HAMBURGER DIANE
For those of us who have had the pleasure of having Steak Diane in some of the finest restaurants, also have noticed the cost of an expensive meal. Here is a version just as delicious, but far less expensive. It has a wonderful red wine mushroom sauce that you won't forget any time soon! Note: as in all recipes that call for wine, please don't use cheap wines, or "cooking" wine. Use the same wine that you would drink. When choosing the meat for this recipe, you may choose ground chuck for more flavor, or ground sirloin for lower fat. I found this at About.com

- Directions:.
- Gently combine ground beef, 1 teaspoons of the Worcestershire sauce, salt, and pepper. Form into 4 patties, each 1-inch thick.
- Heat a large heavy skillet over medium heat. Add 1 Tbsp.of the butter and sear ground beef patties until browned on each side. Remove to a platter and keep warm.
- Add remaining 1 tablespoons of butter to the same skillet along with shallots and mushrooms. Saute until most of the liquid has evaporated and vegetables are soft.
- Carefully add red wine and stir often, scraping up browned bits, for 2 minutes until reduced. Stir in Dijon mustard, lemon juice, remaining 1-1/2 teaspoons Worcestershire sauce, and cream. Cook an additional 2 minutes. Taste and adjust salt and pepper, if need be.
- Return beef patties, with any accumulated juices, to the sauce, turning to coat. Heat until warmed through, sprinkle with chives, and serve with pan sauce.

Steps:
- Preheat over to 375 degrees.
- Soak sun-dried tomatoes in about 1/2 cup hot water for 10 minutes. Drain. In the meantime, heat the 1/4 cup water over medium-high heat in a large skillet. Add onion and cook until golden, about 3 to 4 minutes. Stir in mushrooms, garlic, cumin, and cook until mushrooms have released their juices, about 4 to 6 minutes. Add red wine and tamari and cook to reduce in half. Remove from heat and set aside to cool slightly.
- Tear toasted bread into pieces and place in a food processor. Process until broken down into crumbs. Pour the crumbs into a medium bowl. Add the mushroom mixture and beans to the food processor along with the sun-dried tomatoes; pulse until combined, but not smooth. Leave some chunky bits. Scoop mixture into the bowl with the bread crumbs; season with salt and pepper.
- Mix ingredients together and divide into 2 equal portions. With dampened hands, shape each portion into four patties, about 3 1/2" each for 8 patties. Place burgers on a parchment-lined baking sheet and brown burgers on one side, about 10 minutes. Flip to brown on the other side for another 10, watching to make sure they don't overcook.
- Enjoy with all of the burger fixins'.

THE BEST HAMBURGER RECIPE (AND AMAZING SECRET SAUCE)

Steps:
- In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
- Turn grill up to high and let it get hot.
- Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
- For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
- Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.

- Combine the ground meat(s), garlic, mint, oregano, salt and pepper in a mixing bowl and knead well. Add 2 to 4 tablespoons of olive oil to the mixture while kneading, to create a soft, succulent mass. The mixture should be dense but slightly unctuous. Cover and refrigerate for 30 minutes to 12 hours. (You can make ahead, the day before.)
- Mash the feta, cayenne or paprika, and lemon juice together in a bowl using a fork, or pulse on and off in a food processor, to form a thick paste. Divide the mixture into 8 eqyal portions, about a tablespoon each, and shape into small balls.
- Right before preparing the burgers, core and cut the tomatoes into 1-inch/2.5-cm cubes, place in a bowl, season lightly with salt and set aside.
- Divide the ground meat mixture into 8 equal parts. Rub the palms of your hands with a little olive oil and shape each portion into a burger. Using your thumb, make an indentation in each burger and fill with the spicy feta ball. Pinch together the meat to seal the indentation, so that the feta is not exposed.

- In a small bowl, combine fish sauce, garlic, sugar and black pepper. Add the marinade to the ground beef and combine until all the ingredients are mixed together well. Refrigerate the beef for at least 30 minutes. We like to allow the beef to marinade overnight in the fridge for optimum flavor, but most of the time don't plan that far ahead. They still always come out great, even with the shorter marinade time.
- Gently form meat into patties for sliders or burgers. Form them to the size of your burger or slider buns.
- Cook on a skillet or grill. If cooking on a grill, make sure to pre-heat the grill and to scrape the grill clean before grilling. It will help minimize the sticking. (1/2 pound patties on a med./high grill take about 3 min. per side for med. rare burger. Heat temp., thickness, etc. all affect cooking times).
- Assemble your burger with your favorite condiments and treat yourself to the cheeseburger version!
