Tasty appetizers for the holidays made with a cream cheese pastry and savory mushroom filling.

1 (8 ounce) package cream cheese
1 cup butter
1 ½ cups all-purpose flour
2 tablespoons butter
¾ pound fresh mushrooms, finely chopped
½ medium onion, chopped
⅛ teaspoon dried thyme
¼ teaspoon salt
½ teaspoon ground black pepper
1 ½ teaspoons all-purpose flour
½ cup sour cream

Steps:

  • In a medium bowl, mix together the cream cheese and 1 cup of butter until well blended. Mix in the flour until fully incorporated. Pat into a ball, and refrigerate while you make the filling.
  • Melt 2 tablespoons of butter in a large skillet. Add the mushrooms and onion. Season with thyme, salt and pepper. Cook and stir until tender, about 5 minutes. Sprinkle the flour over everything so it won't get lumpy, then reduce the heat to low, and stir in the sour cream. Heat just until thickened, then remove from the heat.
  • Preheat the oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to about 1/4 inch thickness. Cut into 3 inch rounds. Place a small amount of the mushroom mixture on one side of each circle, then fold the dough over and press to seal. Prick the tops with a fork to vent steam, and place the pastries on a baking sheet. (They can also be frozen at this time until needed.)
  • Bake for 15 minutes in the preheated oven, or until golden brown. If baking frozen turnovers, it may take an additional 5 minutes.

Number Of Ingredients 9

250ml milk
1 tbsp each butter and flour, mixed to a paste, plus extra for dusting
140g button mushroom , cut into quarters
1 tbsp olive oil
140g ham , chopped into small pieces
85g leftover cheese (amount will vary according to type - go with your taste buds), cut into small pieces
1 tbsp chopped herbs - tarragon, parsley and chives all work well
500g block puff pastry
1 egg , beaten

Steps:

  • The first thing to do is to make a thick white sauce that will be the base of the turnover filling. Bring the milk to a simmer, then add the butter and flour paste. Whisk the paste into the simmering milk and allow it to boil for 3-4 mins, whisking gently all the time to prevent it from catching. You should now have a very thick white sauce. Cool the sauce in a bowl. Fry the mushrooms in the oil for 3-5 mins until golden, then leave to cool.
  • Place the ham, cheese and mushrooms into a bowl, then gradually add the white sauce until everything is well coated. Finally, add the herbs.
  • Roll out the pastry on a floured surface to about the thickness of a £1 coin and cut out 4 saucer-size rounds (about 18cm wide), re-rolling the trimmings if you need to. Brush the edges of each round with beaten egg. Spoon the mixture onto 1 side of each round, then fold over and seal the edges well. The turnovers can now be frozen for up to 1 month. Brush the turnover with the remaining egg, then chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Place the turnovers on a baking sheet and bake for about 35 mins until puffed up and golden. Leave to cool slightly and enjoy warm.

1 tablespoon butter
1 tablespoon flour (mixed to a paste mixed with the butter for a paste)
140 g button mushrooms, cut into quarters (5 oz)
1 tablespoon olive oil
140 g ham, chopped into small pieces (5 oz)
85 g leftover cheese, cut into small pieces (3 oz)
1 tablespoon chopped herbs, tarragon, parsley and chives all work well
500 g puff pastry (1 1/8 lbs)

Steps:

8 ounces deli ham, thinly sliced
4 ounces swiss cheese, thinly sliced
1/2 yellow onion, cut into thin rings

Steps:

  • Heat oven to 400 F.
  • Roll the pizza dough into a 14 inch circle and cute into 8 triangles.
  • Stack a piece of ham, cheese, and onion on the bottom of each triangle and roll the dough up around the filling. (Some of the filling will stick out the ends.).
  • Transfer the rolls to a parchment-lined baking sheet. Bake until golden and crisp; about 20 minutes.

This is an excellent way to use up leftover ham, but you could also use leftover sausage. These are so good right out of the oven with a cup of hot tea and fresh fruit, but also freeze very well. Just microwave for 20-30 seconds and it's an instant hot breakfast.

1 1/4 cups all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk (I use skim)
1/4 cup vegetable oil
1 egg
1 cup ham, diced
1/2 cup mushroom, fresh, diced
3/4 cup cheddar cheese, shredded

Steps:

  • Heat oven to 400.
  • Line 12-cup muffin tin with papers, or coat with non-stick spray.
  • Combine all dry ingredients.
  • Combine all wet ingredients.
  • Stir wet ingredients into dry ingredient mixture until just combined. Gently fold in ham, cheese, and mushrooms until equally distributed in batter.
  • Spoon mixture into muffin cups.
  • Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  • At this point, you can top with additional cheese, turn off oven, and let cheese melt for a few seconds before removing.
  • To freeze, wait until muffins are cool and package in sandwich bags. Place muffins in a box or something else study and flat and put in freezer. Once frozen, put all muffins in large Ziploc bag (the extra layer helps prevent freezer burn). I've found that they keep in the freezer for about 2 months, but they rarely last that long in my house. Recipe doubles well for OAMC.

Steps:

  • For the shell, in a large bowl, beat cream cheese, flour and butter until smooth.

  • In a large skillet over medium heat, cook mushrooms, onions and garlic in the butter until tender.
  • Stir in sour cream, spices and 2 tablespoons flour; stirring until smooth.
  • Set aside.

  • With a floured small round cookie cutter (or glass), cut out as many circles as possible.

  • Preheat oven to 450 degrees.

  • Brush edges of dough circle with some egg; fold dough over filling.
  • With fork, firmly press edges of dough circle to seal and prick the tops.
  • Place turnovers on ungreased cookie sheet and brush tops with remaining egg.
  • Bake 12-14 minutes until golden brown.

Steps:

  • In large bowl with mixer at medium speed, beat cream cheese, 1 1/2 cups flour and 1/2 cup butter until smooth; shape into ball; wrap; refrigerate 1 hour.
  • Meanwhile, in 10 inch skillet over medium heat, in 3 tablespoons hot butter, cook mushrooms and onion until tender, stirring occasionally.
  • Stir in ham, sour cream, salt, thyme and 2 tablespoons flour; set aside.
  • On floured surface with floured rolling pin, roll half of dough 1/8 inch thick.
  • With floured 2 3/4 inch round cookie cutter, cut out as many circles as possible.
  • Repeat.
  • Preheat oven to 450F.
  • Onto one half of each dough circle, place a teaspoon of mushroom mixture.
  • Brush edges of circles with some egg.
  • Fold dough over filling.
  • With fork, firmly press edges together to seal; prick top.
  • Place turnovers on ungreased cookie sheet, brush with remaining egg.
  • Bake 12 to 14 minutes until golden.
  • Note: You can freeze these unbaked, then pop the frozen turnovers right in the oven- just bake a bit longer.

1 cup flour
2 tablespoons butter

1/2 lb finely chopped mushroom

Steps:

  • Make pastry: beat cream cheese until light and fluffy.
  • Add butter and mix well.
  • Add flour and mix until smooth.
  • Dough will be VERY sticky.
  • Wrap dough in waxed paper and chill at least one hour.
  • Filling: Saute onion in butter until tender.
  • Add mushrooms and cook until tender.
  • Stir in salt, thyme, flour and sour cream.
  • Cook until thickened.
  • Cool completely.
  • Divide the pastry dough in half.
  • Put remaining half back in frige.
  • Roll other half out on floured board to 1/8 inch thickness.
  • Cut with a 2-3 inch round cookie cutter.
  • Drop a spoonful of filling onto each circle.
  • Brush edges with beaten egg.
  • Fold dough over filling and press edges together.
  • Brush tops of turnovers with beaten egg.
  • Cut a small slit in the top of each turnover to allow steam to escape.
  • Bake at 450 for 10 minutes on an ungreased baking sheet.
  • Makes about 3 doz.
