3 tablespoons unsalted butter
1 small yellow onion, small diced
Kosher salt and freshly ground black pepper
1 red bell pepper, seeded and small diced
3 tablespoons all-purpose flour
2 cups whole milk
1 cup shredded Cheddar
1/2 cup cream cheese
1 cup diced ham
1/2 teaspoon freshly grated nutmeg
8 large eggs
1/2 teaspoon chili flakes

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to reach 350 degrees F.
  • Place a heavy-bottomed saucepan over the direct-heat side of the grill. Add the butter and allow it to melt. Add the onions with a pinch of salt and cook until beginning to soften, 2 to 3 minutes. Add the peppers and cook until slightly softened, 2 more minutes. Add the flour and stir to coat the vegetables. Stir in a third of the milk at a time, smoothing out any lumps, and bring to a simmer. Simmer for 30 minutes, allowing the raw flour flavor to cook out.
  • Whisk in the Cheddar and cream cheese and bring back to a simmer. Season with salt and pepper, then stir in the ham and nutmeg. Crack the eggs into the sauce, leaving spacing in between them. Move the pan to the indirect heat side of the grill and cover the grill with a lid. Cook until the eggs are set, 10 to 12 minutes. Sprinkle all over with the chili flakes and serve.

6 ounces hot maple flavored pork sausage (Southern style), crumbled
3 cups water
1 cup half-and-half
Kosher salt
1 cup stone-ground grits or course polenta
Freshly cracked black pepper
4 ounces grated Gruyere
4 farm fresh eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Cook the sausage in a skillet over medium-high heat until cooked through. Remove the sausage to a paper towel to drain. Use the rendered sausage fat to grease 4 large individual ramekins, (gratin dishes or individual cast iron pots work too) and arrange them on a rimmed sheet tray.
  • In a large saucepan, over medium heat, bring the water and half-and-half to a boil and season with salt, to taste. Rapidly whisk in the grits. Continue whisking while returning to a boil, about 5 to 7 minutes. Reduce the heat to a simmer and cook until thick and creamy, stirring frequently, about 20 minutes. Season with pepper and more salt, if needed.
  • Divide the cooked grits between the prepared baking dishes and top each with cooked sausage and grated cheese. Make a divot with the back of a spoon into the cheese and sausage topped grits. Crack the eggs, 1 at a time, into a small bowl and top the ramekins with the eggs. Bake until the egg whites are almost, but not fully set, about 10 to 15 minutes. For more well-done eggs, bake until the whites are set.

4 tablespoons skimmed fat from turkey drippings
3 tablespoons chopped shallots
4 tablespoons unbleached all-purpose flour
Turkey pan drippings, (no fat) mixed with low-sodium turkey or chicken stock to make 4 cups
4 eggs, hard-boiled and chopped
Salt and freshly ground black pepper

Steps:

  • Add the turkey fat to a large pot over medium-high heat. Add the shallots and saute until translucent. Whisk in the flour and cook until medium golden brown in color, about 3 to 4 minutes. Slowly whisk in pan the drippings with the stock and bring to a boil, then reduce the heat. Simmer until thick or until desired consistency is reached, about 10 to 15 minutes. Stir in the chopped egg and season with salt and pepper, to taste, if needed. Serve alongside that big beautiful bird!

I saw this demonstrated on "The Chew" cooking show. This dish looked so delicious I just had to try it -guess what it was delicious and so simple to make.My family wants it to be our weekend breakfast meal. One bite of these delicious eggs and you'll be in heaven!

1 c stone ground hominy grits or quick grits (i used the quick grits)
1 1/2 c water
1 c whole milk
1 tsp salt
4 Tbsp butter
1/2 c shredded cheddar cheese (i used 3/4 cup)
6 large eggs
pepper to taste
1/4 c chopped parsley
1 large ham steak

Steps:

  • 1. Heat oven to 350^' Butter a cast iron skillet,or a 9x13-inch baking dish. Set aside. In a 3 quart heavy bottomed saucepan, bring water, milk and salt to a boil. Gradually stir in grits and reduce heat. Simmer for 20 minutes or until thick and smooth and not watery. Whisk to prevent lumps. Stir in butter and cheese Pour grits into skillet or baking pan. Make 6 depressions in grits mixture about 2 inches apart with the back of a spoon sprayed with oil spray. Carefully break one eggs into each depression. Sprinkle with fresh ground black pepper. Bake uncovered for 10-15 minutes or until eggs are at desired doneness. Garnish with the chopped parsley. Serve hot with grilled ham steak to share.

2 cups water
1 1/4 cups milk
1 teaspoon salt
1 cup quick-cooking grits, not instant (I use Quaker)
1/4 cup butter

Steps:

  • In a small pot, bring water, milk, and salt to a boil.
  • Slowly stir grits into boiling mixture.
  • Stir continuously and thoroughly until grits are well mixed.
  • Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring frequently.
  • Add more water if necessary.
  • Grits are done when they have the consistency of stiff cream of wheat.
  • Stir in butter.
  • Serve with additional butter on top of each portion, or serve with fruit or with a savory meal.
