Steps:
- In a skillet, melt butter over medium heat. Saute mushrooms, pepper and onions until tender. In a bowl, beat eggs until foamy; stir in ham. Pour over the vegetables. Let eggs set on the bottom, then lift the edges to allow any uncooked egg to flow underneath. Cover and cook until the eggs are set, about 3 minutes. Sprinkle with cheese and cut into wedges to serve.

HAM & CHEESE SANDWICH FRITTATA
This quick and easy frittata is great for brunch but is hearty enough for a tasty dinner. Packed with the garlic, onion, and mustard you taste those flavors in every bite. What we really loved was the butter toasted bread addition - so yummy. While the recipe calls for deli ham, this would be great with leftover baked ham too.

Steps:
- Preheat oven to 350 degrees. On the stove, preheat a cast iron skillet to medium heat.
- Cut bread into cubes, leaving the crust on. Also, chop deli ham into small pieces. Set both aside.
- In a large bowl, whisk together eggs, milk, and spices. Set aside.
- Melt 3 Tbsp of butter in the skillet and add the cubed bread. Gently toss with spoon until bread begins to brown and becomes crispy; about 5 minutes.
- Add last Tbsp of butter and chopped ham to skillet and cook for another 2-3 minutes until ham starts to sizzle.
- Pour egg mixture over bread and ham in skillet. Remove skillet from stove and place in oven.
- Bake in 350 degree oven for 12-13 minutes until eggs are firm in the center.
- Remove skillet from oven and sprinkle shredded cheese over the top. Return to oven and bake for another 3-4 minutes until cheese begins to bubble.
- Let cool for about 5 minutes. Cut into 8 slices and serve with a dollop of sour cream on top, if desired.
HAM AND CHEESE FRITTATA
A little dense than a regular frittata as there is stuffing in the recipe. I have also made this using frozen spinach or shredded zucchini instead of broccoli. I also use fresh broccoli and blanch it before adding to recipe. It's perfect for a light dinner or Sunday brunch. We make it for dinner and then either DH and I will eat the remainder for lunch the next day.

- Preheat oven to 375°F.
- Beat eggs, milk and sour cream in a large bowl with wire whisk until well blended.
- Add broccoli, dry stuffing mix, ham and half of the cheese and mix together.
- Poor into a greased 2-quart baking dish or 9 inch pie plate and cover loosely with foil.
- Bake for 45-50 minutes.
- Uncover and sprinkle with remainder of cheese and bake 5 minutes more or until cheese is melted.

- Preheat oven to 375 degrees F.
- Mix together the chopped cheese, Canadian bacon, and chives and season with a few grinds of pepper. In a bowl, beat the eggs. Brush the muffin tins with melted butter. Using a teaspoon, fill the 24 mini-muffin cups halfway with the cheese mixture. Using a ladle, fill the cups to just below the edge with the beaten eggs. Bake until golden, about 12 minutes. Remove and let cool to handle, then arrange the egg bites on a plate and serve.

- Mince garlic. Using the flat part of the knife, press down on the garlic clove until it crushes. Cut off the stubby end and peel off the skin. Chop with knife.
- In skillet, sauté minced garlic, diced potatoes and onions in olive oil.
- Once brown, add a few teaspoons of water and cook another 1-2 minutes. Then add in the diced ham.
- In bowl, whisk eggs, milk, salt and pepper.
- Pour egg mixture over the ham, potatoes and onions.
- Cook over medium heat for 5 minutes, until the eggs have set around the edges or the skillet.
- Place skillet into the oven and bake at 450°F for 5-10 minutes, or until eggs have set in the middle.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Beat eggs and milk in a bowl.
- Melt butter in a large, oven-safe skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.

- Another way would be to saute the garlic, onions, potatoes and ham in the skillet. Then place those into an 8x8-inch baking dish, then pour the eggs over and bake it. It may take a bit longer to bake since you don't cook the eggs on the stovetop at all. Just bake it until the eggs have set in the middle.

- Heat oven to 400°F.
- Heat oil in a non stick frypan, add ham cubes and onions.
- Sauté until onions are transparent and just turning brown, about 5 to 7 minutes.
- Add red, green and jalapeño peppers, celery and jalapeño jelly, if using.
- Sauté 3 to 5 minutes or until jelly melts.
- In a large bowl, beat eggs with salt and pepper, until frothy and about double in volume.
- Over high heat pour egg mixture evenly over evenly spread sautéed mixture.
- Move mixture around just a little.
- Place lid on frypan and leave on high heat until bottom is set, being careful not to burn.
- Do not remove lid.
- Place covered frypan on middle rack in oven and cook approximately 20 minutes, until well risen and golden (I have a see-through lid on my frypan).
- Remove lid and sprinkle with cheddar cheese, turn oven to broil, broil for 2 or 3 minutes until cheddar melts.
- Slide onto platter and cut into 4 pieces, serve hot with salsa if desired.

- Preheat oven to 350 degrees.
- Dry and lightly salt potatoes.
- In heavy skillet, heat 1/4 cup oil over medium heat.
- To skill add alternating layers of potatoes, shallots, green pepper and ham or Canadian Bacon.
- Cover skillet and cook on low for 10 minutes until tender (occasionally lift potatoes to prevent them from sticking).
- Remove from heat.
- Beat eggs with whisk until foamy.
- Add cayenne pepper and sun-dried tomatoes.
- Sprinkle cheese on vegetables.
- Spread the egg mixture evenly in the pan, lifting vegetables allowing egg mixture to run under and between potatoes.

- In skillet cook onion and green pepper with salt& pepper in 1 Tbls.
- of olive oil over low heat until green pepper is tender.
- In a bowl whisk together the eggs, ham, 2/3 cup Swiss cheese, and salt& pepper.
- Add onion and green pepper to egg mixture and stir until combined well.
- In skillet heat remaining 1/2 Tbls.
- olive oil over moderate heat until hot and pour in mixture, distributing ham and green pepper evenly.
- Cook frittata without stirring for 8 to 10 minutes or until edge is set but center is still soft.
- Sprinkle remaining 1/3 cup Swiss cheese over the top.
- (If the skillet handle is plastic, wrap it in a double thickness of foil).
- Broil frittata under preheated broiler about 4 inches from the heat for 2 to 3 minutes or until the cheese is golden.
- Cool in skillet for 5 minutes.
- Slide the frittata onto a serving plate and cut into wedges.
- Serve warm or at room temperature.
