Delicious Pasta Perfect for a Quick Dinner! Loaded with Ham, Penne and Peas! This an easy dinner using leftover ham from the holidays!

- Place 1 Tbsp olive oil in a large skillet over medium heat until warm. Saute ham and onions until onions are translucent. Add garlic, parsley, basil, oregano, pepper and red pepper flakes; cook 1-2 minutes.
- Stir in broth, milk, flour and penne noodles. Bring to a boil, reduce heat and simmer 10-12 minutes, stirring frequently.
- Adds peas and simmer five more minutes or until pasta is cooked through and peas are warm.
- Sprinkle Parmesan cheese on top of pasta.

ONE POT HAM AND CHEESE PASTA
Steps:
- Melt butter over medium heat in a large stockpot.
- Once melted, add in onion, salt and pepper and cook for 5-7 minutes, or until tender.
- Add in ham, pasta, garlic, mustard, wine (if using), water, and additional salt.
- Bring to a simmer and simmer for 9-13 minutes, stirring regularly, until pasta is al dente.
- Remove from heat and stir in swiss and parmesan.
- Taste and re-season, if necessary, and enjoy!

- Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. - For the sunshine dressing: Add the mayonnaise, sour cream, mustard, lemon zest, lemon juice, garlic, salt and pepper to a medium bowl and whisk until combined.
- For the salad: Cook the pasta in salted water according to package instructions. Drain and rinse the pasta under cold water. Allow the pasta to dry slightly before assembling; this will help the dressing really adhere to the pasta.
- Pour the dressing over the pasta in a large bowl and toss to coat. Add the yellow and grape tomatoes, corn, bell peppers and banana peppers and toss gently until evenly mixed. Arrange the salad onto a serving platter and garnish with the lemon slices.

- Make pasta: Put a big pot of salted water onto boil on high heat for the pasta (4 quarts, 2 tablespoons salt). While the pasta water is heating, prep the other ingredients. Once the water has reached a rolling boil, add the pasta and stir so it doesn't stick to the bottom of the pan. Let the water return to a rolling boil and cook, uncovered, for 9 to 10 minutes, until the pasta is "al dente", cooked through but still slightly firm to the bite.
- Make roux: Melt the butter in a large (3 to 4 quart), thick-bottomed pot on medium heat. Add the minced garlic. Let the garlic sizzle for a few seconds. Add the flour and whisk so that any lumps are dissolved. Let the roux (flour and butter) bubble and cook for a minute or two.
- Make the sauce: Slowly add the milk and cream, a quarter cup at a time, whisking until incorporated after each addition. Increase the heat to medium high. Add 1⁄4 teaspoon of ground nutmeg and 1⁄2 teaspoon of ground black pepper. (You may want to increase these later to taste.) Add 1⁄2 teaspoon of Italian seasoning. Add half of the shredded Mozzarella and Parmesan cheeses, whisking until melted and incorporated into the sauce. Add 3/4 teaspoon of salt (again, you may want to increase this to taste). Stir in 1 cup of water (can use pasta cooking water if you want).
- Preheat oven to 400°F
- Combine pasta with sauce, ham, parsley, onion greens: Drain the cooked pasta and add it to the sauce. Add the ham. Add the chopped parsley and onion greens or chives. Gently stir to combine. Taste, and add more nutmeg, salt, pepper, or Italian seasoning to taste.

- Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. - Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
- Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce.
