1-1/2 cups cubed cooked chicken breast
1 celery rib, thinly sliced
1/2 cup chopped red apple
1/4 cup dried cranberries
1/3 cup fat-free mayonnaise
2 lettuce leaves
1 bacon strip, cooked and crumbled
2 tablespoons crumbled blue cheese
2 tablespoons chopped almonds

Steps:

In a small bowl, combine the chicken, celery, apple and cranberries. Stir in mayonnaise. Serve on lettuce; sprinkle with bacon, blue cheese and almonds.

Ingredients

1 lb chicken breast, cooked and cubed
1 cup sliced celery
1/2 cup chopped red onion
1/2 cup dried sweetened cranberries
1/4 cup finely chopped walnuts
1 medium granny smith apple, chopped into 1/4-inch pieces
lettuce leaf, washed & dried
1/4 cup red wine vinegar
1/4 cup low-fat mayonnaise
1 garlic clove, minced
1 teaspoon Dijon mustard
1/8 teaspoon ground black pepper
salt

Steps:

In a small jar add all ingredients and shake until blended.
Combine all salad ingredients in a bowl and pour dressing over, gently tossing together until blended. Cover and refrigerate until chilled.
Before serving toss again and adjust seasonings if needed.
Serve on lettuce leaves.
This recipe is low fat and low calorie.

1 cup low-fat mayonnaise (plain yogurt is another possibility although I haven't tried it) or 1 cup salad dressing (plain yogurt is another possibility although I haven't tried it)
2 tablespoons lime juice
1 1/2 teaspoons curry powder (or more to taste)
4 1/2 cups cooked chicken, chopped
2 chopped apples or 2 granny smith apples
1 cup dried sweetened cranberries (Craisins)
1 cup thinly sliced celery
1/2 cup chopped pecans
1/4 cup chopped scallion

Steps:

Combine mayonnaise, lime juice and curry powder in large mixing bowl.
Stir in remaining ingredients.

1 (12 1/2 ounce) can chicken breasts
1 large granny smith apple, peeled, cored, and diced
1/3 cup dried cranberries
1 stalk celery
1/3 cup light mayonnaise
1/3 cup light sour cream
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
pepper
4 flour tortillas

Steps:

In medium bowl, shret chicken.
Add apple, cranberries, and celery.
In small bowl mix mayonnaise, sour cream, lemon juice, cinnamon, salt, and pepper.
Stir dressing into chicken mixture.
Spoon onto tortillas, wrap, and enjoy.

Ingredients

3 tablespoons all-purpose flour
salt and pepper
4 boneless chicken breasts, skin on
2 tablespoons oil
3/4 cup verjuice or 3/4 cup fruity white wine
2 large shallots, finely chopped
1 garlic clove, finely chopped
1 1/2 cups chicken stock
1/2 cup light cream
1 cup dried cranberries
1 teaspoon lemon juice
1 teaspoon chopped fresh tarragon

Steps:

Heat the oil in a large skillet over medium high heat.
Combine the flour salt and pepper and dredge the chicken breasts in this, shaking off any excess.
Add the chicken breasts skin side down to the skillet, cook until golden brown, turn over and repeat.
Transfer the chicken to a baking dish, place in oven and bake for 12-15 minutes.
Drain the skillet and return to the heat-reducing it to medium.
Deglaze the pan with half the verjuice, scraping the bottom with a wooden spoon.
Add the shallots, garlic, stock and cream, and simmer until reduced to a consistency that coats the back of a wooden spoon.
Add the remaining verjuice, dried cranberries and lemon juice.
Stirring with a whisk, reduce sauce a bit more, then season with salt and pepper and add the chopped tarragon.
To serve, slice the chicken breasts on an angle, and fan out onto a plate.
Top each breast with a generous amount of the sauce.

This is my favorite salad ever. The blue cheese gives just a hint of the flavor that is brought out by the balsamic dressing. This salad is almost identical to the TGI Fridays pecan crusted salad, but the chicken is not rolled and breaded in pecans and bread crumbs and fried. It's a healthier version of it.

1 (10 -15 ounce) bag romaine lettuce
1 (5 ounce) package dried cranberries
1 (11 ounce) can mandarin oranges
1/4 cup pecans
2 chicken breasts
balsamic vinaigrette (Newman's Own is great)
1 (4 ounce) package of crumbled blue cheese

Steps:

Grill the chicken on an outdoor grill or a Foreman grill for about 9 minutes.
Wash the lettuce and cut it up. Mix in the chicken, cranberries, oranges, pecans. Sprinkle blue cheese over top.
Drizzle the balsamic vinaigrette over the lettuce to taste.
