FINNISH SPLIT PEA SOUP

Finnish split pea soup image

This hearty split pea soup gets its flavour from ham hock. In Finland it's traditionally eaten on Thursdays, with pancakes for dessert!

Provided by The Hairy Bikers

Categories     Main course

Yield Serves 6

Number Of Ingredients 10

300g/10½oz split peas
pinch bicarbonate of soda
1 small ham hock
2 onions, one left whole with 2 cloves stuck in and one finely chopped
1 blade of mace
2 bay leaves
1 carrot, finely chopped
1 tbsp hot mustard
100ml/3½fl oz double cream (optional)
salt and freshly ground black pepper

Steps:

  • Put the split peas in a bowl with the bicarbonate of soda. Cover with cold water and leave to soak overnight.
  • Put the ham hock in a large saucepan, cover it with 1½-2 litres/2½-3½ pints cold water and bring to the boil. As soon as it has reached boiling point remove from the heat. Drain, wash the ham hock and the pan to get rid of any starchy foam.
  • Put the ham back in the pan and cover with water again. Add the whole onion studded with cloves, mace and bay leaves to the pan. Bring to the boil, then simmer for an hour.
  • Rinse the split peas and put in a saucepan, bring to the boil and boil for 10 minutes. Drain the peas and add to the ham hock pan along with the chopped onion and carrot. Simmer until the peas are tender, this should take 45 minutes to 1 hour. Top up with more water if needed.
  • Remove the ham hock, whole onion, bay and mace. Break up the ham hock, discarding the skin and bone and pull the meat into pieces.
  • Add the mustard to the soup and season with salt and pepper. Use a stick blender to blend to a rough purée, add the ham hock meat back into the soup and warm through.
  • Lightly whip the cream, if using, and fold gently into the soup. Serve with chunky bread.

Time 1h40m

Yield 8 servings

Number Of Ingredients 21

1 pound dried split peas
1 ham hock
3 tablespoons unsalted butter
1 cup finely chopped yellow onions
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
2 teaspoons minced garlic
1 pound Smithfield ham, chopped
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
8 cups water
1 bay leaf
2 teaspoons fresh thyme
Parmesan Truffled Potato Chips, recipe follows
2 pounds red bliss potatoes, scrubbed well and patted dry, skins left on
4 cups vegetable oil, for frying
1/4 cup grated Parmesan
1 tablespoon truffle oil
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
  • Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain and set aside.
  • In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
  • Add the ham hock and ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water as needed, if the soup becomes too thick or dry.)
  • Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately with Parmesan Truffled Chips on top.
  • Using a mandolin or very sharp, heavy knife, slice the potatoes into rounds as thin as possible, and place in a large bowl of water to prevent discoloration.
  • Heat the oil in a large, heavy pot to between 340 and 350 degrees F.
  • Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately.

HAM HOCK SPLIT PEA SOUP

Ham Hock Split Pea Soup image

Every Christmas we make a ham...and then we make pea soup...I love traditional pea soup but wanted it to have just a little more "oompf". so I added a little bit of spices and the results are pretty yummy.. This is not a "quick" recipe, but the flavors of the homemade ham stock are really worth the extra time. Hope you all like it.

Categories     Ham

Time 6h

Yield 20 cups, 8-12 serving(s)

Number Of Ingredients 17

3 cups split peas (picked over and rinsed)
6 cups ham stock (boil down ham bone)
5 bay leaves
5 cups chicken broth (**)
3 cups ham, diced
3 carrots, finely chopped
2 celery ribs, with leaves finely chopped
1 onion, finely chopped
2 garlic cloves, finely chopped
1 teaspoon sugar (optional)
1 teaspoon lemon juice
1 bay leaf
salt & pepper
1 dash parsley
1 dash thyme
1 dash marjoram
1 dash cayenne pepper

Steps:

  • Preperation Steps:
  • Make 6 cups of ham stock using either left over ham bone or store bought hamhock - sometimes for a little kick I use a smoked ham or ham hock. Put the ham hocks or ham bone in a pot add 8 quarts of water and the bay leaves and cook on a slow simmer for about 2 hours - this should yield about 6 cups of stock. Let this cool and then taste. **If it is salty then add plain water first and then chicken stock to create a total of 5 additional cups of liquid - total stock should equal about 10 to 12 cups. Put cooled stock in refrigerator to allow fat to rise to the top. Skim off as much fat as possible and set aside.
  • Dump the uncooked peas in a dish and pick over.take out any rocks, off color peas etc. Then put them in a pot and add water. Remove any floating debris. Drain and set aside.
  • Cooking:
  • In a large stock pot, heat 2 - 4 Tablespoons of the ham fat on a medium high heat. Add the onions, carrots and celery and saute till tender.
  • Add all the remaining ingredients except the salt and pepper. Reduce the heat and simmer for 45 minutes. Taste. Now add salt and pepper as needed. Continue to cook for an additional 45 minutes or until peas are tender.
  • Remove the bay leaf.
  • Final step. If you like lumpy, clear broth pea soup then leave as is and enjoy. If you want it a little thick then partially puree 1/2 of the soup and if you want no lumps.Puree away.we use one of those blender sticks and mash around till its partially pureed.
  • Hope you all enjoy.
