HONEY WALNUT CREAM CHEESE
We came up with this recipe after trying Trader Joe's® honey walnut cream cheese; this was much better since we used the orange blossom honey my mom buys from local farmers' market. She suggest toasting the walnuts. To make a sweeter version, add a tablespoon of granulated sugar while pulsing in the processor. Spread a layer on a slice of your favorite bread and enjoy! Yum!

- Preheat oven to 350 degrees F (175 degrees C).
- Place walnuts on a baking sheet. Bake until toasted and fragrant, about 10 minutes. Transfer walnuts to a plate to cool. When walnuts are cool, transfer to a resealable plastic bag and crush with a rolling pin.
- Combine cream cheese, honey, and walnuts in a food processor and pulse until creamy.

- To make the cake Preheat the oven to 250 degrees. Grease three 9-inch round cake pans and dust them well with flour. Or line the bottoms of each pan with waxed paper, then grease the waxed paper and dust with flour. Set pans aside. Beat the butter and shortening until creamy. Gradually add the sugar, beating well. Add the egg yolks one at a time to the mixture, beating well after each addition. In a small bowl, combine the buttermilk and baking soda and stir until the soda is dissolved. With your mixer on low, add some flour to the butter mixture, add buttermilk mixture, then add the rest of the flour. Stir in the vanilla, walnuts, and coconut. In another bowl, beat the egg whites on high speed until foamy, then add the cream of tartar and beat until stiff peaks form. Gently fold the stiff egg whites into the cake batter and pour into the prepared pans. Bake 20 to 25 minutes or until a cake tester comes out clean. Remove from the oven and cool 5 minutes in the pans. Remove from the pans, brush rum on the tops of the layers, and finish cooling on wire racks. When completely cool, stack the cakes and spread with the cream cheese frosting in between the layers and on top. Garnish with walnut halves. - Cream butter and shortening.
- Add sugar and cream together.
- Add eggs 1 at a time, beating well after each.
- Add sour cream and mix together.

- Process 2/3 cup nuts in food processor or blender until finely ground. Prepare cake batter as directed on package; stir in ground nuts. Pour into 2 (9-inch) round pans sprayed with cooking spray.
- Bake 25 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove cakes from pans to wire racks; cool completely.
- Meanwhile, cover baking sheet with foil; spray with cooking spray. - Combine egg whites, sugar, water, and cream of tartar in in the top of a double boiler over simmering water. Beat at low speed until mixture reaches 140 degrees F (60 degrees C). Do not stop beating while checking temperature, otherwise egg whites will overcook. Beat on high speed until mixture reaches 160 degrees F (71 degrees C), 2 to 4 minutes.
- Remove bowl from heat and stir in vanilla and black walnut extracts. Beat egg whites to cool on high speed, 3 to 5 minutes.
- Place a large dollop of the beaten egg white mixture in a separate bowl. Add butter and beat until well combined. Continue beating in dollops of egg white mixture until all egg white is incorporated and frosting is smooth and fluffy. Use to frost any cake; garnish with black walnuts.
