ITALIAN BURGER

12 ounces coarsely ground beef chuck
12 ounces coarsely ground beef sirloin
2 teaspoons dried parsley
1 1/2 teaspoons lightly crushed fennel seed
1 teaspoon granulated garlic
1/4 teaspoon crushed red pepper flakes
1 tablespoon grated Parmesan
Kosher salt and freshly ground black pepper
4 hamburger buns, for serving
Arugula, sliced tomato, pesto and giardiniera, for serving
Heat a large cast-iron skillet over medium-high heat for 5 minutes.

Steps:

  • Gently toss together the chuck and sirloin in a large bowl, making sure not to overwork the mixture.
  • Combine the dried parsley, fennel seed, granulated garlic and red pepper flakes in a small bowl. Sprinkle the spice mixture over the beef along, with the Parmesan, and fold gently to combine. Form the beef into four 3/4-inch-thick patties, each about 4 inches in diameter. Sprinkle each generously with salt and a few grinds of black pepper.
  • Place the patties in the hot skillet; do not press down with a spatula. When the patties are seared and browned on one side, about 3 1/2 minutes, flip and cook on the other side until browned and the burgers are medium-rare, about 3 1/2 minutes.
  • Split the hamburger buns. Arrange some arugula on the bottom buns and top each with a slice of tomato, a burger patty and a dollop of pesto. Top with the top halves of the rolls Serve with giardiniera.

2 tablespoons extra-virgin olive oil, plus more for drizzling
8 deli slices Genoa salami
8 ounces cremini mushrooms, quartered
Kosher salt and freshly ground pepper
1 1/2 pounds ground beef, preferably chuck
Vegetable oil, for the grill
4 semolina rolls, split
2 cups baby arugula
1/2 tablespoon balsamic vinegar
1/2 cup fresh ricotta cheese

Steps:

  • Preheat a grill to medium high. Heat the olive oil in a skillet over medium-high heat. Working in batches, add the salami in a single layer and cook, turning once, until crisp, about 1 minute per side. Drain on paper towels.
  • Add the mushrooms to the skillet and cook, undisturbed, until browned, about 2 minutes. Stir and continue to cook until tender, about 5 more minutes. Season with salt and pepper.
  • Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute.
  • Toss the arugula, vinegar, and olive oil to taste in a bowl; season with salt and pepper. Spread the ricotta on the bun bottoms and top with the burger patties, salami, mushrooms and arugula salad. Cover with the bun tops.

1 tin anchovy fillets
1 package spicy Italian sausage
2 pounds fresh hamburger meat
1/2 cup minced onion
1/2 cup chopped mint leaves
2 cloves garlic, finely minced
1 teaspoon Italian seasoning
Salt
Freshly ground black pepper
Lettuce or spinach, for garnish
Thinly sliced tomato, for garnish
1 loaf Italian sweet bread or other good Italian bread in classic loaf
3/4 clove garlic, minced
1 small onion, finely minced
1/2 cup olive oil
Salt
Freshly ground black pepper

Steps:

  • Preheat the grill.
  • Smash the anchovies into a paste with the back of your knife or a mortar and pestle. Remove the Italian sausage from its casing and add to a large bowl with the hamburger meat, smashed anchovies, onion, mint, garlic, Italian spice, salt and pepper. Mix all ingredients well.
  • On a clean work surface, or a cutting board covered with plastic wrap, pour out the meat mixture and shape into a flat rectangle approximately the width of the loaf of bread and about 1 inch thick. Cook's note: You can make the rectangle a bit larger than the loaf of bread since the meat will shrink slightly during cooking.
  • Cut the flattened hamburger in half, making 2 large patties for grilling. Place the patties on the preheated grill and cook until the ground meat reaches an internal temperature of 155 degrees F.
  • To prepare the bread, first saute the garlic cloves and minced onion in olive oil until they soften, about 3 to 5 minutes. Season with salt and pepper. Cut the loaf in half horizontally through the center to create 2 long pieces, top and bottom halves of the loaf. Paint the inside of each piece of bread with the oil mixture, coating them well. Remove the burgers from the heat and hold on a covered plate. Place the 2 bread halves on the coals, painted side down, to toast.
  • To serve, place the burger patties on half of the toasted bread, add the lettuce and tomato slices, if using, and then top with the other half of the bread and cut into 1- to 2-inch slices.

1 1/2 pounds ground beef sirloin
1 teaspoon chopped fresh oregano
1 garlic clove, grated
Kosher salt and freshly ground black pepper
4 slices provolone cheese
1/4 cup mayonnaise
1 teaspoon balsamic vinegar
4 seeded hamburger buns, split
Fresh basil leaves, for topping
Giardiniera, for serving

Steps:

  • Prepare an outdoor grill for medium-high heat.
  • Gently mix the beef, oregano, garlic and 1/2 teaspoon each salt and pepper in a medium bowl until just combined.
  • Shape the meat into 4 6-ounce patties, about 5-inches in diameter. Make a slight indentation in the center of each patty and lightly sprinkle the outside of the patties with salt and pepper. Lightly oil the grill grates. Grill to desired doneness, about 4 minutes per side for medium, adding a slice of cheese to each burger during the last minute of cooking.
  • Mix the mayonnaise and balsamic vinegar together in a small bowl. Quickly toast the buns on the grill for about 1 minute and then spread with some of the mayonnaise mixture. Top with a burger and then some fresh basil leaves. Serve with giardiniera on the side.

1 cup shredded part-skim mozzarella cheese, divided
1 teaspoon Worcestershire sauce
1/4 teaspoon Italian seasoning
1/8 teaspoon salt

Marinara or spaghetti sauce, warmed

Steps:

  • In a large bowl, combine 1/2 cup cheese and seasonings. Add beef; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Grill burgers, covered, over medium heat or broil 4 in. from heat until a thermometer reads 160°, 4-5 minutes on each side. Sprinkle with remaining cheese; grill, covered, until cheese is melted, 1-2 minutes longer. Serve with marinara sauce.

6 tablespoons Italian seasoned breadcrumbs
1 teaspoon oregano
3 tablespoons parmesan cheese
1/4 cup onion, chopped
2 garlic cloves, minced
1/2 teaspoon salt

1 egg
1 (15 ounce) can tomato sauce
1 teaspoon italian seasoning
hot cooked spaghetti

Steps:

  • Mix together beef, breadcrumbs, oregano, parmesan cheese, onion, garlic, salt, pepper and egg.
  • Form mixture into 4 patties.
  • Brown in skillet approximately 2 minutes on each side, until browned.
  • Mix together tomato sauce and italian seasoning.
  • Pour over patties.

4 (1/3 lb) hamburger patties
1 onion
1 (26 ounce) jar spaghetti sauce
4 tablespoons italian seasoning
2 tablespoons parmesan cheese
2 cups Italian cheese
4 tablespoons butter
4 teaspoons prepared garlic in oil
4 hamburger buns

Steps:

  • This recipe uses Bubba's Frozen All-Beef 1/3 lb Hamburger patties made from U.S.D.A. Choice Beef Chuck cooked on an indoor electric grill. You can use smaller patties, but you will need to adjust your cooking time accordingly. Burgers with fillers or lesser quality beef are not recommended. You'll be rewarded for spending a bit extra for quality hamburger patties.
  • Spray your electric grill with garlic flavored cooking spray. Close and heat for 5 minutes.
  • After 5 minutes, place your frozen patties on your grill. Close and cook for 3 minutes.
  • While your burgers are cooking, cover the insides of each bun with butter and garlic. Place your buns buttered sides up in an un-greased non-stick baking pan and set them aside for the moment. If you prefer, you can use sliced Italian Bread instead of Hamburger Buns.
  • When your burgers have cooked for 3 minutes, open your grill, season both sides of each pattie with Italian Seasoning. Close your grill and cook 3 more minutes.
  • After the additional 3 minutes have passed, open your grill and place a whole onion slice over each burger. Sprinkle a bit more Italian seasoning over each onion slice. Close your burger and cook for a final 2 minutes.
  • While your burger is finishing off, heat your sauce in a glass cooking bowl in your microwave for about 2 1/2 minutes. Any good quality sauce will work. I used Classico Four Cheese Sauce.
  • Take the baking sheet your hamburger Buns are on and insert it into your oven. Toast the buns with the broiler for a few minutes until the butter melts.
  • When your burgers are done and your sauce is heated, remove your patties from your grill and place them in your sauce. Top each pattie liberally with shredded Italian cheese. Spoon sauce over the patties until they are covered, then place the bowl in the microwave and heat on high for about 1 minute (until the cheese melts).
  • When your cheese is melted, lift each burger from your sauce, allow excess sauce to drip off, then place each on the bottom portions of your buns and sprinkle with grated Parmesan Cheese. Lightly spoon about a teaspoon of sauce on the inside top portion of your bun. Serve your Sandwiches open-faced with a few celery sticks (no fries or potato chips), fresh spring onions, and/or Roma Tomato slices on the side. Your guests can put their sandwiches together as they marvel about the savory aroma and your artful presentation. Have extra patties available. Your guests will want more.

1/4 c butter, unsalted
1/2 c chopped onion
1/2 c chopped green pepper
1 1/2 lb ground hamburger
1 1/2 tsp salt
1/4 tsp pepper
1/2 tsp oregano, dried
2 Tbsp worcestershire sauce
8 oz cooked macaroni
1 can(s) 3 oz mushroom - drained
1 can(s) tomato soup
1-2 can(s) rotel
1/2 c grated italian cheese

Steps:

  • 1. Saute the green pepper, onion and butter until slightly brown. Use a saute pan that will hold all ingredients above except the macaroni noodles and cheese
  • 2. Add Hamburger and cook till hamburger is no longer pink. Drain.
  • 3. Add all spices to the pan. Add worcestershire, soup, rotel, and mushrooms to the pan. Stir and heat for about 3-5 minutes. (NOTE: If you like spicy then use two cans of Rotel. If not just use one.)
  • 4. Add cooked macaroni to a large casserole dish. Pour pan mixture onto noodles and gently stir to combine all together. Sprinkle cheese on top.
  • 5. Bake in oven at 350 for 20-30 minutes. Serve with rolls or crusty french bread and a salad.

  • Preheat oven to 375 degrees. In hot butter in large skillet, saute onion and green pepper until tender--5 minutes. Add beef; cook, stirring, over medium heat until browned--about 5 minutes. Add salt, pepper, oregano, and Worcestershire. Meanwhile, cook macaroni as package label directs. Drain; turn into 2 1/2-quart casserole. Add beef mixture, mushrooms, tomato soup, and chopped tomato; toss to combine well. Bake, covered, 40 minutes. Remove cover; sprinkle with cheese. Bake 5 minutes longer, or until nicely browned.
