2 teaspoons vegetable oil
4 slices deli ham, chopped into small pieces
2 eggs
2 teaspoons chopped fresh chives, divided
¼ teaspoon salt
freshly ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
  • Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

1 tablespoon unsalted butter
1/2 cup ham pieces
3 medium fresh free-range eggs
Kosher salt and black pepper
3/4 cup cheddar cheese

Steps:

  • Gather the ingredients.
  • Heat butter in an 8-inch skillet or omelet pan over medium heat. Add ham pieces and cook gently to warm through for 3 to 4 minutes.
  • Break eggs into a small bowl. Gently mix with a fork. As mentioned above, do not whisk.
  • Tip gently stirred eggs over ham in skillet over medium heat. Using a fork, gently move egg around pan, pushing cooked egg from the pan's bottom and allowing uncooked, liquid egg to run into its place. Gradually, all the eggs will start to set.
  • Immediately once egg starts to set, sprinkle cheese and stop stirring. Let omelet sit for about one minute for heat to start to reach cheese. Sprinkle over a tiny pinch of salt and black pepper.
  • Once cheese is starting to warm, take a spatula and carefully nudge omelet's lower edge two-thirds of the way over.
  • Take a warmed plate, hold skillet over plate and gently tip pan away from you and roll omelet out and over onto plate, so the seam is underneath. This is easier to do than it sounds. Serve omelet immediately.

Japanese-Style Omelet with Ham and Cheese image

Inspired by tamagoyaki, a sweet yet savory Japanese rolled omelet, this version omits the hint of sugar but is rolled in the typical fashion. Tamagoyaki doesn't usually feature add-ins, but as with any omelet, this style can be filled with a wide range of ingredients, including the ham and cheese used here.

3 large eggs
1 tablespoon milk
Kosher salt
1 thin slice ham, finely chopped
1/4 cup shredded Gruyere or Cheddar
About 1 tablespoon vegetable oil
2 teaspoons finely chopped fresh chives

Steps:

  • Beat the eggs with the milk and 1/4 teaspoon salt in a small bowl. Stir the ham and cheese together in another small bowl.
  • Heat a Japanese rectangular omelet pan over medium heat until hot. Brush with little bit of oil. Add just enough of the egg mixture to coat the bottom of the pan when tilted. Let the egg cook until just set on the bottom, then use chopsticks or a rubber spatula to roll the sheet of egg into a log shape and push it to the far end of the pan. Brush the pan with more oil and again add just enough egg to coat the bottom when tilted, this time lifting up the rolled egg so that the raw egg flows underneath it. (If the egg is browning or setting too quickly, control the heat by lifting the pan off the burner for a moment.) When the underside is just set, roll the log towards the handle of the pan, then push the log back to the far end. Repeat; when you have made 3 layers, make another layer in the same manner and add half the ham and cheese. Make another layer, using the rest of the ham and cheese. Finish making the omelet in the same manner with the remaining egg.
  • Turn the omelet out onto a plate, sprinkle with chives and serve.

  • In a small bowl, whisk together first 3 ingredients. In a medium-sized pan, melt garlic butter over medium-high high. Add egg and cream mixture. Cook for 2-3 minutes until omelet is nearly cooked through. Add green onions, ham, and cheese to one side of the omelet. Fold omelet in half and cook for 1 minute until cheese is melted. Transfer to a plate and top with salsa. Enjoy!

2 slices roughly torn ham or gammon
2 eggs , whites and yolks separated
1 tsp Dijon mustard
1 tbsp chopped fresh dill or basil

Steps:

  • Mix most of the cheese with the ham or gammon, egg yolks, mustard, herbs and some seasoning. Whisk egg whites until stiff. Using a rubber spatula, gently fold the whites into the yolk mixture until evenly mixed.

50 ml soymilk
1 slice ham
1/2 stalk spring onion
1 teaspoon butter
3 1/2 tablespoons cheddar cheese

Steps:

  • Wash and chop spring onion.
  • Wash and slice the ham.
  • In a mixing bowl, combine eggs, ham, milk and onion. Beat well.
  • Heat a frying pan on medium and melt margarine.
  • Pour egg mixture into pan. As the omelette begins to set, lift up edges with egg flipper so uncooked portion of egg can flow under the cooked portion.
  • When eggs are set but the top is still moist, sprinkle ¾ of the cheese over it.
  • Fold one edge of the omelette over the cheese, then sprinkle the remaining cheese over the top.
  • Slide omelette onto the plate and cut into portions.
