- Heat grill. In small saucepan, combine all ingredients except ham steak. Cook over low heat until jelly is melted, stirring occasionally.
- When ready to grill, oil grill rack. Place ham steak on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush with jelly mixture. Cook 8 to 10 minutes or until thoroughly heated, turning and brushing once with jelly mixture. Serve with remaining jelly mixture.

- In a large skillet coated with cooking spray, brown ham steaks in batches over medium heat; remove and keep warm., In same skillet, saute onion until tender. Stir in apple juice and mustard; bring to a boil. Add apples. PORK WITH APPLE & HERB STUFFING
An easy one-pan dish that makes an impressive Sunday roast.

- Preheat the oven to 200°C/425°F/gas 7. Put the currants in a bowl, cover with warm water and leave to soak.
- Melt the butter and 1 tablespoon of oil in a saucepan over a medium heat. Peel and finely chop the onion and garlic, then add to the pan and sauté for 8 to 10 minutes, or until softened. Meanwhile, peel core and dice the apples, then remove the crusts from the bread and blitz to breadcrumbs.
- Add the apple to the pan and allow to soften. Pick the thyme and sage leaves straight into the pan, then drain the currants and add to the pan along with the breadcrumbs. Cook for 3 to 4 minutes, until the bread is golden brown, then remove from the pan and set aside to cool.
- Place the pork loin on a wooden board. Score the skin with a sharp knife in a criss-cross pattern. Next, butterfly the loin by laying it, skin-side down, on your board and making a slice down one side of the pork, where the skin slightly comes away from flesh. Continue to make long slices all the way down the pork and slowly roll it out until the end, almost like unrolling a carpet.
- Spread the cooled stuffing mixture over the flesh and season well with sea salt and black pepper. Gently roll the loin back into its original form, ending up with the cut side on the bottom and the skin on top.
- Tightly tie 3 or 4 pieces of string around the pork to make sure no stuffing leaks out. Season the skin.
- Place in a roasting tin, add the cider and 200ml of water and pop in the oven for 15 minutes, before turning down to 180°C/350°F/gas 4 and cooking for 1 to 1¼ hours. Trim and wash the leeks, then chop into large chunks. Shred the cabbage and add to the roasting tin along with the leek chunks for the last 45 minutes.

- Preheat oven to 350°F. Bake bread cubes on large rimmed baking sheet until dry and beginning to brown, about 12 minutes. Place bread in large bowl and cool.
- Melt 4 tablespoons butter in heavy large skillet over high heat. Add onions and celery; sauté until tender and beginning to brown, about 10 minutes. Add apples; sauté until tender and beginning to brown, about 10 minutes. Add mixture to bread. Melt 1 tablespoon butter in same skillet. Add ham; sauté 5 minutes. Add ham to bread; mix in herbs and nutmeg. Add broth to same skillet and bring to boil, scraping up any browned bits. Pour broth into small bowl; cool. (Stuffing and broth can be prepared 1 day ahead. Cover separately; chill.)
- Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Beat eggs into broth; mix into stuffing. Transfer stuffing to prepared dish. Bake uncovered until cooked through and browned on top, about 35 minutes.
SAUTEED OR GRILLED HAM STEAK WITH APPLES

- Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking. Lightly saute, ham on both sides in butter for 3 to 4 minutes a side. Remove ham steak to a plate.
- Add apple and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated. Add the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

- In a large frying pan, heat butter over medium heat until hot.
- Add ham steak, and heat for 4 to 5 minutes on the first side; flip and heat for 2 to 3 minutes on second side.
- Remove ham steak from pan; put on a plate and cover with foil to keep warm.
- Lower heat to low; add flour to butter and stir for 1 minute.
- Add water, maple syrup, Dijon mustard and soy sauce. Stir constantly, scraping up the bits from the bottom of the pan. Stir for 2-3 minutes or until gravy is thick and smooth,
- Add ham steak to gravy, and heat until desired temperature (approximately 2 to 3 minutes).
- Serve with warm biscuits.

For the stuffing, you can experiment with different types of bread or flavored croutons. I especially like making my own stuffing so I can control the sodium level - and especially in this case since ham is salty anyway.

- In medium saucepan over medium heat, saute celery in butter; remove from heat and add next 7 ingredients; mix well and set aside.

- Preheat oven to 450°F.
- Remove the fat from around the ham steaks; using whole cloves stud the ham and keep aside.
- Add celery and onion to butter and sauté for about 10 minutes. Toss slightly after adding bread cubes, cinnamon, egg, parsley and salt.
- Take a big double-thick square aluminum foil, put one of the ham steaks in the middle and cover using stuffing mixture. Arrange the other ham steak on the top. Use toothpicks, if required, to secure the second ham.
- Pull up the aluminum foil, cover the ham and seal. Fold the ends so that ham is completely secured inside.
- Put on on the oven rack and bake for25 minutes.
- Unwrap the foil and bake for 10 more minutes.
- Arrange on the platter and serve hot.

- Preheat the oven to 375 degrees F; butter a shallow 3-quart baking dish. Melt 6 tablespoons butter in a large pot or Dutch oven over medium-high heat. - Place bread cubes in a single layer in a 13-in. x 9-in. x 2-in. baking pan. Bake at 325° for 20-25 minutes or until golden, stirring occasionally. Place in a large bowl set aside.
