Warning! Addictive! This is such a delicious version of traditional banana bread and is extremely popular whenever I make it that I had to share it on Allrecipes! I got it from an old Bed and Breakfast recipe from a place in Maryland and make it every year around the holidays! I don't use the walnuts, but I hear that it is really good for those that like them. This recipe has definitely become a new tradition!

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup butter
¾ cup white sugar
1 large egg
3 ripe bananas, mashed
¾ cup butterscotch chips
½ cup chopped walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 9x5-inch loaf pans. Set aside. Sift the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl. Set aside.
  • Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat in the egg, then stir in the mashed bananas. Pour in the flour mixture, mixing until just incorporated. Fold in the butterscotch chips and walnuts; mixing just enough to evenly combine. Pour the batter evenly into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 28 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

2 ripe bananas
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2-1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup sugar
2 large eggs
1/4 cup butter, melted
1/4 cup milk
1 cup nuts, chopped (optional)
6 ounces butterscotch chips

Steps:

  • Mash the ripe bananas; set aside.
  • Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
  • Combine mashed bananas, sugar, eggs and melted butter. Blend well.
  • Alternately blend flour mixture and milk. Stir in nuts (if using) and butterscotch chips, but leaving a little behind to sprinkle on top.
  • Pour into greashed 9-1/2-inch loaf pan.
  • Sprinkle top with reserved nuts and chips.
  • Bake at 350° for 60 minutes (or shorter time for smaller loaves).
  • Cool.

1 quart heavy cream
8 ounces (2 sticks) unsalted butter, plus more for greasing the cake pan
1 pound brown sugar
1 teaspoon vanilla extract
1 loaf white bread, preferably day-old
1 teaspoon kosher salt
Whipped cream or ice cream, for serving

Steps:

  • Combine the cream, butter, sugar and vanilla extract in a medium saucepan over medium heat. Let the butter melt, then slowly simmer the cream until it reduces slightly, about 10 minutes. Be careful that the mixture doesn¿t boil over; if it does, reduce or remove from the heat.
  • Break the bread up into 1-inch pieces. Day-old bread is best but any bread will work. Place the bread in a large mixing bowl and set aside.
  • Preheat the oven to 350 degrees and grease an 8-inch-by-8-inch cake pan.
  • Add the reduced heavy cream mixture to the bread pieces and mix until combined. Transfer to the prepared cake pan and sprinkle the kosher salt over the top. You want just a light sprinkle to give it that salty and sweet taste. Bake until firm in the middle, like brownies, about 20 minutes. Serve with whipped cream or ice cream.

1/4 teaspoon salt
125 g caster sugar
3 teaspoons baking powder
90 g butter or 90 g margarine
1 egg
1 banana
1 1/4 teaspoons vanilla extract
140 g brown sugar
1/4 cup golden syrup
250 g boiling water

Steps:

  • PREHEAT oven to 180 C/ 350°F.
  • COMBINE brown sugar, golden syrup and boiling water in a put; bring to a boil for about 2- 3 minutes; set aside.
  • SIFT flour, sugar, baking powder and salt into a bowl.
  • ADD beaten egg, melted butter, vanilla extra and mashed banana.
  • POUR combined mixture (Steps 3 and 4)into greased casserole dish (use 3.5 Litre pyrex). THEN very slowly, pour brown sugar/golden syrup over what is in the casserole dish.
  • Bake uncovered 30-40 minutes.
  • ENJOY!

1/2 cup heavy cream, warmed
1 tablespoon bourbon
1 teaspoon fresh lemon juice
3/4 teaspoon kosher salt
For the bread pudding:
Salted butter, for the baking dish
1 1-pound loaf brioche, crusts removed, cut into 1/2-inch cubes (about 13 cups)
5 large eggs
3/4 cup sugar
1/2 teaspoon kosher salt
4 cups whole milk
1 cup heavy cream
1 tablespoon vanilla extract
3 bananas, halved lengthwise and sliced 1/2 inch thick
Sea salt, for sprinkling

Steps:

  • Make the caramel: Combine the sugar and 1/4 cup water in a medium saucepan over medium heat, stirring just until the sugar dissolves. Cook, gently swirling the pan but not stirring, until amber, about 10 minutes. Brush any sugar crystals off the side of the pan with a wet pastry brush. Remove from the heat and carefully whisk in the butter, heavy cream, bourbon, lemon juice and kosher salt (the mixture will bubble). Pour into a bowl and set aside.
  • Make the bread pudding: Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish. Spread the bread cubes on a rimmed baking sheet and bake until dry and golden, about 20 minutes. Let cool completely.
  • Whisk the eggs, sugar and kosher salt in a large bowl, then whisk in the milk, heavy cream and vanilla until smooth. Fold in the toasted bread and the banana slices. Transfer half of the mixture to the prepared baking dish and spread in an even layer. Drizzle with 1/2 cup of the caramel, then top with the remaining bread mixture. Cover with plastic wrap and refrigerate at least 1 hour or overnight. Cover and refrigerate the remaining caramel until ready to serve.
  • Preheat the oven to 350 degrees F. Sprinkle the bread pudding with sea salt and bake until golden brown and set, about 1 hour, 15 minutes. Warm the remaining caramel and drizzle on top.

But with a few simple tweaks and some new ingredients, it can feel fresh. The addition of buttermilk gives the custard a tangy zip of acidity, and tossing the Nilla Wafers with salted brown butter imparts a nutty, caramel-like flavor. Sour cream is incorporated into the whipped-cream topping, which helps the heavy cream stay firm while refrigerated and turning this into a fail-proof make-ahead dish. Garnishing the top with some more crushed cookies and chopped salted peanuts provides the pudding with crunch.

1/2 cup heavy cream
1 teaspoon vanilla extract
3/4 cup granulated sugar
4 egg yolks
2 tablespoons cornstarch
1/2 teaspoon kosher salt
1 cup buttermilk
4 tablespoons salted butter (1/2 stick)
1 (11-ounce) box vanilla wafer cookies, such as Nilla Wafers
1 1/2 cups heavy cream
1/2 cup sour cream
1/2 cup confectioners' sugar
4 large bananas, sliced
1/2 cup salted peanuts, chopped

Steps:

  • Prepare the pudding: Add milk, heavy cream and vanilla extract to a medium saucepan and heat over medium. Meanwhile, whisk together sugar, egg yolks, cornstarch and salt in a medium heatproof bowl. Once the milk begins to bubble slightly around the edges, remove from heat. Slowly pour a ladleful of the warm milk into the yolk mixture, whisking constantly. Continue to slowly incorporate the rest of the warm milk, ladle by ladle, into the yolk mixture until thoroughly combined.
  • Pour the mixture back into the saucepan and heat over medium. Whisk until the mixture begins to bubble and is thick enough to coat the back of a spoon, 2 to 3 minutes. Pour the warm pudding into a large heatproof bowl and let cool for 5 minutes before whisking in the buttermilk. Place plastic wrap over the pudding, gently pressing the wrap to touch the top of the pudding. Refrigerate for at least 3 hours before using.
  • Prepare the cookie layer: Add the salted butter to a large sauté pan or deep skillet and melt over medium-low. Cook, stirring often, until the butter begins to foam. Once the butter gives off a nutty scent and darkens to a caramel-like color, about 4 minutes, remove the pan from the heat and add the wafers. Toss the Nilla Wafers to coat them with butter. Set aside.
  • Prepare the whipped cream: Whip 1½ cups heavy cream in a stand mixer fitted with the whisk attachment or with a hand mixer on medium-high until it forms soft peaks, about 3 minutes. Turn off the mixer and add the sour cream. Turn the mixer on low and gradually add the confectioners' sugar. Once incorporated, whip on high until the cream has formed soft peaks again. Set aside.
  • Reserve 12 Nilla Wafers for garnish. Pour the rest of the cookies into a 9-by-13-inch baking dish and arrange in an even layer. Scatter the sliced bananas evenly on top. Pour the chilled pudding over the bananas and spread the pudding in an even layer to coat. Top with the whipped cream mixture. Cover and refrigerate overnight (or at least 4 hours).
  • Place the remaining Nilla Wafers in a plastic bag and crush them with a rolling pin. Remove the pudding from the refrigerator and garnish with crushed cookies and chopped peanuts just before serving.
