Steps:

  • Spray the inside of the the crockpot with cooking spray.
  • Place the chopped carrot, celery, garlic, herbs, bay leaf, rice and stock or water into the slow cooker and stir to combine. Add the chicken, cover and cook on high, stirring occasionally. Add the peas after about 2 1/2 hours and continue cooking for an additional 15-30 minutes until the chicken is cooked through and the rice has absorbed most of the liquid.
  • Turn the slow cooker off.
  • Remove and discard the bay leaf, then remove the chicken and place on a cutting board. Cut into bite sized pieces, then add it back to the crockpot.
  • Add half of the cheese, salt and pepper to taste, and stir it into the chicken and rice mixture. Top with the remaining cheese and cover just until the cheese melts.
  • Serve and enjoy!

1 cup brown rice (uncooked)
1 small yellow onion (peeled and chopped)
2 cloves garlic (minced)
1 teaspoon dried thyme
2 1/2 cups low-sodium chicken broth ((plus up to 1 cup extra))
2 boneless skinless chicken breasts
1 teaspoon onion powder
1 teaspoon salt
1 tablespoon Dijon mustard
2 cups broccoli florets (cut into smaller pieces as needed)
1/2 cup sour cream
1 cup cheddar cheese (shredded)
Fresh parsley (chopped, for garnish)

Steps:

  • To a slow cooker, add rice, onion, garlic, and dried thyme. Pour chicken broth over rice.
  • Season chicken all over with onion powder and salt. Then rub both sides with Dijon mustard. Place in the slow cooker on top of rice.
  • Cover and cook on HIGH for 2 hours or on LOW for 5-6 hours.
  • Uncover the slow cooker and transfer chicken to a cutting board. Once cool enough to handle, chop chicken into small pieces.
  • Steam broccoli in the microwave and then drain. Add steamed broccoli to the slow cooker and stir to combine. (see notes)
  • Add sour cream and chopped chicken to the slow cooker and stir to combine. Test rice for doneness - add up to 1 cup more of broth as needed if rice is now fully cooked yet.
  • Sprinkle cheddar cheese all over the top of the chicken and rice mixture.
  • Cover the slow cooker and cook on HIGH for another 30 minutes, or until the cheese is melted and the rice is soft. Serve warm with chopped parsley on top for garnish, if desired.

6 slices bacon
1 onion, chopped
2 garlic cloves, minced
14 ounces condensed chicken broth
1 1/3 cups water
10 ounces condensed cream of chicken soup
9 ounces baby carrots
1 1/4 cups wild rice
1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
1/4 teaspoon dried marjoram

Steps:

  • In large skillet, cook bacon until crisp. Remove bacon, crumble and refrigerate.
  • Remove all but 1 tablespoon bacon drippings from skillet. Add onion and garlic to skillet and cook and stir for 2-3 minutes.
  • Stir in broth, water, and condensed soup; cook and stir until bubbly, 3-4 minutes.
  • Place wild rice and carrots in 3-4 quart crock pot. Top with chicken pieces and pour mixture in skillet over chicken. Sprinkle with marjoram.
  • Cover crock pot and cook on HIGH for 1 hour.
  • Stir mixture, making sure wild rice is submerged in liquid.
  • Reduce crock pot setting to LOW and cook, covered, for 6-8 hours until chicken is thoroughly cooked and wild rice is tender.
