SOUTHERN CORNBREAD DRESSING
Nothing says "welcome home" like the aroma of a fresh baked Southern Cornbread Dressing. In the South you can guarantee there will be dressing on the table (no stuffing down here!) and one of the most popular dressings is cornbread. We've developed a special Cornbread Crumble recipe specifically for this Southern Cornbread Dressing. Our cornbread is a little-bit sweet, but it blends perfectly with the celery, onions, and sage.

Steps:
- Preheat oven to 400°. Melt butter in a large skillet over medium-high heat; add celery and onions, and sauté 5 to 6 minutes or until onions are tender. Stir in sage, and sauté 1 minute.
- Stir together Cornbread Crumbles and breadcrumbs in a large bowl. Stir in eggs, next 2 ingredients, and celery mixture, stirring until blended. Divide cornbread mixture between 1 lightly greased 13- x 9-inch baking dish and 1 lightly greased 8-inch square baking dish.
- Bake at 400° for 45 to 55 minutes or until set and golden brown.

- Place 1/2 cup butter in a 13x9-inch pan; heat in oven at 425°F for 4 minutes. Combine cornmeal, all-purpose flour, sugar, baking powder, salt, and baking soda; whisk in 3 eggs and buttermilk. Pour hot butter into batter, stirring until blended. Pour batter into pan. Bake at 425°F for 30 minutes or until golden brown. Cool for about 30 minutes at room temperature or until easy to handle. Crumble cornbread into a large bowl; stir in breadcrumbs and set aside. Melt remaining 1/2 cup butter in a large skillet over medium heat; add onions and celery, and sauté until tender. Stir in sage and sauté for 1 more minute. Stir vegetables, remaining 4 eggs, chicken broth, and pepper into cornbread mixture; pour evenly into 1 lightly greased 13x9-inch baking dish and 1 lightly greased 8x8-inch square baking dish. Cover and chill 8 hours. Bake uncovered at 375°F for 35 to 40 minutes or until golden brown. ANDOUILLE SAUSAGE, APPLE, & PECAN DRESSING: Brown 3/4 pound diced andouille sausage in a skillet over medium heat; drain. Add sausage; 2 Granny Smith apples, chopped; and 2 cups chopped toasted pecans to dressing. Proceed as directed, baking 40 to 45 minutes or until done
MAMA'S SOUTHERN CORNBREAD DRESSING
I grew up on mama's cornbread dressing. I have come across many cornbread dressing recipes; however, this is still the best. This stuffing has cubes of cornbread with the addition of onions, celery, eggs, and stock. It's the perfect Southern souffle!

- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x13-inch baking dishes.
- Combine cornbread and stale bread cubes in a large bowl. Set aside.
- Melt butter in a large skillet over medium heat. Add onions and celery and cook until transparent, 5 to 10 minutes.
- Pour onion mixture over the cornbread mixture. Add turkey broth, chopped turkey, soup, giblets, hard-cooked eggs, and flour. Mix so that all the cornbread is wet. Mix in parsley, sage, bay leaves, salt, and pepper. Add beaten eggs. Mixture should be "soupy." Pour mixture evenly into the prepared pans.
- Bake in the preheated oven until cooked through and set, 1 hour to 1 hour and 20 minutes.

Me and a dear friend of mine who is no longer with us, made this dressing for 17 years at Thanksgiving. I still make it and it brings back wonderful memories of her and I laughing, chopping, mixing and tasting. This is a terrific recipe. Hope you make this recipe and make your own memories.

- Directions for cornbread:.
- Preheat oven to 350.
- Combine all ingredients and mix well.
- Pour batter into a greased shallow baking dish.
- Bake for approximately 20 to 25 minutes.
- Remove from oven and let cool.
- Directions for Dressing:.
- Preheat oven to 350.
- Melt the butter in a large skillet over medium heat.
- Add the celery and onion and cook until transparent, approximately 5 to 10 minutes.

From BH&G Heritage Cookbook, so I'll give the exact ingredients and proportions, but this is a recipe you can customize to your taste. No bread or packaged stuffing mixes yet so easy to make. And no vague directions to make your favorite cornbread mix cornbread. This one requires you to make the cornbread using the included recipe and it's well worth it. Prepare the cornbread way ahead and freeze to save time during your holiday gatherings. This one multiplies easily. The texture is perfect, not gummy since no bread. It's the real deal so give it a try this Thanksgiving.

- Prepare Southern Corn Bread and cool.
- Cook celery and onion in broth for 5 minutes. Cool.
- Add vegetables w/ broth, poultry seasoning and salt to crumbled cornbread and mix thoroughly.
- IMPORTANT! Taste for seasoning and adjust BEFORE adding beaten eggs.
- Add eggs.
- Bake in 1 1/2 quart casserole dish at 325 degrees for 30-35 minutes or longer depending on your oven. It's done when toothpick inserted in center comes out clean.
- Can be doubled, tripled, etc as needed.
- Southern Corn Bread.
- In mixing bowl, thoroughly stir together:.
- 1 1/2 cups plain yellow cornmeal (not self-rising or cornbread mix).
- 1/2 cup all-purpose flour.
- 1 teaspoon baking soda.
- 1/2 teaspoon salt.
- Stir in:.
- 1 1/2 cups buttermilk.
- 2 tablespoon melted bacon grease (best)or shortening or margarine.
- 1 beaten egg.
- Pour batter into greased 9x9x2" baking pan. Bake at 400degrees for about 20 minutes.

This is how my Grandmother made it. This can also be used to stuff the turkey, chicken, etc. I have found that the stuffing has a better flavor if mixed the day before you need it then bake right before serving. If you like sage, a pinch adds even more flavor.

Steps:
- Cook onion and celery in some unsalted butter until they are soft, do not brown. Remove from heat.
- Crumble the cornbread and toast into a large bowl, add the onion mixture and mix well.
- Add the chicken broth a little at a time mixing well after each addition until the mixture is moist but not soupy.
- Add the egg, salt and pepper, mix well.
- Turn the mixture into a baking dish and smooth with a spoon.
- Bake at 350: until golden brown on top.

OLD FASHIONED SOUTHERN CORNBREAD DRESSING
I have been making this dressing for years. I found it in one of those community recipe cookbooks. You can use your favorite regular cornbread recipe with this (but not sweet cornbread).

Steps:
- Saute the onion and celery in the canola oil until soft, melt margarine in same pan.
- Mix with remaining ingredients except broth in large bowl.
- Moisten with broth to your taste (I like mine pretty wet, I usually get closer to the 3 cups).
- Place in a casserole dish or aluminum pan.
- Bake at 400°F for 25 to 30 minutes, or until a nice crust develops on the top.
- **May use to stuff a 10 to 14 pound turkey. If stuffing a turkey, add very little broth. It will absorb additional moisture in the turkey. Pack loosely.

- Prepare the Cornbread: Preheat oven to 425°F. Combine self-rising cornmeal mix and, if desired, sugar in a large bowl. Stir together eggs and buttermilk in a medium bowl; add to cornmeal mixture, stirring just until moistened.
