Steps:
- Pierce potatoes with a fork; arrange in a circle on paper towels in microwave oven.
- Microwave at high 16 minutes or until done, rearranging potatoes after 8 minutes. Let stand 5 minutes.
- Preheat broiler.
- Cut each potato in half lengthwise; scoop out pulp, leaving a 1/4-inch-thick shell. Combine potato pulp, ham, 1/2 cup cheese, 1/3 cup green onions, sour cream, and pepper.
- Spoon the potato mixture into shells. Combine 1/2 cup cheese and remaining green onions, and sprinkle over potatoes. Place potatoes on a baking sheet; broil 4 minutes or until golden.

- In a greased 13x9-in. baking dish, layer half the noodles, ham and cheese. , In a large bowl, combine the soup, sour cream, green pepper and onion; spread half over the top. Repeat layers. Bake, uncovered, at 350° for 40-45 minutes or until heated through.

SWISS, HAM, POTATO SOUP
One of my most requested "soup of the day" recipes from when I was in the food business. Swiss cheese gives this soup the most delectable flavor.

Steps:
- Cook diced potatoes in saucepan with just enough water to cover.
- When tender, drain the liquid from the potatoes and save.
- Set both aside while making roux.
- In large saucepan, melt margarine.
- Saute the chopped green onions until tender.
- Remove onion from pan and set aside.
- Add flour to melted margarine and stir until incorporated.
- Cook over medium heat until the roux begins to just turn a golden color.
- Using a whisk, stir in 2 cups of milk and 1 cup of the saved potato liquid.
- Whisk until smooth and no lumps are seen.
- Bring just to a boil or until the soup thickens.
- Add the diced ham, cooked onion and the Swiss cheese. Also, add back in the cooked potatoes.
- Stir until cheese is melted.
- Add salt& pepper to your preference.
- I usually add 1 teaspoons.
- salt and 1/2 teaspoons.
- pepper.
- Stir well.
- If soup is too thick, you may add the final cup of milk.
- My bunch likes it thick.
LEFTOVER HAM -N- POTATO CASSEROLE

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 1/2-quart baking dish.
- Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Stir potatoes into ham mixture; transfer to the prepared baking dish.
- Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
- Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
- Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
- Pour sauce over ham and potatoes.
- Sprinkle bread crumbs atop casserole.
- Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

- Heat oven to 400°F. Stir together Potatoes, Sauce Mix and boiling water in ungreased 2-quart casserole. Stir in milk, ham and cheese.
- Bake uncovered 50 minutes; sprinkle with bread crumbs. Bake 10 to 14 minutes longer or until top is golden brown.

SWISS HAM POTATO SCALLOP
IMHO this is the best ham casserole ever. The Swiss cheese adds divine flavor. I got this recipe from my school principal's wife. Thanks, Eunice! This is perfect for potlucks or sit-down dinners or as a treat for a sick neighbor. It's a little more work but the flavor makes you glad you made it!

- If you do not have leftover cooked red potatoes, cook them first. Cool them enough to handle and cube them. Shred the cheese and cube the ham.
- Preheat the oven to 400 degrees. Butter a 1-1/2 quart casserole; reserve.
- Saute the onion in the 2 tablespoons butter until tender, not browned. Blend in flour, salt and pepper.
- Add the milk; cook and stir until thickened and bubbly. Add the cheese and when melted, stir in the ham and potatoes, being gentle with the stirring.
- Turn into prepared casserole.
- Prepare the topping. Combine the crumbs and melted butter. Sprinkle on top of casserole.
- Bake in preheated oven for 25 to 30 minutes or until lightly browned and bubbly.

- In 3 1/2 quart slow cooker, combine potatoes, onions, garlic, ham, Swiss cheese and mix well.
- In medium bowl, combine soup, ricotta cheese, pepper and marjoram, blend and then pour over the potato mixture.
- Cover and cook on low 8-9 hours or until potatoes are tender.
- Stir in peas and Parmesan cheese, cover and cook on high 30-40 min or until peas are hot.
- Serve immediately.

CHEESY HAM AND SWEET POTATO CASSEROLE
Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

Steps:
- Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
- Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
- Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.
